Citizens and foreigners alike have
chosen Guayaquil as their home, taking
root in this land, holding our city dear
to their hearts, and in the hearts of
their children and grandchildren.
As a man born in Guayaquil—a land
that I love immensely—I have had the
honor to be its representative since
the year 2000. I have devoted my life
and my best efforts to turn Guayaquil
into the Great Cosmopolitan City in
which we live today. It has been an
uninterrupted transformation process
that has filled the hearts of the citizens

which beacons all tourists to visit.
Like a lighthouse, its beam, guidance
and knowledge represent what we

people of Guayaquil for generations.
Guayaquil is the city where different
cultures converge, uniting Ecuadorians
from all the country’s provinces.
As such, it is a place with a varied
gastronomy that combines flavors
from every corner of Ecuador. The

true flavor of Guayaquil, tasted in

international culinary destination
W
ith the objective of converting
Guayaquil into a culinary
destination of global importance,
the Convention Center hosted
the culinary event called “Raices” (Roots)
occurred from July 24 to July 27.
Mayor Jaime Nebot Saadi hosted the event,
which was organized by the Municipality of
Guayaquil’s directorate of Tourism and Civic
Promotion run by Gloria Gallardo Zavala. Expo
Guayaquil, the Chamber of Tourism and several
of Guayaquil’s culinary schools provided
venues and logistical support.
Raices” had four stages: “Huecas”

Competition, the Ecuadorian Culinary Cup,
the Raices Latitud Cero Conference (Roots
Zero Latitude Conference), and the culinary
products and services exhibit.
The main objective of this international
event was to support and promote of the
“huecas” of Guayaquil, traditional popular
restaurants that represent a symbol of our
history and part of our identity. These family
businesses have been passed down from
generation to generation, and for decades have
prepared the traditional dishes of Ecuadorian
cuisine, seasoned with the authentic flavor
of Guayaquil.
Key to organizing the event, the Municipality
of Guayaquil partnered with seven local
culinary school schools, evaluating the Huecas
and gathering data under the coordination of
Chef Santiago Granda, promoter of the Higher
Technological Institute of Culinary Art in
Guayaquil.
Institutions that participated in the event
included: the Higher Technological Institute
of Culinary Art of Guayaquil, the Espiritu Santo
Higher Technological Institute, the South
American Higher Technological Institute, the
Espiritu Santo University, the State University
of Guayaquil, the Cook and Chef School, and
the School of Chefs.
Survey data revealed a total of 378 huecas
located in the following urban parishes:
Tarqui, Rocafuerte, Carbo, Sucre, Roca,
9 de Octubre, Bolivar, Olmedo, Ayacucho,
Garcia Moreno, Ximena and Pascuales; also
in the rural parishes of El Morro, Posorja and
Varadero.
During a competition sponsored by the
Municipality, local culinary schools selected
70 Huecas to compete, based on their menus’
flavor, tradition, quality and service, to be
declared as “Tourist Culinary Destinations”.
The top the thirty earned the opportunity to
participate in the “Raices” event, where they
exhibited their signature dishes and offered
samples of delicious traditional food.
Also during the event, the participating
culinary schools evaluated the selected
huecas, which competed for the Culinary Star
of Guayaquil. “El Pez Volador” earned The
Golden Culinary Star. “Picanteria Don Carlos”
obtained the Silver Star, and “El Manabita”
earned the Bronze Star.
More than 600.000 attended the “Raices”
event, run by Nicolas Romero Ordeñana at the
Convention Center. Its huge success constitutes
the first step toward turning Guayaquil into an
International Culinary Destination.
The “Raices” event, complemented by
continued training for the owners of the select
huecas, as well as improvements to their the
thirty locales, will recur annually. The second
expo is scheduled for July of 2015.

his traditional restaurant prepares a
delicious duck stew (seco de pato),
seasoned with several spices that bring
out the duck’s natural flavor. They include
Rosemary, Basil, Peppermint, mint leaves,
Cilantro, Thyme, Lemon Balm, Lemon Verbena,
Saffron, Cinnamon and cloves.
Established in 1978, and located at 547
General Cordova Avenue and Mendiburo Street,
this hueca features a music venue and an
exhibit area for discussion of the arts. Known
for its personalized service, at Meson de Don
Succo guests can enjoy their meals with a glass
of red wine.
Owner and chef, Raul Suconota, uses no
artificial flavors in his dishes, assuring that
natural ingredients, when used in proper
amounts, are sufficient to properly flavor food.
The locale was among the the thirty huecas
chosen to participate in the inaugural Raices
International Culinary Fair.
El Meson de Don Suco opens from Monday to
Saturday from 07h00 to 23h00. Closing time
is extended on Fridays due to the increased
number of visitors.

