Here is a little history about myself. I’m a native of
Albuquerque and a graduate of the Albuquerque
Academy and the University of New Mexico. I’ve been
in the restaurant industry for 30+ years. When I was 13
years old, I started scrubbing pots and pans – not even
yet to obtain the status as dishwasher – then I became a
dishwasher, bus boy, and prep cook, snack bar manager at
16 years old, bartender, waiter, general manager and now,
Director of Operations. I’m sure that many of you have a
very similar story. The main reason I love this business
is because of the instant results and gratification of your
efforts. If a customer is happy and pleased, you know
you have done a great job. Vice-versa, if you did not meet
the customer’s expectations, you have the opportunity to
make everything right and again know that you did a job
well done.
The minimum wage ballot initiative is merely a voterinitiated entitlement. By the time you see this article the
minimum wage for Albuquerque will have been decided by
the people. We have been in front of the people making sure
they know what's right for businesses and the economy.
One of the expected battles this upcoming year is the
fight of the living wage proposal. We all know that this
new living wage proposal will be very detrimental to
our industry. I can assure you that we are doing all we
can to defeat this measure. Not only is this important to
all of us in Albuquerque, but to everyone in the state. If
this battle comes to your area, hopefully, the struggle in
Albuquerque will have provided us with a successful
blueprint for the future.
Making a profit is not evil. Making a profit is imperative to
staying in business. No one goes into business to lose money
or break even. The motivation behind starting a business is
to do something enjoyable and make money doing it. The
government makes money on business by taxing profits.
Therefore, profits support government jobs. Businesses
also support charities by donating part of their profit to
charities.
A goal I have for this year is a greater participation by all
of us involved in this wonderful association. I believe
the best way for this to become a true statewide, effective
organization is that we ALL need to be involved. I’m
very appreciative of those who are very involved today
and in the past. In order for us to thrive, we need more
participation by all, whether you live in Portales, Aztec,
Red River or anywhere else in the state. It is a serious
commitment. However, in our high tech world of today,
it is only a couple hours a month, well, in most months.
So please, find something that interests you and allow the
association to gain from your strengths and your talents.
I look forward to an exciting year and to help lead this
wonderful organization and its members.

I wish this weren’t true but alas…
Our economy is sinking because people don’t understand
the basics of economics and they are willing to vote
themselves and others “largesse”. A recent poll about voting
on a local economic issue proved that messaging around
sound economic policy did not matter to the average voter.
If you increase costs in one place, businesses will go
somewhere else (where costs have not increased) in order
to remain competitive with other businesses. Sometimes this
means moving a plant to China, other times it means moving
from the city to the county. Businesses will not be likely to
open in your location if it costs significantly more to do
business in your location.
We are in dangerous waters when folks can’t logically
calculate the consequences of their actions. Increasing the
minimum wage in Albuquerque is a bad move economically.
Prices will increase, people will be laid-off, business will
locate anywhere but Albuquerque.

In the works over the last couple of years,
the National Restaurant Association (NRA)
is now introducing the EmployeeEdge
Program, a new benefits and awards
program focused on rewarding and
retaining restaurant industry employees
by providing uniquely tailored benefits. It
also provides important cost savings and
productivity enhancements for restaurant
owners and operators.
Today’s employees continue to look for
and expect additional value and benefits
associated with their employment. While
restaurant groups and chains have
typically provided a more comprehensive
benefit package to their employees,
the EmployeeEdge Program will give
independents and smaller restaurant
groups an opportunity to offer an array of
benefits that have not been affordable or

the responsibilities of

basically a much simpler

money. It also offers ATM and POS

program even offers a career building job
search tool that provides information and

Getting Ready
for Session 2013
Lucky 13. Some people look at the number
13 and fear it. I have always liked the
number 13. Perhaps since that was always
the number I had on the roster in public
school? I don’t know. Whatever the
case, we are looking forward to Session
2013. Session begins on January 15 and
ends at noon on March 16. Since this
session is a 60-day session, legislation
on any topic can be introduced and with
a new batch of freshmen legislators,
I am pretty certain we will see a broad
range of legislation put in the hopper.
One of our top issues we will be looking
at supporting this year is changing the
certification for alcohol servers from
every five years to every three years
and with that reducing the penalty for
a certified server unknowingly serving
alcohol to a minor from a felony on the

A big issue we will oppose if we see
it come up is an effort to change the
constitution of the state of New Mexico to
increase the minimum or training wage
and tie that wage to the consumer price
index. We feel that the decision to increase
wages should be made at the federal level
but if it must be done at the state level
then legislators should have a say in when
and how to increase the training wages in
the state. A constitutional amendment
would mean that anytime a change needs

first offense to a misdemeanor. We have
supported this legislation for many years
and I am confident with all the work we
have done, and the fact this is my lucky
year, we will get this passed through
the legislature and up to the Governor
for her signature. The Regulation and
Licensing Department is supporting this
legislation so we look forward to some
good teamwork with the Superintendent
of RLD and with our partners at the
Petroleum Marketers Association.

of an economic crisis, then the matter
would have to be voted on at a general or
special election of registered voters. This
could seriously impact New Mexico’s
mandate set forth in the constitution, that
New Mexico must balance the budget, as
many minimum wage workers work for
municipalities, counties or the state.
We will be working hard on these two
issues as well as a host of other issues
that will impact you and your business.

