No disrespect to you, Mr. Beef Agnolotti, but I don’t think you go with this simple pasta sauce I’m going to share. There are very few ingredients and the pasta you choose will be stellar. I happen to think that the ICP Italian sausages are pretty great. There’s a harmonious blend of spices, fennel is forefront and the chilies are misbehaving in the backseat. As good as they are in a sauce for pasta or risotto, they are wonderful with polenta, braised Savoy cabbage, or potatoes that have been cooked with leeks and mashed together. It’s getting chilly outside. Time to make food to warm you and your customers up! Italian Sausage Sauce for Pasta This sauce is tight, with the pork fat and olive oil carrying the flavour. 1/4 cup (60 mL) extra-virgin olive oil 12 garlic cloves, thinly sliced lengthwise 4 lb (2 kg) Italian sausage with fennel, casings removed, then discarded 2 cups (500 mL) dry white wine 1 100 oz can whole tomatoes in juice, pureed and strained 1 tsp (5 mL) freshly ground black pepper 2 Tbsp (30 mL) finely minced parsley grated Pecorino Romano for serving Heat oil in a large, heavy pot over medium heat until hot. Add the garlic and cook, stirring until it turns gold around the edges. Add the sausage meat and cook, stirring and mashing to break up large chunks, until the meat is browned and just cooked through. Add the wine and simmer, scraping up brown bits on bottom of the pot until the liquid is reduced by half. Add the tomato puree and simmer until the oil floats to the surface of the sauce. Stir in the pepper and parsley. Buona mangiata!