aniel Corozo arrived to Guayaquil from
his birthplace, Esmeraldas, in the 1970s,
and began selling toasted peanuts in the
Streets of Guayaquil. When his peanut roaster
broke, he had no choice but to take his business
in a different direction.
Soon, he began to prepare his traditional bollo
(plantain roll stuffed with seafood), its recipe
remaining unchanged, even after he expanded
to his restaurant located in Pedro Carbo and Roca
Streets.
A man of creativity, Daniel soon prepared dishes
made with coconut and seafood (encocados),
using only natural ingredients for seasoning. His
restaurant, El Verdadero, was among the thirty
selected to participate in the inaugural Raices
Culinary Fair.
Corozo’s El Verdadero opens Monday to
Saturday from 07h30 to 16h00 in two locations:
one located downtown and the other in Kennedy
Citadel.

I
f you are looking for a midday or afternoon
snack, Ambigú Café’s owner, Edgar Palma
will wait on you personally. His locale, with
its distinctive flavor, serves natural fruit juices
and snacks such as tortillas and bolones de
verde (cooked plantain ball filled with cheese
and pork).
The café, located in the corner of Urdaneta
Street and Boyaca Avenue, has a colorful
design featuring images of its fruit shakes
and juices. Selected for its quality and service,
Ambigú Café was selected to participate in the
Inaugural Raices Culinary Fair.
At Ambigú Café, diners can enjoy tortillas
and coffee, and if so inclined, juice and fried
eggs. Catering to executives and walk-in
customers alike, the establishment opened its
doors ten years ago.
Ambigú Café opens Monday to Friday from
08h00 to 18h00, and Saturday until 14h00.

La Culata
O
pened three-and-a-half years ago, La
Culata, owned and operated by Freddy
Giron and his wife Miriam Herrera, has
become a favorite of local artists.
Seafood specialties such as Encebollado
(hot fish soup), bollos (plantain roll stuffed
with seafood), and ceviches, among others,
are included on the menu. However, the house
specialty is Encurtido de Pescado (Picked
Fish), which is sold from morning to night.

or exhibited their art. Such visitors included
members of the Fantoche group, movie
directors, dancers, and painters. According
to the owner, the name refers to an old epithet
of the city, before it was named Santiago de
Guayaquil.
La Culata is located in 507 Cordova Avenue
and Mendiburo Street. The restaurant opens
from Monday to Saturday from 08h00 to
16h00, and from 17h00 to 24h00; Sundays
from 08h00 to 16h00.

hirty-five years ago, Amador Rivera (+)
opened a seafood place that became an
icon within Guayaquil’s culinary scene.
Currently, his niece, Yolanda Cruz, manages
the business, offering specialties that include
Sopa Marinera and Guatita.
Other delicacies, such as Cazuela de Pescado
(seafood covered with plantain puree and
baked in a clay saucepan), ceviches and the
traditional fanesca, a dish made with 12 grains
and is eaten during Easter, also make up the
menu.
Amador Restaurant is located in Luis
Urdaneta Street # 104 and Rocafuerte Avenue.
Hours of operation are Monday to Saturday
from 09h00 to 15h00.

La Barca Azul
T
his hueca started as a Cuban restaurant
twenty years ago, until owner, Maggy
Gomez, converted it into a traditional
seafood restaurant.
Located at 201 Panama Avenue and
Roca Street, the Barca Azul prepares dishes
according to customer requests. However,
its signature dish is the Bandera de Mariscos
(Mixed Seafood Platter), but the restaurant
also offers Seco de Chivo (goat stew with rice)
and executive lunches.
La Barca Azul opens Monday to Friday from
07h00 to 21h00, and Saturdays, Sundays and
holidays from 07h30 to 17h00.

pening its doors three years ago on Pedro Ycaza
and General Cordova Streets, this restaurant’s
featured dish is barbecued ribs.
Owner, Nicolas Calle Andrade, was born in Quito but
moved to Guayaquil seeking a better future. Currently,
he owns three restaurants that serve his unique ribs,
which undergo four hours of basting and preparation.
The seasoning and flavor have earned this hueca a
place as one of the most famous in Guayaquil. As a side
dish, Nico’s is also known for it famous empanadas
(stuffed pastry).
It opens daily from 12h00 to 22h00.

