This course fulfilled Standard
A3.2 Para 4 of Maritime
Labour Convention 2006.
To produce well-rounded
catering crew with appropriate
knowledge, skill, competence
with positive attitude, respect
for maritime best practices
and high moral values.
On completion of the course the participant should
have knowledge, skills and able to perform the duties
given as follows:

Manage food and beverage services effectively
and efficiently based on rules and regulations
onboard ship.

Provide minimum standard of food & beverage
services onboard ship.

Implement guidelines on inspection, education,
research and publication.

Implement guidelines on qualified chef, cook
and steward.

Implement hygienic working procedures in daily
job activities.

Provide a combination of menu consisting a
balance diet, including food for the sick.

Manage the costs and expenses within the
budget given.

Apply appropriate storage procedures.

Manage accommodation operations effectively
and efficiently.

Ensure a clean and healthy living environment

Galley - Kitchen Organization
(a) Kitchen work flow onboard the vessel
(b) Safety precaution in food preparing
area
Food handling
(a) Equipment used in preparing
Western cuisines

for all ship personnel onboard.

Understand religious requirements as well as
cultural practices pertaining to food.
CLASS SIZE

Class size is limited to a maximum of 16
students.
(c ) Preparing Malaysian cookery for
buffet
Serving Cook or Chief Cook onboard ship; or

Catering rating who is going to be designated
as cook; and

All trainees must possess at least 12 months
working experience in the Catering
Department.
