Our most important task is to discover the very best products. We identify and meet the best producers in France and beyond, and we source each craft where it is perfected, in the field. We believe that promoting producers’ craftsmanship is the best way to support chefs’ creativity. We offer food industry professionals the highest quality products—from the unknown to the indispensable—across all our ranges. The other essential component of our business is our ability to advise and inspire. Médelys consultants bring curiosity and a passion for food to every customer interaction, making our space in Rungis market a place of discovery, tasting and mutual inspiration between food professionals. Specifically designed for food professionals, the selection is sourced as close as possible to the land and local producers, and is expanded every month with new finds. By combining classic essentials and exciting new tastes, Médelys celebrates tradition while promoting innovation. All of our products—from the everyday to the rare and exceptional—are carefully selected from trusted producers who share our demanding standards of quality and excellence. Every product has its aficionados, every craft its experts: Calvisius, Barthouil, Maldon, Corsiglia, Rougié, Beher, Saravane, Acquerello, Huilerie Beaujolaise, Valrhona, Peureux, Fossier, Olives Arnaud and Billot are just a few of the producers with whom Médelys works closely. 4 The best of gastronomy in 21 ranges Quality and variety are the hallmarks of the Médelys offering, with more than 7,000 items, 4,000 of them active, grouped into 21 ranges. 5 THE MÉDELYS BRAND The Médelys brand was created in 1994 as an easy-to-identify label allowing chefs to choose products from any range with the same exacting quality standards at the fairest price. Médelys products are selected from the best producers to meet these professional expectations. Building on our strong and long-standing relationships with producers and chefs, Médelys now offers nearly 500 items bearing the Médelys brand, all painstakingly selected with our partners. Sourcing is central to our expertise Ever searching for new tastes, Médelys puts sourcing at the heart of its business. Sourcing is what guarantees the quality of every item we offer. We source…at the source! Once we have identified a potential new partner, Médelys experts go to meet the producer on site. This discussion and tasting phase is a prerequisite before any new product is integrated into the Médelys range. Today Médelys comprises some 200 suppliers: artisans, producers, confectioners, winemakers and more. We source our expertise where the food heritage is richest: primarily in France, but also in other countries such as Italy and Spain. Every year Médelys experts set out to meet dozens of new producers, with the goal of establishing more long-term partnerships. 7 The Médelys space at Rungis: dedicated to culinary creativity Médelys has a space inside Rungis market where customers can make purchases and consult with our experts. Designed as a fine food showroom, it is a unique place where chefs are invited to choose their products, discover new tastes, discuss their aspirations and be inspired by changing seasons and menus. Food professionals are guided through the entire process, from selection to collection, by Médelys sales consultants who are trained to help customers and introduce them to products they don’t yet know or use. Our expertise in discovering new products that will inspire great chefs has led to strong relationships with many starred restaurants, including L’Astrance, Le Plaza Athénée, MaSa, Le Baudelaire, Les Tablettes de Jean Louis Nomicos, Agapé, Le Pouilly, Les Climats, Ze Kitchen Gallery, Akrame, Le Relais Louis XIII, Laurent, La Madeleine, L’Auberge à la bonne idée and Le Gabriel. A flexible sales team that is ready to advise The Médelys sales philosophy is founded on listening, advising and developing long-term relationships. Médelys sales representatives have detailed knowledge of products and food professionals’ needs, so they can inspire their customers and adapt to their requirements. Our sales representatives visit customers on site in order to attend to all of their needs: going over the menu, suggesting new products and providing tastings. The sales administration team supports sales representatives by answering customer questions, making recommendations and supervising every step in the process, from order placement to delivery. 8 THE MÉDELYS STORY Founded in 1987 by Florence Hardy, Médelys has become a well-known destination at Rungis International Market in Paris. Médelys owes its longevity to its founder’s commitment, to the team spirit its leaders have created and to the passion shared by all of its partners for the products and crafts they represent. As the only company at Rungis market that was founded by a woman—who still heads the company—Médelys is a unique story of individual and collective success. Médelys is an active participant in the development and growing influence of Rungis market. Florence Hardy is the founder and president of the UPSG (the French union of gastronomy professionals), an organization that aims to circulate information among industry professionals and enrich their participation at Rungis market. The president of Médelys has also been on the board of directors of the Rungis employers’ association (Groupement d’Employeurs de Rungis) since it was created.