oe Crespo started his business
seventeen years ago, selling
bollos in a spot near the Social
Security Offices. Thanks to his hard
work, he eventually rented a kiosk and
then eight years ago opened his own
restaurant at 508 Padre Aguirre Street
Baquerizo Moreno Street.
This hueca’s signature dish is fish
bollo, accompanied by hot pepper
sauce, lemon and rice. The locale sells
around 70 plates per day.
According to Crespo, quality
ingredients and warm customer service
have led to the restaurant’s success.
This hueca opens Monday to Saturday
from 09h00 to 22h00.

he Picanteria started forty-five years ago
as a family business when Sandro Molina
and his father Juan sold encebollados from
a kiosk. Their hard worked paid off and soon they
opened a restaurant located within the city’s
banking district.
Currently, Sandro manages the locale with
his wife Jessica Sanjines, staying loyal to the
original seasonings and flavor that made them
famous. Encebollado is deeply entrenched in
Guayaquil’s culinary culture, and is a main
dish served in this hueca. Two hundred daily
customers dine in pleasure when tasting this
popular dish, also known as “levantamuerto”
or raiser of the dead.
Picanteria Don Juan also serves fresh seafood
dishes. Located at 700 Cordova Avenue and Luis
Urdaneta Street, it opens from 08h00 to 22h00.

offering a laid-back customer
atmosphere. Known for its delicious
fruit juices and cocktails, Frutabar also
serves fresh sandwiches.
The owner, Rodolfo Calderon, has
managed the restaurant for fourteen years,
offering an original menu that attracts
foreigners and locals of all ages.
Located at Malecon Simon Bolivar
Avenue and Imbabura Street, its distinctive
design is registered with the Ecuadorian
Institute of Intellectual Property (IEPI for
its acronym in Spanish) and features several
of Calderon’s original designs.
Frutabar opens Monday to Saturday from
09h00 to 01h00.

El Lechón
C
azuela, which can be uniquely flavored
and prepared with either fish or a mixture
of shrimp and crab, is one of this locale’s
signature plates. Served in a traditional clay
saucepan, customers can choose either hot
pepper or lemon seasonings.
The dough, prepared with cooked, grated
plantain and peanuts, is mixed with seafood
and then baked in the oven. Served hot, this
dish is garnished with cilantro.
Jimmy Asan, owner, tells that the restaurant’s
name was chosen as an advertising strategy
to attract customer attention. Marisqueria El
Lechon participated in the inaugural Raices
International Culinary Fair.
Continually seeking to improve, a dish called
El Naufrago (castaway) will soon be added to
the menu. This meal includes encebollado (fish
soup), Guatita (gut stew), Seco de Chivo (goat
stew), shrimp ceviche, fish or concha (shell),
Cazuela and a fried egg.
El Lechon opens daily from 08h00 to 15h00,
and is located in Victor Manuel Rendon Street
and Boyaca Avenue.

on Pepe’s, which opened
over fifty years ago and is
now run by third generation
family, is a traditional place to eat
pork sandwiches.
Jorge Perez, current owner,
learned recipes from his mother.
Don Pepe’s started as a kiosk
located in Boyaca and Velez
Streets, where Jorge’s wellknown grandparents were
supported by loyal customers
who ate sandwiches every time
they passed by.
The Hueca bears the Don Pepe
name in honor Jorge’s father, Jose,
who was better known as Pepe. As
the business grew, it expanded
and is now rooted in Ximena
and Padre Solano Streets. Due
to its quality and good service,
this hueca participated in the
inaugural Raices International
Culinary Fair.
Jorge Perez has kept the
tradition of serving the pork in a
bun with pickled onion.

ella Sol Herrera started her traditional
restaurant twelve years ago with the
support of her friend, chef Francisco
Calderon (+), who convinced her to open a
place. Currently, she has seven restaurants.
The menu offers baked chicken, Seco de
Pollo (chicken stew with rice), Lambada de
Mariscos (seafood dish), and Bandeja Mixta,
among others. Tenedor de Oro’s signature dish,
served to approximately 25 customers per day,
is fried fish served with salad.
Tenedor de Oro is located in 628 Boyaca
Avenue between Padre Solano and Alejo
Lascano Streets. It opens Tuesday to Sunday
from 09h00 to 15h00.

years ago on Boyaca Street. Its
signature dish is encebollado,
traditional fish soup, served with
shrimp.
Approximately 700 people visit
the restaurant daily to taste this
unique dish, which costs only
$2.50. Ceviches and banderas (a
combination of traditional dishes)
are also popular menu items here.

en years ago, Jorge Baez Macias from
Manta, began selling empanadas in La
Florida Citadel. The empanadas come
stuffed with several ingredients, but his cheese
empanada is the customers’ favorite. He offers
natural fruit juices to accompany the pastry.
Baez Macias says his success lies in the
fact that the affordably priced empanada is
something that can be eaten at any time, as
a snack, for breakfast or lunch. Such success
allowed him to open another hueca, located
in Luis Urdaneta Street and Pedro Moncayo
Avenue, where he sells around 500 empanadas
per day.
Empanadas stuffed with ham, chicken and
beef are always available. The place opens
Monday to Sunday from 06h00 to 20h00.

