We handcraft each of these mirror finish stainless steel beauties in our shop in Hilbert, Wisconsin. Flue Section Finishing Section Batch Boiling Continuous Flow Flue Pan Unlike divided pans, the entire contents of these flat pans will become syrup at the same time. When the batch has reached 66% or greater sugar density, the fire is extinguished, and the syrup is transferred to a smaller pan for fine-tuning, filtering and bottling. Divided pans contain a series of connected channels. Raw sap is slowly added in the back corner and finished syrup is drawn off periodically from the opposite corner. Benefits of this method include “reversible flow” that reduces sugar sand buildup on the bottom of the pan which can create off flavors or even damage the pan. The bottoms of these continuous flow pans contain several deep “pockets” called flues. The flues enable the pan to extract more of the fire’s heat so that heat won’t be wasted going up the smokestack. This results in a superior boil/evaporation rate. We offer three different types of flue pans: Hybrid Pan (shown above), Raised Flue Pan Set (p. 7) and Drop Flue Pan Set (p. 6 to the right and p. 8). 7 and finishing pan because they are already airtight. • Continuous flow. (See p. 5 and p. 14 for more explanation.) • Cost-effective option for hobbyists. Pan Set • Separate flue pan + finishing pan joined with external fittings. • Finishing pan can be swapped out for cleaning. • More options available such as our same side • • • • • reverse system which decreases sugar sand buildup. Continuous flow. (See p. 5 for explanation.) Raised flue option available (shown on the left). Easier to handle because it can be taken apart. Draw-off boxes. Generally built to be high performing. • Raised flue pans employ an extra float box. This is because the liquid level in the flue pan needs to be higher than the finishing pan to keep the flues submersed. • Drop flue pans can be drained more completely without lifting the pan because there is a drain manifold at the bottom of the flues. In contrast, a raised flue pan is drained via a fitting located on the side of the pan. • Make sure your arch can accommodate the style of flue pan you select. • Drop flues are easier to access from underneath in the event that you would need to brush any ash or other debris off of them. • Hybrid pans are available with drop flues only. Efficiency TIP Rest your pan on a fireproof gasket material such as braided rope to ensure cold air is not pulled underneath your pans into the arch. On March 1, 2015, the MacDougalls tapped about 100 trees between their property and two of their neighbors’ property.
