English (Comedy) English (Romantic) English (Action) Arabic (Action) Hindi (Action) Malayalam (Family) Tuesday, June 5, 2012 Snow White and the Huntsman has a darker side to it A O SCOTT NYT SYNDICATE ’M not sure this counts as a spoiler of anything other than Universal’s sleek and seductive marketing campaign — which has properly emphasised crows, swords and Charlize Theron’s hair — but there are actually some dwarfs in the new movie Snow White and the Huntsman. The small fellows who befriend the exiled princess here are nothing like the grumpy, sneezy, dopey guys you remember from the Disney version. The actors who play them (including Ian McShane, Eddie Marsan, Ray Winstone and the great Bob Hoskins, all digitally shrunken) might otherwise have been assembled for a nasty little Cockney gangster film. These dwarfs are industrious, but they don’t whistle while they work. Their most memorable song is a haunting dirge performed at the funeral pyre of a fallen comrade. So take note: There is nothing cute about this movie. And that feels right. There is something exciting about how seriously Snow White and the Huntsman takes its themes. Most of the fairy tales that have become fixtures of modern popular culture — including those, like Snow White, published by the Brothers Grimm in the early 19th century — emerged from the dark, violent folk landscape of early modern Europe. They are fables of innocence, but also of terror, dense with superstition and sexual anxiety. Walt Disney’s justly beloved 1937 animated feature, though it has some spooky, gothic visual touches, expelled most of the demons and turned the heroine into an emblem of chaste and cheerful domestic normalcy. Since then, Hollywood fairy tales have mainly tacked between wide-eyed romanticism and winking self-consciousness. Snow White and the Huntsman, directed by the first-timer Rupert Sanders from a script by Evan Daugherty, John Lee Hancock and Hossein Amini, tries something new. Or maybe something old, even atavistic. Though it is an ambitious — at times mesmerising — application of the latest cinematic technology, the movie tries to recapture some of the menace of the stories that used to be told to scare children rather than console them. Its mythic-medieval landscapes are heavily shadowed and austere, and its flights of magic are summoned from a zone of barely suppressed rage and dangerous power. Most of the power and nearly all of the rage belong to Ravenna, Theron as golden-haired, furious queen. Having murdered the king on their wedding night and imprisoned his daughter in a tower, Ravenna preens in front of her liquid-metal mirror, plucks the hearts out of birds (with metal fingernail extensions apparently designed for that purpose) and terrorises her subjects. She is loyally attended by her creepy brother, Finn (Sam Spruell) — a kind of Dorian Gray portrait of his flawless sister, the ugliness of whose soul seems inscribed on his leering, pitted face — but otherwise alone in the castle of her cruelty. I The evil stepmothers of the past have been monsters of self-generating female narcissism, but Ravenna seems to be a woman with a legitimate grudge against a male-dominated world of sexual violence and patriarchal entitlement. With a slight shift of emphasis, “Snow White and the Huntsman” might have been her story, the tale of a victim turned righteous avenger. And it may be that being denied this status fuels Ravenna’s resentment. Her wrath PLAYING IN DOHA THEATRES is directed principally at other women: at the girls whose youth and beauty she steals to feed the spell that keeps her from aging, and at the blameless princess who threatens her simply by being young and alive. That would be Snow White, of course, played by Kristen Stewart at the precise point of intersection between action heroine and damsel in distress. Or two unshaven dudes, at any rate, vying to protect her and dividing the audience into Team Handsome Prince and Team Huntsman. The “prince” is William (Sam Claflin), a childhood friend of Snow’s and the son of a nobleman who has remained loyal to the memory of her father. He is a gifted archer and a dashing enough young man, but there really is no contest. The movie is not called “Snow White and William.” The Huntsman, a harddrinking, belligerent widower with no other name, has the advantage of being played by Chris Hemsworth — Thor! — with sly, gruff magnetism. After an overwrought beginning — during which drops of blood fall to the snow with a crash, and James Newton Howard’s score roars and howls like Wagner with a stubbed toe — the movie comes down to earth and springs to life when Hemsworth shows up. His huntsman, like the dwarfs, is a gruff human presence in a world that might otherwise have been too airily and abstractly fantastical. In turn, the roughness of those characters, along with the scratchy earth tones of Greig Fraser’s cinematography, make possible episodes of enchantment that feel fresh even to eyes that have seen everything under the digital sun. A terrifying slog through the dark forest, a serene sojourn in the garden of the fairies, a visit to an encampment of women and children — each of these scenes casts its own specific and effective spell. In this carefully imagined reality — the production designer, Dominic Watkins, has done exceptional