his locale, offering the exquisite taste
of catfish soup, opened its doors fortyfour years ago at its present address on
Malecon Simon Bolivar Avenue, close to the
former South Market (currently Crystal Palace).
Leonidas Hernandez started the business,
which is presently run by his granddaughter
Ingrid Reyes. The hueca is located in Colon
and 10 de Agosto Streets.
The founder thought catfish resembled
chicken breast, which is why he named the
place Pollo Marino or Sea Chicken.
The restaurant prepares a hundred pounds
of fish daily for the soup, which includes fish
heads that, according to the owner, have great
nutritive value. For its quality and good service,
the hueca participated in the inaugural Raices
International Culinary Fair.
Pollo Marino opens daily from 07h30 to
17h00.

A
dela Mera de Campos created one of
the best guatita recipes in Guayaquil.
Her hueca, La Guatita, is located in the
corner of Pedro Moncayo and Luque Streets.
A gentleman from Los Rios province founded
the place sixty-five years ago. Fifteen years
later, Adela acquired the restaurant and soon
expanded it to seat seventy customers.
Guatita is prepared with cow gut, which
has to be properly cleaned and seasoned.
Preparation includes adding potatoes,
spices and the mandatory ground peanuts.
Additionally, its sauce is prepared with onions,
peppers, garlic and other ingredients.
The restaurant has a varied menu that offers
Seco de Pollo and chivo (goat and chicken
stew), Bandera (combination of traditional
dishes), Encebollado (fish soup) and breakfast.
It was one of the thirty huecas that participated
in the Raices International Culinary Fair.
La Guatita opens Monday to Friday from
06h45 to 18h00; on weekends it closes at
15h30.

Izquierdo own this restaurant, where
visitors can taste a delicious hen dish.
Before tasting the plate, a cooked plantain is
served with sal prieta (special salt seasoned
with toasted corn and toasted peanuts), a
typical condiment from the province of Manabi.
The restaurant is located in 9 de Octubre
and Jose Mascote Streets in a heritage house
that was built in 1929, by architect Francisco
Macaferri, who also built the Municipal Palace.
The hen stew is accompanied by rice,
fried sweet plantain, hot pepper sauce and
avocado. The perfect combination of spices,
onions, pepper, chicha (fermented beverage
derived form maize) and other ingredients give
the dish a unique and delicious flavor. The
restaurant participated among the thirty in the
Raices International Culinary Fair.
The restaurant also serves goat, pork and
duck stew. El Palacio de los Secos opens

his hueca is owned by Angelica Cuillan,
who prepares all the dishes and serves
encebollado, a traditional fish soup, with
a twist.
The main ingredients are fish, cassava and
spices that give the dish a unique flavor. All
the ingredients are natural.
The restaurant is located on Aguirre Street,
between Esmeraldas y Mascote. The business
started as a small kiosk and later expanded
to the restaurant of today. For its quality,
tradition and flavor, El Pez Volador was chosen
as one of thirty restaurants to participate in
the Raices International Culinary Fair, and was
awarded the Golden Culinary Star.
Another famous dish is the fish bollo, known
for its delicious seasoning. It is served mainly
Fridays to Sundays. This stuffed fish roll’s main
ingredients are fish, green plantain dough
and peanuts. The plate is served wrapped in
a plantain leaf, which preserves the aroma
and flavor.

However, people who’ve long known
owner Marino Calderon visit his other hueca
located near the Olympic Pool on Hurtado
Street, where the business originated.
Twenty-one years ago, this entrepreneur
started selling juices and fruit salads.
Marino, then seven years old, arrived to
Guayaquil from his native Jipijapa with
his family. From a young age, he learned
from his father to prepare fruit juices, and
in time managed to improve on his dad’s
original recipes.
The restaurant, part of the Raices
International Culinary Fair, and was
awarded with the Bronze Culinary Star.

