 Strawberry Malva Flan Recipe Pastry: 100g Butter 50g icing sugar 1 egg 2-­‐3 drops of vanilla essense 300g cake flour Pinch of salt Cream butter and icing sugar and beat in egg yolks and vanilla. Sift flour with salt and add. Dough will be soft. Form a ball. Wrap in waxed paper and chill for 30 min. Press thinly into 23cm flan ring. Prick bottom and sides well and bake at 200c for 10-­‐12 min. Once cooled, remove ring and put flan onto serving plate. Filling: 250g strawberry 25ml sugar 250g cream cheese 200g thick cream 50g icing sugar 2ml grated orange rind 5ml orange juice 10ml strawberry jam 5ml water 10ml chopped malva leaves Whipped cream and almonds to top Wash strawberries and sprinkle with sugar. Leave to drain in colander for about 15 min. Whisk cream cheese, cream, icing sugar, orange rind and chopped malva together until thick. Spoon evenly into pastry shell. Halve the strawberries and arrange on top of filling to cover completely. Heat the jam and water and pour over berries. Chill flan for 2 hours before serving. Garnish with whipped cream piped into a lattice pattern. Fill squares with toasted almond flakes and chopped malva leaves. Serves 6
