BOTRYTIS NOBLE Botrytis Noble is the result of humid weather of some autumn seasons and delaying the harvest with a view to allowing the development of Botrytis Cinerea, a necrotrophic fungus. This fungus, otherwise known as ‘noble rot’ or ‘pourriture noble’, causes an extraordinary effect on the grape concentrating the flavours and aromas of the grape as well as the fungus resulting in an exquisite and unique flavour. Varieties: Sauvignon Gris, Sauvignon Blanc, Gros Manseng, Gewürztraminer y Petit Grain Kilograms per hectare: 2000 Hectolitres per hectare: 4 - 6 Region: Juanicó Soil type: Chalky - clay Climate: ~ Temperate with ocean influences ~ Mean annual temperature of 16.6° C. (62° F.) ~ Seasons clearly marked with warm summers and cool winters WINEMAKING METHOD: ~ Leaves in some vineyards plots are especially removed ~ These plots are inspected several times ~ Only grapes that have acquired a precise degree of Botrytis Cinerea are collected ~ Grape bunches are pressed whole without having been de stemmed ~ Selection of special yeasts and gapes fermented between 14 - 18 °C ~ Partial ageing 6-12 months in new and second use French oak barrels WINEMAKER’S NOTES: Our late harvest wine style is similar to Sauternes, Tokaji and the Austrian and German sweet wines. It takes very special conditions for Botrytis Cinerea to appear and therefore this wine is not necessarily made every year. In 1996 we experienced these optimum conditions and the first late harvest wine from Uruguay was produced by Establecimiento Juanicó. Appearance: Deep golden colour. Nose: Intense and fascinating aromas with hints dried apricots, lychee, roses, honey and pineapple. Palate: The flavours of honey, almonds and dry fruit combined with good natural acidity found in the grapes make this a perfectly balanced and deliciously rich late harvest wine. Serving temperature: 10 - 12º C. Food pairings: This wine is excellent as an aperitif particularly with foie gras or truffled pâté. It is ideal to be served with blue cheese (Roquefort, Gorgonzola, Stilton), but also with fruit based desserts.