One of its signature dishes is fried sea
bass, served with patacones (fried green
plantains), rice, avocado and a traditional
salad.
It is located in Ejercito Avenue and

people. There are two branches, one located
in downtown and the other in Kennedy
Citadel, north of the city.
At the beginning, owner, Juan Molina,
prepared the dishes but in time he passed his
recipes to his sons and several employees.
Picanteria Don Juan also offers shrimp
ceviches, fish and concha (shellfish), Arroz
Marinero (rice with seafood), Sopa Marinera
(seafood soup), and encebollado (fish soup).

been known for her ceviches and other
delicacies, which she prepares with
seafood and serves in her restaurant Aqui
esta Marcelo, located in Esmeraldas and 10
de Agosto.
She started her business with a single table
located in Velez and Esmeraldas Streets, where
she served fresh oysters with lemon. Now, her
family restaurant includes her sons, daughters
and sons-in-law.
The two-story building has room for 150
people on the ground floor and the same
amount on the upper floor. The signature
dish is the ceviche, but the menu also offers
rice mixed with shrimp, concha, or seafood.
Several specialties, like the Russian ceviche,
which is a mixture of different seafood, also
highlight the menu.
The place was one of the thirty huecas to
participate in the Raices International Culinary
Fair and has a branch located in Urdesa. Soon,
branches will open in Samborondon and in
Salinas. Hours of operation are daily from

his restaurant has been located at Hurtado Street between
Machala Avenue and Antepara Street for more than sixtyfive years. The current owner, Belgica Hojas, together with
her partners, prepares the soup daily.
Work starts early in the morning at this hueca, beginning with
the preparation of the sausage’s rice stuffing. Each ingredient is
carefully chosen and must be fresh.
Once ready, the soup is served hot, accompanied with
whatever the customer prefers—choices include cooked green
plantain, chifles (sliced, fried green plantain), or bread, and the
mandatory lemon and hot pepper.
Belgica tightly controls the flavor and seasoning of her soups,
so she doesn’t plan to open any additional branches. For its
quality and good service the place was one of the thirty huecas
to participate in the Raices International Culinary Fair

ver the past forty-four years, Pique y Pase has
become an iconic symbol Guayaquil’s cuisine.
What started as a family business at the end
of the 60s, turned into a restaurant that currently
has three branches in the city.
Creating a source of income for her family was
Gabriela Navarrete’s goal when she tried to establish
a bazaar at 1617 Alejo Lascano and Tulcan Street.
Since business was slow, she complemented it with
a soda bar. That’s why her hueca bears the name
Pique y Pase (have a snack and go), alluding to the
phrase: “have a snack at the soda bar and go to the
bazaar”. Currently, she runs the business with her
husband, Max Loaiza.
Arroz con menestra (rice with beans) is the
restaurant’s signature dish, and is served with beef.
Also, the hueca offers Seco de Gallina (hen stew),
Caldo de Gallina (hen broth), Guatita (gut stew),
Moros de Lenteja (rice with lentils and cheese), Caldo
de Salchicha (sausage soup) and other traditional
dishes of our cuisine. The place opens daily from

of this restaurant, which serves dishes
made with coconut and fish, or shrimp
and crab, each accompanied by a portion of
sweet plantain.
Four years ago, Alfonso Arce and his
stepsister Carlota Cortez arrived from
Esmeraldas and have been preparing the dishes
based on a family recipe. The menu also offers
another traditional dishes from the province of
Esmeraldas, including Tapao de Pescado (boiled
fish dish), Tapao Arrecho (boiled dish made of
a combination of beef, pork and sausage), and
the aphrodisiac Encocado de Chautiza (dish
made of coconut and small river fishes).

Alcedo Streets, a place where you can eat
one of the most delicious pork hornados
in Guayaquil.
This establishment, owned by Elena Morales,
has thrived for forty years. Morales’s mother
started the business and has continued it with
her family. For its quality, flavor and tradition,
La Preferida was among the thirty huecas to
participate in the Raices International Culinary
Fair.
Elena, who is an economist but also a chef,
says that her mother, a simple, but hardworking
woman of irreproachable conduct, never
thought of a name for the restaurant. However,
one day, a group of clients gave her a sign with
the name of La Preferida (the preferred), which
was placed at the site, baptizing the business.
The specialty, Hornado, is served with chifles
(sliced fried green plantain), white hominy,
sweet plantain, corn and a delicious hot pepper
sauce.
La Preferida’s single locale opens Monday to

is El Rincon de Carlos - Ochipinti Jr.,
located at the corner of Los Rios and
Alcedo Streets. Its owners are experts in in
preparing Creole crab and other crustacean
specialties.
Carlos Briones, who taught his children how
to prepare the dishes, began the business forty
years ago.
Xavier Cuesta, son of Carlos Briones, and one
of the managers, says that his father chose
the name Ochipinti because Glubis Ochipinti,
a Barcelona soccer player, was one of its early
but frequent clients.
The Creole crab is served with onion sauce
and cooked sweet plantain. If the customer
chooses, it can be accompanied by rice,
patacones or chifles (fried green plantain).
For its history, quality and tradition, this was

after his favorite soccer team, whose
main restaurant is located at Olmedo
and Lavayen Streets.
This establishment dates back to 1972,
when Figueroa and his wife, Lady Ayda, began
to sell chargrilled chicken served with a
traditional salad. Pollos Barcelona currently
has two branches, one located in Portete
and Chile Streets, and the other in the Fortin
shopping mall.
After Jose’s death, his children took charge
of the business and have since renewed the
menu with a variety of salads and a dish called
Chicken Aguado (chicken dish with moist rice).
They personally select all the ingredients;
the freshest chicken and the herbs used for
seasoning, believing everything should be of
the highest quality. This hueca participated in
the Raices International Culinary Fair.

