NOVELTIES 2016 A L M A C A L I E N T E Prodotti Stella is following “Le vie dell’eccellenza” in a new direction and heading to the Caribbean: a place with a flourishing natural environment, exotic landscapes with rich colours and enveloping aromas. The new “Vie dell’Eccellenza” flavour was inspired by Santo Domingo and Mama Juana, a traditional local alcoholic drink which is made in an artisan process. 2 Flor del Caribe is a selection of ingredients from Santo Domingo: dark rum, honey, herbs and roots, which are the elements to produce a traditional liqueur, thought to be a sort of aphrodisiac from the inhabitants of the Caribbean Island: “Mama Juana”. To make the recipe even more delicious and original, alongside magnificent cocoa from Santo Domingo, Prodotti Stella has added star anise, which is one of the spices that are frequently used in “Mama Juana”. Flor del Caribe Variegato •With honey. •With a special aromatic infusion that recreates the slightly bitter flavour of herbs and roots from Santo Domingo. Packaging: 3 kg tins. Santo Domingo Cocoa Variegato •Paste with cocoa from Santo Domingo, with a flavour that is not too dark. •With natural star anise flavouring, which is often used in Mama Juana liqueur. Eurostella Vegan Gelato Base A complete base for cream flavours of dairy-free gelato, for use with water and plant drinks (made with products such as rice, soya, spelt, oats and grains). •It adds more body to gelato than the Vegan Sorbet Base (with palm-free refined oil and native starch). •With unrefined cane sugar and grape dextrose. •With next generation plant fibres. Dosage: 420 g per litre of water and plant drink. 1 bag with 2.5 kg of liquid. For example: 1 bag with 1.25 l of water and 1.25 l of plant drink, together with the recommended dosage of the flavour paste or powder. If only water is being used (this is possible with some flavours, such as cocoa and hazelnut), it is best to reduce the amount of water to 2.3 l to 2.4 l. Very hot liquids should be used. It is . As well as natural flavourings, it contains maltodextrin, plant fibres and milk protein. It is also ideal for flavouring Fiordilatte and in cold desserts for flavouring whipped cream, pannacotta and various types of semifreddo and single portions. Thanks to its special production process, it stays soft even after long periods of storage below zero. It enriches the Edelweiss speciality with its ideally balanced tartness and its appealing hue (with natural colouring). It is . It is also ideal for garnishing, flavouring and decorating cups, semifreddo, mousse, frozen yogurt single portions and stuffed fruit. Liogel Pumpkin Pie Pumpkin pie is a traditional American dessert that is eaten at Thanksgiving. It consists of a shortcrust pastry or pâte brisée shell filled with custard containing blended pumpkin, eggs, cream, sugar and spices: nutmeg, cinnamon, cloves and ginger. It is traditionally served with whipped cream. It is also a favourite for Halloween parties because it contains pumpkin. Prodotti Stella has drawn on the traditions of this distinctive pie and created a complete powdered product to use with milk and cream. Features • It contains dried pumpkin and a spice mix with cinnamon, ginger, nutmeg, cloves, cardamom and pimento. • SIMPLE In just a few minutes and a few quick steps, you can make some original, flavoursome and creamy gelato. • CUSTOMIZABLE It is delicious both in the simple version with the basic recipe and in a customized version with the addition of layers of Butter Cookies. Dosage: 400 grams per litre of milk. We recommend using 1 bag with 2.3 l of milk and 200 g of fresh cream. Cold processing: we recommend leaving the mix to age for approximately 30 minutes to let the flavour develop. Packaging: Box of twelve 1 kg bags. 11 Crunchy Sesame These flavoursome, crunchy pieces range between 8 mm and 12 mm in size. They are made of a combination of sesame with extruded rice (containing rice flour) and barley malt extract. They are perfect for flavouring and garnishing gelato and for enriching single portion cold desserts and semifreddo cakes. They marvellously complement flavours such as yogurt, honey, citrus, cheese (including mascarpone, ricotta and cheesecake) and chocolate. Packaging: vacuum-packed 2 kg bags. Candied Nuts Soft, delicious sugar-coated hazelnut chips between 3 mm and 9 mm in size. They are perfect for flavouring and garnishing gelato especially hazelnut varieties - and for enriching single portion cold desserts and semifreddo cakes. Packaging: 2 kg bags. 12 Liogel Yogurt 100 GR A powdered product for use with milk and sugar both in batch freezers and in soft ice machines for Frozen Yogurt. Plain and Tangy Frozzyo Two new powdered Frozen Yogurt products that have very similar contents but different levels of flavour and sharpness. The Plain version has a rounded, delicate flavour, while the Tangy version has a sharper, more intense flavour. Packaging: box of six 1 kg bags. 13 Flexi GR Palm Free A “PALM FREE” version (containing no palm oil) of our product for semifreddo, single portion cold desserts and mousse in tubs is now available. Eclairs are pastries with French origins and they are very fashionable at the moment. They can be filled with custard cream, Chantilly cream and various flavoured creams (such as hazelnut, pistachio and white chocolate cream), decorated with crumbs and chips, and topped with your choice of icing, such as chocolate or white chocolate varieties. They do not contain hydrogenated fats, colourings or GMOs. They are light, fragrant, versatile and both the sweet and the savoury versions are exceptional.
