Soft pressing in vacuum tanks, cold static decantation and fermentation in temp controlled stainless steel tanks. Atmospheric pressure 4.5 bars. Aging process: 9 months of aging prior to bottling. Secondary fermentation in bottle and minimum 36 months of refinement on yeasts. Hand riddling on pupitres.
