However, we will make every attempt to accommodate any member wishing to dine with us. Walk-ins and late reservations will be accepted on a space available basis. CANCELLATION POLICY If a reservation for a special event (where the policy is in action) is cancelled less than 24 hours before the start of the event, then the member holding the reservation will be billed for 50% of the cost of the event. This will apply for each guest that the original reservation was made for. Cancellations made more than 24 hours from the time of the reservation will not be billed a cancellation fee. MES SAGE FROM YOUR GENER AL MANAGER T his is the time of the year when we are recruiting and training staff in preparation for the 10 week whirlwind known as “the season”. It is especially comforting to know that we have retained and cultivated a core staff of tenured professionals that provide great mentoring opportunities when bringing on board approximately 30 new recruits for the summer. It is also encouraging to know that most of these new staff members have come through the referrals of this seasoned core. Promoting from within is a signature trait of a successful business. One of our key “tenured professionals” will be enjoying his 4th season this summer, and will most certainly be playing a bigger role in leading our rookies through their Yacht Club initiation. It gives me great pleasure to announce the promotion of Shane Brown to the position of Food and Beverage Service Manager. Shane is a native of San Diego, California, thus very accustomed to “salt life” and all the requisite pleasures and distractions. A graduate of San Diego State with a degree in Horticultural Sciences, Shane has been in the club business for 15 years, and when not working enjoys spending time at the beach with his two daughters. Shane has clearly displayed a passion for service and a commitment to excellence. We are fortunate to have Shane helping to lead our F&B Service team. Please join me in congratulating Shane. School’s out soon, and as such, we begin the annual rush to the beach with many kids in tow. If you weren’t able to spend the Memorial Day weekend with us and take in the “Fitness Fair” and all the other fun outdoor activities, I urge you to check out the many recreational possibilities available to members of all ages this summer. There is a lot of additional info about these various opportunities throughout the pages of this Shorelines. It’s now prime time on Figure 8 Island! CHEF' S C ORNER Idaho Monte Cristo “Sandwich” Yield: 6 Servings Ingredients 5 lb. Russet Potatoes, Peeled ½ cup Dijon Mustard ½ cup Clover Honey 1 TBSP. White Vinegar 1 cup Mayonnaise (preferably home-made) 1 smallSweet Onion (like Vidalia), diced, sautéed and chilled 6 each Egg yolks ½ cup All Purpose Flour ½ cup Clarified Butter 18 slices Turkey Breast 18 slices Boiled Ham (such as Jambon de Paris or Black forest) 18 slices Applewood Smoked Bacon (or your favorite bacon), cooked and drained 12 slices Gruyere Cheese Directions 1. Cook potatoes in salted water until fork tender (about 20 to 25 minutes). Mash and chill. 2. In a small bowl, whisk in the honey, Dijon mustard, vinegar and mayonnaise. Reserve. 3. In a large bowl, combine the potatoes, onions, egg yolks and flour. Mix thoroughly. On a work surface lined with wax paper, divide the mixture into 12 uniform balls (use an ice cream scoop) and then shape the balls into 12 square patties using a spatula. Pickled Beet Salad with Shaved Fennel, Mango & Ricotta Salata Ingredients 2 lb. 8 oz. Cooked Beets, peeled and julienned F resh Fennel Bulb, cored and shaved very thin 1 each Mango, peeled and julienned ¾ cup Olive Oil ¼ cup Champagne Vinegar 1 tsp. G aram Masala (or more according to taste) 12 oz. R icotta Salata, small dice Salt to taste INSTRUCTIONS: 1. Place the beets, shaved fennel and mango in a bowl. 2. In a separate bowl, whisk the oil and vinegar together and then add the Garam Masala and salt to taste. 3. P our over beet mixture and toss to coat. Stir in the Ricotta Salata. 4. F or service, spoon approximately four ounces of beet salad on a bed of mixed greens as an accompaniment to the Monte Cristo sandwich. Chefs Note: If using a mango is undesirable, try using another fruit such as pineapple which will be easier to work with. You may also want to invest in a Japanese mandolin (Benriner) that comes with adjustable blades for shaving, slicing and julienne fruits and vegetables. 4. H eat the butter in a nonstick frying pan over medium-low heat. Working in batches of four, cook the patties until golden brown (about 5 minutes per side). Add more butter as needed. Transfer the potato patties to a cookie sheet pan with edges that have been coated with non-stick spray. 5. In a separate pan, sear the turkey meat and ham. 6. M eanwhile, cook the bacon in the oven until crispy and then lay it on paper towels to soak up the excess grease. 7. Distribute the meats evenly over six potato patties. Top each with two slices of Gruyere cheese and then let the cheese melt under the broiler one minute. Top with the remaining potato patty to assemble the “sandwich”. Serve warm with a side of the honey mustard sauce. 12
