2012 Volado White Rhone Blend 50% Viognier | 32% Roussanne | 18% Marsanne Paso Robles This wine presents intense tropical fruit fragrances like: pineapple mango, papaya, and passion fruit. Aromas of peach and pineapple complement a finish of crisp tartness and vanilla. To achieve the perfect balance, the wine was aged for eight months in 79% stainless steel, 14% new and 7% seasoned French oak. This ancient Rhône varietal is finding modern popularity as an intriguing alternative to Chardonnay. 5c4a 6s e s • Total Production: 546 cases • Released: August 2013 • ALC: 14.9% • pH: 3.10 • TA: 0.58 g/100ml • RS: 0.05 g/100ml Price: $32 Winemaking Notes: Hand picked and vineyard sorted on a very cold morning in October. The grapes were then destemmed and cold soaked for 2 days. The fruit then went straight to the bladder press for a light pressing. The must was cold fermented in stainless steel for about 2 weeks to retain fruity notes and then allowed to undergo Malo-Lactic fermentation. The wine was aged for 8 months. Recommended Pairings: Wonderful with cheese and full-flavored chicken, fish and turkey. Works well with pork in spicy sauces. Also pairs nicely with Asian cuisine.
