Summer’s bounty saves the day when you want to save time and effort in the kitchen, and simple dishes featuring fresh vegetables and fruit make healthy eating easy. After all, who wants to be stuck in the kitchen on summer evenings and weekends? Make-ahead meals are always smart, whether everyone heads in different directions after dinner or the family goes out for the day. You could stop for fast food on the way to the woods, the lake or the theme park – but you will save money and eat better if you pack a cooler with portable, quick-to-fix items such as Little Italy Pasta Salad (see next page). This pasta salad tastes as good as it looks, and provides plenty of protein and fiber as well. Chicken is another good source of protein that complements many a dish, so whenever you fire up the grill, cook some extra chicken breasts to keep in the freezer. What could be easier on a summer night than a big green salad topped with chopped chicken? In blender, combine green onions, garlic, orange juice, all but 3 tablespoons oil, lime juice, cilantro, oregano, cumin and hot sauce. Blend until all ingredients are finely chopped and well combined. 2. Place chicken, pork and shrimp in separate large zip-top plastic bags. Evenly pour marinade into each bag. Seal bags, pressing out excess air. Massage ingredients in bags to combine. Refrigerate 2 to 4 hours to marinate. 3. Cover grill rack with aluminum foil; with fork, poke several holes in foil. Prepare outdoor grill for direct grilling over medium-high heat. In large bowl, toss bell peppers, red onions, 1 teaspoon salt, 1 teaspoon pepper and remaining 3 tablespoons oil. Remove meats and shrimp from marinade; discard marinade; sprinkle with remaining 2 teaspoons salt and 1½ teaspoons pepper. 4. Place shrimp on 1 side of foil-covered grill rack and bell pepper mixture on other side. Cover and cook shrimp 4 to 5 minutes or until shrimp turn opaque throughout and reach an internal temperature of 145°. Remove shrimp from grill; keep warm. Stir bell pepper mixture and cook 4 to 5 minutes longer or until just tender; remove from grill and keep warm. 5. Remove foil from grill rack. Place chicken and pork on hot grill rack. Boneless, skinless chicken breasts are one of the easiest things to cook on the grill. They quickly absorb the flavors of a marinade and don’t take a long time to cook. You should always marinate meat in a glass, ceramic or stainless-steel container – never in aluminum, because most marinades contain acidic ingredients. Bud Light G Grilled rilled Honey Chicken Serves: 4 4 boneless, skinless chicken breasts Marinade 1 onion, finely diced 3 tablespoons fresh lemon juice 12 ounces Bud Light Beer 2 tablespoons IGA vegetable oil 2 tablespoons IGA honey 1 tablespoon IGA soy sauce 1. Mix together all marinade ingredients. Place chicken in shallow dish and pour about ½ cup of the marinade over chicken. Turn over to coat. Place in refrigerator for 4 hours to marinate. 2. Pour remaining marinade mix into saucepan. Simmer 5 to 6 minutes until it reduces and thickens slightly. Set aside for glaze. 3. Prepare BBQ on medium high heat. S’mores Ice Cream Pie Prep: 30 minutes plus chilling and freezing Broil: 20 seconds • Serves: 8 2 containers (1 pint each) IGA chocolate or IGA vanilla ice cream (4 cups) 2 cups graham cracker crumbs ½ cup IGA butter (1 stick), melted 3 cup plus 1 tablespoon IGA granulated sugar 4 bars (1.55 ounces each) Hershey’s Milk Chocolate 1½ cups IGA marshmallow creme 2 cups IGA miniature marshmallows 1. Refrigerate 1 container of ice cream 15 minutes to soften. Meanwhile, in medium bowl, stir together graham cracker crumbs, melted butter and sugar; reserve 1¼ cups crumb mixture. With back of large spoon, firmly press remaining crumb mixture on bottom and up side of 9- to 10-inch pie plate; freeze 5 minutes. Coarsely chop 2 chocolate bars. 2. With rubber or offset spatula, carefully spread softened ice cream evenly in bottom of pie crust. Sprinkle chopped chocolate evenly over ice cream; firmly press reserved crumb mixture over chocolate. Freeze pie 15 minutes. Meanwhile, refrigerate remaining container of ice cream 15 minutes to soften. 3. Remove pie from freezer. Spread softened ice cream evenly over first layer. Freeze pie at least 4 hours or until firm. 4. Place marshmallow creme in center of pie. Moisten spatula with hot water, and spread marshmallow creme evenly over ice cream filling to edge of pie crust, covering top of pie completely. Lightly press mini marshmallows evenly over marshmallow creme layer. Loosely cover with plastic wrap and freeze 4 hours or until firm. 5. To serve, preheat broiler with oven rack 4 to 5 inches from source of heat.
