Cindy lost 68 lbs and is keeping it off for good! “I tried it all and I’ve never seen such quick results!” Before Recipe of the Month Curried Chicken Salad with Apples and Raisins Ingredients: 16 oz (480 g) chicken breast, skinless, chopped 3 Tbsp (45 mL) lemon juice 2 Tbsp (30 mL) fresh parsley, chopped 1 Tbsp (15 mL) fresh thyme, chopped ½ tsp (2.5 mL) black pepper, freshly ground ¼ cup (62.5 mL) mayonnaise, low-fat 1 Combine lemon juice, parsley, thyme and black pepper to make a rub. 2 Rub on chicken until covered. 3 Grill on medium heat. 4 Set aside to cool; after cooling chop chicken into bite-size pieces. 5 Combine mayonnaise, curry powder, and water in a medium bowl, stirring with a whisk until well blended. 6 Add the chopped grilled chicken, chopped apples, celery, raisins, and salt; stir mixture well to combine. 7 Cover and chill. 1 tsp (5 mL) curry powder 2 tsp (10 mL) water 2 small Braeburn apples, chopped /3 cup (83 mL) celery, diced 1 4 Tbsp (60 mL) raisins /8 tsp (0.62 mL) salt 1 Makes 4 servings. 1 Serving = ¼ recipe Exchanges per serving 1 protein 1 fruit 1 fat Bounce Back Strategy If spring fever has pulled you off track, make portion control your goal.