wife Gladys Quinaloa has been in great
demand. This dish, which includes traditional
potato rolls, eggs, sausage, peanuts and Creole
sauce, also features elements such as pork and
white hominy.
Early on, the owners started selling meat
kabobs with potato rolls, but later rented a
place and began to prepare their “authentic
llapingacho”.
Additionally, the menu offers secos (stews),
bolones (cooked plantain dough stuffed with
cheese and pork), fruit juices and coffee. The

entrepreneurial spirit thrity-six years
ago and began to sell various dishes at
the old southern market.
Her full-flavored recipes and quality food
have maintained this restaurant’s place on the
market for more than three decades. Thanks
to the Urban Regeneration Project, Tiban
managed to open her business at 310 Captain
Najera Street between Chile and Eloy Alfaro.
The menu offers hen soup as the house
specialty, but visitors can also enjoy goat
soup and encebollado (fish soup), served with
the kindness and flavor that characterize the
place.

ifteen years ago Luis Crespo Romero and
his two brothers began selling bollos from
a truck. They parked in an area located
on the outskirts of the Social Security Offices,
until ten years later being able to settle in a
small shop located 318 Calixto Romero and
Francisco De Paula Lavayen.
Crespo says that he learned the recipes from
his father and maintains the traditional flavor
of the bollo, which is served with sauce and
rice.
El Rey del Bollo opens from Monday to

his restaurant is a traditional place in Guayaquil, where
people can taste a rice chicha drink known as Resbaladera.
This refreshment can be accompanied by traditional
sweets like quimbolitos, churros, alfajores, quesadillas and
other snacks.
Owners Rosita Amendano and Angel Barba, a native couple
from the Sierra region, arrived to Guayaquil and began
preparing with products from the coast.
The preparation of the chicha begins by soaking the rice
grains from which flour is obtained. This product is cooked
with spices such as cinnamon, clove, pepper and sugar.
The drink is served with ice and is both refreshing and
nutritious. For quality, tradition and service, this locale was
selected to participate in the Raices International Culinary
Fair.

city’s Department of Transportation
in 1998, he decided along with his
wife Virginia Leon to open a restaurant. Little
by little they began to acquire local fame due
to the exquisite taste of their food.
One of the hueca’s main courses is Seco de
Chivo, which is elaborated with fresh chicha
(traditional rice drink), and prepared by the
owner himself.
Mendoza and his wife Virginia state that
preparing a good Seco de Chivo is not easy,
since one must know how to add the right
quantities of only natural ingredients.
The restaurant is located at Chimborazo and
San Martin, where customers can also taste
seafood dishes like Cazuela (cooked plantain
dough stuffed with fish), ceviches, and fried
fish, among others. The place comfortably
seats fifty patrons. For its history and tradition

he Colada Morada is an energetic and
nutritious drink that can be served—
unaccompanied—as breakfast or supper.
This drink is of Andean origin, where
indigenous communities consume it on the
Day of the Death, an offering made to their
dead relatives during a ceremony held in
cemeteries. This is part of a ritual meant to
commune with their ancestors.
However, in the Streets Guaranda and
Francisco de Marcos, the small, traditional
restaurant called Colada Morada serves the
drink daily. This establishment has been
working for thirteen years, managed by
Naranjo family. Elena Naranjo states that her
brother came up with the idea to offer Colada
Morada throughout year.
To prepare the Colada, black corn flour and
spices such as mortiño and select fruits are
used. However, pineapple is one of the main
ingredients, although other seasonal fruits
can be added.
Colada Morada was one of the thirty
huecas chosen to participate in the Raices

Rafael Chiriboga, from La Libertad, runs this
small, traditional restaurant. Chiriboga’s dish
is the Moro de Lenteja con filete de pescado (a
portion of rice and lentils served with fish). He
also offers ceviches and other seafood dishes.
His traditional restaurant has been visited by
national and international personalities, among
them actor Hector Vivar, who portrayed Mr.
Barriga and Ñoño in the Mexican comedy Chavo
del 8. At one point, the Mexican actor ate there
for four straight days.