work — Theron is, if not the fairest, then surely the most striking one of all. She has a remarkable ability to mix coldness and sorrow, and as the special effects etch lines on her face and then smooth them away, she at once invites and refuses sympathy. Ravenna, taught as a girl that beauty was the source of power, has made herself into a perfect aesthetic object and destroyed herself in the process. Snow White, rather than try to beat her in the contest of appearances, must create a new game, based on a different meaning of “fairness” and on her own modest, real-girl appeal. Stewart, stumbling through the forest and racing through an awkward, Shakespeare-lite speech to her hastily mustered good-guy army, understands the job perfectly and undertakes it in good faith. Her Snow White is part of an interesting new breed of warrior princesses — Katniss Everdeen is their current leader — whose ascendance reflects the convergence of commercial calculations and cultural longings. FOOD Sweet and spicy twice cooked Chinese duck DAVID TANIS NYT SYNDICATE AM a huge fan of Chinese food, but I’ve never had any real training in its preparation. My education, if you could call it that, has been gleaned mostly from travel, cookbooks, advice from friends and eating in restaurants. Raised on mostly Western fare – for me, the cooking is reliably intuitive – I find that when I want to veer eastward in the kitchen, it is necessary to get into a particular mind-set. Although I fear my approach is always burdened with a certain cultural disadvantage, I forge ahead, fairly certain the result will be delectable, if not entirely authentic. Two things I know for sure: Because the cooking process is swift for many Chinese dishes, ingredients need to be tidily organised and stoveside before the flame is ignited. The other is that food always tastes best straight from the wok. There’s even a term for it, wok-chi or wok-hei, which means breath of the wok. Chinese cooks say the flavourful life force of the food, gained from a quick high-heat sear, can be fleeting, gone in only a few minutes. Though the dish may still taste good, a certain elusive quality is lost, which is why takeout and steam-table dishes always lack the brightness of those freshly cooked and served. Cooking hot and fast is the key. Still, for certain dishes, like the one I made at home this week, there is a slow component, too. I wanted to make a duck dish in the manner of twice-cooked pork, usually made with shoulder or belly. I had bought large Muscovy duck legs and thought they would be good candidates for this technique. The principle is attractive: The meat is seasoned and gently simmered well ahead of the final cooking. It can even be cooked several days ahead. Then, at the last minute, the chopped, cooked, fat-laced meat is briefly stir-fried; showered with aromatics like ginger, orange zest, garlic, cumin and hot pepper; splashed with rice wine, and finished with just-wilted pea shoots. Both sweet and spicy, it was entirely satisfying, so I want to make it again soon. Next time, instead of jasmine rice, I may serve it with glutinous rice, or with steamed buns. Twice-cooked duck with pea shoots Time: About 20 minutes, plus about 1 hour for initial duck simmering 4 Muscovy duck legs, about 1 pound each (or 4 pounds smaller Pekin legs) Salt 1 teaspoon Chinese 5-spice powder 4 thick slices ginger 1 large onion, halved 4 tablespoons rice wine 1 1/2 tablespoons soy sauce 4 tablespoons brown sugar 1 teaspoon grated orange zest 1 teaspoon spicy black bean paste (available at Chinese grocers) 1 teaspoon sesame oil 2-inch chunk ginger, peeled and cut in fine julienne 6 garlic cloves, roughly chopped 8 to 10 small dried red chili peppers 1 teaspoon cumin seed 2 teaspoons cornstarch dissolved in 1 tablespoon cold water 2 tablespoons vegetable oil 6 ounces pea shoots, leaves and tendrils (or use baby spinach or mizuna leaves) 3 tablespoons slivered scallions. Method: 1. With a sharp knife, trim any excess fat from the duck legs, leaving the skin intact. Trim the skin a bit, too, if it seems quite thick. Reserve duck fat for another purpose. Season each leg generously with salt, then sprinkle with the five-spice powder, rubbing the seasoning into the meat. Place the duck legs in a heavy-bottomed pan along with the ginger slices and onion. Cover with four cups water and bring to a boil. Reduce heat and simmer gently, covered, until the meat is fairly tender when probed with a paring knife, about 45 minutes. Take the duck legs from the pot and let them cool. Remove the meat from the bones and chop into rough half-inch pieces. Strain and cool the cooking broth and skim any fat from surface. This step may be done up to two days in advance of finishing the dish. 2. In a small bowl, stir together the rice wine, soy sauce, brown sugar, orange zest, black bean paste and sesame oil. Put the julienne ginger, chopped garlic, red chili peppers and cumin seed on a small plate. Measure one cup of defatted duck broth. Mix the cornstarch and water in a small container. Have all these ingredients in easy reach of the stove. 