41 km east of Paris, is the result of ecclesiastical history and geology. The city has been a religious center since the seventh century, when Saint Faron founded a monastery on the banks of the Marne River. The link between mustard making and religious life was forged when Charlemagne charged monks with growing mustard seeds. In addition, the countryside surrounding Meaux is rich in the kind of silaceous rock needed for mill stones, which led to the creation of hundreds of mills in the area. By the 17th century, Meaux boasted numerous mustard factories. In the 19th century, J.B. Pommery, a mustard merchant and mill owner, was fortunate enough to acquire the Chanoines’ secret mustard recipe. It is this recipe, almost lost in the upheavals of the 20th century, that was reintroduced by the Chamois family in 1949. Since then, the family business, now in its fourth generation, has focused on promoting the classic mustard while introducing a variety of successful new recipes. Pommery Mustard from Meaux Whole-grained mustard from Meaux has been served at the tables of French kings since 1632. Brillat-Savarin said “If it isn’t Meaux, it isn’t mustard.” Mustard with Green Peppercorns This green peppercorn mustard will delight peppercorn lovers because the taste of the Madagascar-grown green peppercorns shines through. It takes its name from the abbé who, at the end of the 19th century, first commercialized Banyuls wine in order to raise money to construct a church for the village. Today, the Cave relies on 750 vignerons and their 1150 hectares of vines for its wine. Banyuls Wine Vinegar Banyuls is one of France’s famous vins doux, sweet wines drunk in apéritif or as a dessert wine. It is made principally from the grenache grapes that grow in and around Banyuls-sur-mer, where the Pyrenées descend into the Mediterranean. The vinegar that is made from this wine is aged for six years in oak casks and retains all the wine’s qualities, with hints of nuts, licorice, coffee, orange peel, and vanilla. It mixes well with nut oils. Its natural sweetness also makes it an good choice for deglazing rich dishes like sautéed duck or foie gras. Ingredients: 100% Banyuls wine vinegar. Delicate, sweet-tart, and clear, verjus may be used for FRENCH FEAST 9 PHILIPPE GONET VINS ET VINAIGRES The town of Arbois, in the Jura mountains, was home for many years to Louis Pasteur; it is also the capital of vin jaune (yellow wine) production. It is here that in 1994 Philippe Gonet, after studying Pasteur’s work on vinegar, was inspired to try producing vinegar from the region’s very special wine. He starts with top-quality yellow wines, which he further ages in his 17th century wine cellar. His vinegars, made without colorings or preservatives, have won accolades and are used by leading chefs including Alain Ducasse and Georges Blanc. Yellow-wine Vinegar Vin jaune (yellow wine) is a specialty of the Jura, the mountainous region between Burgundy and Switzerland. Made from Savagnin grapes, vin jaune is aged for more than six years in barrels that are not topped off as the wine evaporates. Within the first two years, a layer of yeast forms on top of the wine. This layer, called the voile (veil), allows for controlled oxidation; it transforms the structure of the wine and gives the wine its characteristic taste of nuts and spices. (To this point the process is similar to that used to produce sherry, but unlike sherry, vin jaune is not fortified.) At the end of six years and three months, the wine that remains (about 62% of the original amount) is transferred to special 62cl bottles, called clavelins. It is from this very special wine that the yellowwine vinegar is made. The wine is aged at least two more years in oak barrels before final transformation into vinegar. The whole process takes about 10 years. The vinegar is yellow, slightly amber in color, with touches of green and gold; its scent contains notes of walnuts and curry. It makes an excellent accompaniment to dishes of the Jura: chicken with vinegar or salad FRENCH FEAST with walnuts and Comté cheese. It can also be used to deglaze dishes like frogs legs, langoustines, shrimp, and grilled fish. After aging in cool cellars, the vinegar is concentrated and reduced by slow evaporation. It has a yellow ocher color, very ambered, light, limpid, and slightly thick. The expanding business later moved to Sarlat. Today Rougié is the world’s leading producer of foie gras and moulard duck specialties.
