APPLE CINNAMON BUNS
Recipe
For groups of 4 or more.
Ingredients:
For the dough
180 mL
buttermilk
30 mL
unsalted butter, melted
1
egg
500 mL
flour
60 mL
granulated sugar
5 mL
instant yeast
2 mL
kosher salt
vegetable oil
For the filling
120 mL
brown sugar
15 mL
cinnamon
80 mL
soft butter
2
apples, peeled and chopped
For the glaze
120 mL
icing sugar
20 mL
butter
15 mL
buttermilk
1 mL
vanilla extract
Method:
1. Day 1: Warm buttermilk and butter
in microwave in 20 second intervals
until butter starts to melt; let stand
for 5 minutes, stirring occasionally,
to finish melting (don't overheat
buttermilk or it will curdle). Add egg
and beat with fork.
2. Whisk together flour, sugar, yeast
and salt. Add buttermilk mixture and
mix until dough comes together.
3. Knead for 8-10 minutes, until dough
is smooth and elastic, adding extra
flour as needed until dough pulls
away from the sides of the bowl, but
sticks to the bottom.
4. Add a splash of oil to the bowl and
turn dough to coat both the dough
and the sides of the bowl. Cover with
plastic wrap and put in the fridge
overnight.
5. Day 2: Preheat the oven to 375ºF.
6. To make filling combine brown
sugar and cinnamon in a small bowl.
7. To assemble roll dough on a lightly
floured work surface and shape into
a rectangle 15" wide and 1/4" thick.
Spread evenly with softened butter,
then sprinkle with brown sugar
mixture and top with apples.
8. Roll up the dough, starting at the
long edge closest to you - use a
bench scraper or metal spatula to
help lift it if it sticks. Slice into 8
equal pieces and arrange in
parchment-lined baking dishes. Let
rise 45 minutes, until nearly doubled
again.
9. Bake for 20 minutes or until golden.
10. To make glaze whisk together all
glaze ingredients and drizzle over
cooled cinnamon buns.