food. Raquel Calderon and her daughter
Jeinmi Cueva (picture) opened the business

varied tastes of customers.
In this restaurant, among others,
people can eat bolon with shrimp
bathed in a guacamole sauce, or the
homemade bolon, which is stuffed
with melted cheese and pieces of pork.
The restaurant’s signature item is the
Cristobal Bolon, which is served with
steak sauce and a fried egg. Another
version is the Bolon Maduro (made with

Fuentes began her business in a small,

as well as crabs and salchipapas (sausage
mixed with French fries). In time, she learned

Originally, the restaurant sold fried fish, and
for a time, Pluas was the only woman that sold
that dish in the area.
Currently, her son Ronaldo Campuzano runs
the establishment, located in the corner of Chile
and Garcia Goyena Streets. In all, four branches
are located in different areas of the city.
Picanteria Olguita also offers seafood dishes
that are prepared to order. It opens every day
from 14h00 to 22h00.

stablished forty-five years ago in Pascuales,
Fritada Picanteria Ivis’s main dish is fritada,
or fried pork. Single mother and founder,
Dora Larosa, passed the business two her two sons.
The place has been located on the main avenue
of Pascuelas since its beginnings.
The featured fritada is made with pork that is
pre-seasoned long before entering the oven. The
brothers use natural seasonings and spices, long
having learned the exact measurements of each.
Once prepared, the fritada is served with chifles
(sliced, fried plantain), mote (white hominy),
fried or cooked sweet plantain and a creole sauce
made with pepper, onions, tomatoes and lemon.
Due to its long history and tradition, Picanteria
Ivis was one of the thirty huecas chosen to
participate in the Raices International Culinary
Fair.
Picanteria Ivis seats approximately seventy
people, and opens from 09h00 to 19h00.

business five years ago, andhas been doing wellThe hueca’s delicious cakes and
sweets are recognized in the whole parish of
Pascuales as well as neighboring areas.
Customers seek Le Gourmet’s cakes, deeming
them superior quality compared to other
locations. Chef Franco says that the secret is in
the fillings, made of figs, strawberries, oranges,
pineapples and other fruits, which gives them a
traditional touch.

Franco also prepares foreign deserts as well
as traditional Ecuadorian sweets, including rice
with milk, volteado de piña (pineapple upside
down cake), torta de choclo (salted or sweet
corn cake), torta de camote (sweet potato
cake), fig preserves and the renowned torta de
maduro (sweet plantain cake). Due to its history
and tradition, this was one of the thirty small,
traditional restaurants chosen to participate in
the Raices International Culinary Fair.
Juan Franco’s Le Gourmet is located on the
Main Avenue, and it opens Monday to Saturday
from 09h00 to 20h00 and on Sundays until 14h00.

Rosada, a small, traditional
restaurant located in the El Morro
Port. They prepare Lisa Asada (fried
Lisa fish), which is accompanied by
sweet fried plantain and a creole sauce
made of onions and tomatoes.
They serve tourists that arrive for
mangrove and boat tours throughout
this parish’s sea marsh.
The Lisa is a white, meaty fish that
needs to be cured properly with salt
for one day to bring out its best taste.
This fish is then cooked in a typical
coal oven.
Anastacio states that he learned the
seasoning technique from his mother,
who also inherited it from her parents.
In El Morro, most people have fishing
backgrounds, and as such, know the
best ways to prepare fish and other
seafood dishes.

uring the International Gastronomic
Fair “Raices”, which was held from the
24th to the 27th of July of 2014 in
the Convention Center, the 30 participating
“huecas” competed to obtain the Culinary
Star. The award ceremony was conducted
the last day of the fair. During the four days
event the restaurants were evaluated based
on customer service, quality and service. The
winners were: Angelica Cujilán from El Pez
Volador with the Gold Culinary Star, Gladys
Quinaloa from the Picanteria don Carlos with
the Silver Star and Mariano Calderón from El
Manabita with the wit the Bronze Star.
After their participation, the 30 “huecas”
were part of the Guayaquil´s seven culinary
school Capacitation Program in food
handling, customer service and kitchen costs.
Therefore, the Tourism and Civic
Promotion personnel prepared the “huecas”
owners and managers in Guayaquil´s touristic
and civic promotion, with the purpose to
identify themselves with their city, knowing
its attractions and to become city promoters
During the fair, the Mayor of Guayquil,
Jaime Nebot Saadi, visited the stands, greet
the huecas proprietors and tasted some of the
traditional dishes of our gastronomy.

