Wait until the flames subside and the coals are covered with gray dust. •Use medium coals or the equivalent on a gas or electric grill. •Too high heat can cause charring on the outside of the steak or burger before the inside is cooked properly. What is the best way to tell if a steak or burger is cooked to the proper doneness? •An instant-read thermometer is the best way. Insert it horizontally into the steak or burger. •Burgers should be cooked to an internal temperature of at least 160ºF (medium), until the centers are no longer pink and the juices show no pink color. •Steaks should be cooked to an internal temperature of at least 145ºF (medium rare). Why is a higher internal temperature for burgers recommended? •During grinding, any surface bacteria are mixed throughout the meat. Cooking to medium (160ºF) doneness, which means the beef is thoroughly cooked all the way through, destroys the bacteria. •On a steak, any bacteria would be on the outside surface. Why don’t the steaks I cook at home look and taste the same as those from a restaurant? •One reason is the equipment. The intense heat of a restaurant grill or broiler that sears steaks and gives the surface that flavorful “crusty” finish cannot be duplicated at home. •Also, the grade of beef used in restaurants may be different than what can be purchased in supermarkets. It may be Prime, or a certain grade specification requested by the restaurant. How can I make sure my burgers are juicy and flavorful? •Use a gentle touch when shaping patties. •Turn with a spatula, without pressing or flattening. •Cook over medium coals to at least 160F (medium), until the centers are no longer pink and the juices show no pink color. Don’t overcook and char the outside, which results in dry, less flavorful burgers. Is grilling as popular now as in recent years? Furthermore, the siblings cook for Meals on Wheels and stay on the cutting edge of the catering world. Besides all the catering help, the mainstays are Dan and Teri, with after-school assistance from Stahn’s daughter Miranda and Kallie Rosa, as well as an occasional reprieve from Amy Schwager. Having been on the scene since they washed dishes for their parents throughout their teenage years, Dan and Teri are all too familiar with the folks that stop in, from the farmers that come for breakfast favorites and talk agriculture, sports and rainfall, to those that stick around ‘til midmorning shaking dice. “We’ve got good friends and followers,” Dan said. Food safety seems to be a hot topic these days. Why? •Our food supply in the U.S. is among the safest in the world. •It is important to make sure food remains safe from purchase to table, and that’s the consumer’s responsibility. •Purchase packages that are cold, without holes or tears and no excessive liquid. •Purchase on or before the “sell-by” date. •Purchase meat last at the supermarket. If it takes longer than 30 minutes to get home, keep it cold in a cooler with ice packs until it can be refrigerated. •At home, immediately place it in the coldest part of the refrigerator. •If you’re using frozen beef, defrost it in the refrigerator, never at room temperature. •To avoid cross-contamination and prevent foodborne illness, follow these easy steps. •Wash hands well in hot soapy water before and after handling meat and other fresh foods. •Keep raw meat juices from coming into contact with other foods in the refrigerator and during preparation. •Wash all utensils, cutting surfaces and counters with hot soapy water after contact with raw meat. •Keep carving boards separate from other cutting boards. Use refrigerated leftovers within three to four days. •Another area where we need to emphasize food safety, especially during grilling season, is in marinating. •Always marinate in the refrigerator. •Never save and reuse a marinade. •Marinade that has been in contact with uncooked beef must be brought to a full rolling boil before it can be eaten as a sauce. •Marinades that have little or no sugar may help protect meat from charring. Is charring bad for you? •Charring meat, poultry or fish is not recommended. Trim visible fat from meat and poultry before grilling to help prevent flare-ups.