3. In a wok or large cast-iron skillet, heat the vegetable oil over high heat. Add the chopped duck meat and let it sizzle, stirring well, until crisp and lightly browned, about two minutes. Season lightly with salt. Lower heat to medium high and add the ginger, garlic, red chili peppers and cumin seed. Stirring often, cook for one minute more, taking care not to burn the garlic. Add the rice wine mixture and duck broth and bring to a brisk simmer. Stir in the cornstarch mixture; cook until lightly thickened, 30 seconds or so. Turn off heat and add the pea shoots, mixing them into the sauce until barely wilted. Transfer to a platter and sprinkle with scallions. Yield: 4 to 6 servings. I Twice-cooked duck with pea shoots. Pea shoots are added to chopped Muscovy duck legs for final cooking. It doesn’t matter whether I can go, or even whether I want to. Thank you for inviting me. You’ve made my day. But as the summer party season gets into full swing, I and so many other partyers have another source of social anxiety: arranged seating. Whether the event is at the White House or your own house, arranged seating is an occasion for major tea-leaf reading. Who’s sitting where? Why? What’s the agenda? A few summers ago, I was at a tented party in the Hamptons seated next to the host’s boss. At first, I was happy. Then I began to wonder. Was this a seat of honour, or was I considered the only person innocuous and boring enough not to say anything offensive? I couldn’t decide. Then I recalled that my friend hated his boss. Why was I next to the one person my host despised more than anyone in that room? Regardless, I felt such pressure to be charming and gay to a total stranger that my own husband felt ignored and took our son and left in a huff. “Wars have almost broken out over seating,” says Selwa Roosevelt, known as Lucky, the chief of protocol during the Reagan presidency. In her memoir, Keeper of the Gate, she cites a duel at a 17th-century court ball in London between a Russian envoy and a French ambassador over proper placement. “Otherwise wonderful people in fine mental health will behave like lunatics if they think they’ve been slighted,” she says, which is one reason she keeps meticulous files of the seating of guests at her own parties. The most powerful people in the land are not immune to seating-arrangement worries, for themselves or their guests. Last March, the Obamas ruffled more than a few feathers by breaking with White House protocol: At a dinner for Prime Minister David Cameron of Britain, instead of hosting different tables, the couple sat near each other. “When it comes to seating at a White House event, the idea is: Spread the wealth around,” one capital doyenne says. “Everyone wants to sit next to the Obamas. So if they seat themselves next to each other, that’s giving up two prime seats.” Etiquette mavens declare that arranged seating has powerful meaning and purpose, aside from reflecting the guests’ status or keeping enemies far apart. “Rule No 1 for seating is to put talkative people in the middle of the table on both sides so they can keep the conversation fluid, and full of life,” says Patricia Rossi, author of Everyday Etiquette: How to Navigate 101 Common and Uncommon Social Situations. “Try to seat husbands and wives apart and also best friends so they can break out of their same old chain gang banter and rituals.” Jennifer Gilbert, the CEO of the event planning company Save the Date, agrees, and goes a step further: “Arranged seating is the only decent thing to do. Every party is about the seating – period.” And not just at the parties she arranges professionally. “I feel it is unkind to not assign seating. I am a connector of people. I have set people up, and I have created businesses because of my seating,” Gilbert says. I Gilbert has a point. Not only did a lifelong friendship start that evening, but a few years later Roosevelt was the key to convincing Domingo to take over the directorship of the Washington National Opera. He has been credited with making the company a real force in the opera world. Greg Nichols, a neighbour and president of Lucky Dog Vodka, was among the guests. “I really didn’t know this guy and wasn’t sure why I was there, but I liked him a lot and I was glad to be invited,” says Nichols, who was joined by various local luminaries. As people arrived, the coach hadn’t shown up yet, so the guests milled around for a bit before they were all called to the table. Finally they all sat down, and the host came in. “He started to sit down, looked us over, then got this look in his eye,” Nichols recalls. “Then he said: ‘I’ll be right back. I just want to take a quick shower.”’ He never returned. She has adopted lioness Sundari,” a zoo official said. The contract will last till April 30, 2013. The official said Priyanka had adopted tigress Durga last year. That contract ended April 30. Last year the Ranchi zoo introduced a scheme for adoption of animals. One can adopt any animal for a period of one year to 11 years. The money is used for the upkeep of the animals and to create awareness about wildlife. Besides individuals, some corporate houses and public sector undertakings have adopted elephants, peacocks, tigers and leopards. She played it so well that I don’t think anyone else could have done it. She is a born actress,” she said. Bela says that she conceptualised the movie about eight years ago and that is inspired by a real life story. “I had thought of the movie eight years ago and I wanted Boman and Farah only.