A brief history of Guayaquil
D
uring the 1540’s Diego de Urbina
organized the first settlement at
the foot of Cerrito Verde (Green Hill)
which later became known as Santa
Ana Hill. This settlement developed into a
beautiful city along the banks of the Guayas
River in the ancient Huancavilca Territory.
Thanks to the skillful hands of carpenters, the
wooden architecture of the city grew. Out of
precious, durable woods they built balconies
and portals that were unique to America.
Its location between the hills of Santa Ana
and Carmen offered a commanding view of
the river where sailboats carried out their
port activities. This early commercial activity
became the engine of the regional economy
during both colonial and republican times.
Its sheltered port, located in one of the most
peaceful estuaries of the west coast of the
South Pacific, turned into the largest shipyard
of the South Sea that Spain had.
Guayaquil was a cradle of liberty, which
was achieved during the Glorious Dawn of
October 9, 1820, when for the first time, in
the existing Ecuadorian territory, the explicit
and formal Declaration of Independence took
place. The armies that liberated Quito on May
24, 1822 departed from Guayaquil. From the
same city, a large contingent sealed the liberty
of South America during the battles of Junin
and Ayacucho.
Its geographical location had such

transcendental geopolitical importance that
the only interview held between liberators
Bolivar and San Martin, took place in the city
on July 26, 1822.
During republican times, the dynamic river
port connected the region and the country
with international trade, creating thousands
of job opportunities and progress for all
Ecuadorians. From the port, cocoa (the golden
bean) and banana were exported to the ports of
Europe and North America. Also, technological
advances arrived to the country through the
port modernizing the life of the inhabitants.
Towards 1960, Guayaquil became a seaport
that promoted the economic, social, and
cultural development of the city. This attracted
the interest of large shipping companies that
invigorated their wealthy trade.
Its large market of diverse opportunities
and the beauty of its urban landscape framed
by the fresh breezes of the river, offered an
ideal atmosphere for art, cultural displays,
and a diverse gastronomy. These factors had
characterized the city as a tourist destination
of growing importance.
This city of the large river and the estuary
“where the sun is a domiciled sun, which dawns
laughing and sleeps playing in the Salado
Estuary” as chanted by poet Pablo Hannibal
Vela, open its arms to locals and foreigners, to
share the effort of building a society of peace
and a better world.

Geographic Location: The geography of Guayaquil
is characterized by its coastal location along the
northwestern part of South America near the Equator. It has few elevations since it is far away from the
Andes Mountains. Its higher elevations are made
up of small hills that cross the city and later join
the mountain range called “Chongon-Colonche”,
which is located to the west. There is a network
of rivers formed by the Guayas to the east and the
Salado Estuary to the west giving it easy access to
the Pacific Ocean through the Gulf of Guayaquil.
Its port advantage has made Guayaquil the largest
city in Ecuador.

Weather: Guayaquil can be visited any time of the
year, since it does not have extreme temperatures.
It has two seasons: winter (from January to May)
and summer (from June to December). During winter season, the city is hot during the day and a little
cooler at night and during the summer months its
cooler during the day and nighttime.
Population: It is the largest city of the country with
a population of approximately 2,500,000 inhabitants. The 2010 census showed that Guayaquil had
2,350, 915 inhabitants at that time.

Safety: When visiting Guayaquil, tourists should
take the same precautions that they would anywhere
else. Do not leave your belongings unattended
and avoid deserted places at night. The National
Police and the Metropolitan Police guard the city’s
downtown. In case of emergency you can dial 911
and you will be helped immediately.
Visas and customs: A visa is not required for most
foreigners to enter the country for a stay of 90
days or less. However, citizens of Afghanistan,
Bangladesh, Eritrea, Ethiopia, Kenya, Nepal,
Nigeria, Pakistan and Somalia are required a visa
to enter the country for any length of time.
Currency: The US dollar is used. The bills and some
of the coins are the same as the ones used in the
United States; however, some coins are issued in
the country. Euros and other currencies must be
exchanged at the current exchange rate.
Currency exchange: Currency can be exchanged
at authorized exchange offices, hotels and banks.

Guayaquil based in an inventory made
by categories, with directions and
parishes, including the respective maps;
to promote them with our brand
“Guayaquil is my destination”, which has
represented a gigantic work that have
had the support of the Tourism team,
and the Director of Communication and
Urbanism and the Vistazo Group; from
historian Parsival Castro and Engineer
Aldo Mora who designed the maps. My
special gratitude to Carlos Julio Gonzalez
and Priscilla Parker who enriched these
guides with their wonderful pictures; also
to Lourdes Taznic and Ana Lema for the
work carried out on the Cocoa Route.