Buddy Ritter,
2012 Restaurateur of the Year
The New Mexico Restaurant Association
is pleased to recognize C.W. “Buddy”
Ritter, owner of the Double Eagle de
Mesilla, as our 2012 Restaurateur of the
Year. The fifth-generation New Mexican
was a natural choice for the honor due to
his more than 50 years of experience in
the hospitality industry and his numerous
contributions to the industry.
Ritter was born in Las Cruces and went
to high school at New Mexico Military
Institute. He majored in Banking and
Finance at Tulane University and
graduated from New Mexico State
University with a BA in business. He
also attended Michigan State’s graduate
program becoming the first Certified
Hotel Administrator in New Mexico.
Ritter also served in the US Army Military
Intelligence Group.
Buddy has had a successful career in
the hospitality industry in the southwest
having owned four hotels, eleven
restaurants and two breweries in New
Mexico and Arizona. We asked him to
speak a little about what led to his success
and his achievements in the industry.
SWR: How would you define a successful
businessperson in the hospitality industry?
BR: Most successful businessmen walk
to the beat of a different drummer. They
are dedicated to sustained hard work;
they are disciplined and calculated risk
takers. They have a merciless drive and
are proactive rather than reactive. They
disavow personal failure and believe the
target is too near if you hit it every
time. They also surround themselves with
the best key staff they can afford and
cultivate outside contacts as well. They
are committed to their principles and they
thrive on their good hunches.
SWR: How did you start out in the hospitality
business?
BR: One of my first positions after college
was working in our family business, the
Lodge at Cloudcroft. I ended up making
a lot of changes in the management
there and have been working in the
industry ever since. Even after having
other businesses in other industries, I’ve
always stayed in hospitality. I think that
successful people in hospitality have a
commitment to excellence and making
their dreams a reality.
SWR: Who were or are your biggest influences
in business?
BR: Both of my grandfathers and my
father subscribed to principles from
the Wharton School in Pennsylvania. I
learned from all of them and wanted to be
as successful as they were.
SWR: You have an impressive resume of
honors and achievements.
Can you point out any one of
them as one of your proudest
accomplishments?
I noticed a family with two small boys
that had quite a bit of food left on their
plates. I wanted to make sure everything
was alright with the meal so I asked
them if they were enjoying it. The mother
assured me that it was good and asked
if she could have a “doggie bag” to take
home the leftovers. Without skipping a
beat, one of the boys asked, “Mommy, are
we getting a dog?”
SWR: Anything else you’d like to share
with us?
BR: This industry is a great place for
young people to find a career. There is
a wide open field of opportunity and so
many jobs that suit a myriad of different
personalities. I want to encourage our
schools and scholarship is so important.
There weren’t schools of hospitality when
I started out and now there are many.
We need to continue to sustain them
because these universities are producing
the future of our industry.
BR: I am very humbled to
have received all of them
and I feel like the community
and the state have been very
good to me and my family.
I try to give back to the
community whenever I can
and I am fortunate to have
had a blessed career.
SWR: Do you have any funny
stories to share about your time
in the restaurant industry?
BR: Early on in my career,

our industry. The scholarships we give
through the generosity of our New Mexico
Restaurant Association members and the
National Restaurant Association Educational
Foundation

Scholarship
Program help pave the way for students to
attend institutions of higher learning and
gain the skills they need to grow and prosper
in the restaurant and hospitality industry. We
are very proud of the students who applied
for our scholarships and congratulate all of
the recipients. The foundation has awarded a total of
$22,500 for the 2012-2013 academic year.
Scholarships were awarded to graduating
high school seniors, as well as those entering
their sophomore, junior and senior years in
college.
These scholarships are made possible due
to the generosity of the NMRA members
listed, as well as support from the National
Restaurant
Association
Educational
Foundation. This program matches every
dollar donated in New Mexico and goes
directly to the deserving recipient. For

Restaurateurs and members of the foodservice industry
gathered once again for the industry’s premiere gala at the Hotel
Albuquerque on September 24, 2012. We were celebrating the best
of the industry at NMRA’s annual Hospitality Industry Awards.
“A State of Enchantment” was the theme for this year’s awards
and it truly was an enchanting evening. In conjunction with the
awards, we also held our annual Members Day meeting and
elected our Officers and Board of Directors for 2012-2013.
There are always an outstanding number of nominees from
which to choose and we would like to once again thank those
who submitted a nomination for the awards. This year we also
got input on your favorite nominees from our NMRA Facebook
page (facebook.com/nmrestaurants). It isn’t too early to start
thinking about who you would like to nominate for next year.
Nomination information is available in late summer.
We are very fortunate to be involved with generous industry

On August 14, 2012, ProStart® students from
Sandia High had an incredible opportunity to
participate in an edible journey through “what
is local now” in New Mexico at Farm and Table
Restaurant in conjunction with Sol Harvest. This
event is one example of how ProStart’s industrydriven curriculum provides real-life experience
and opportunities that build practical skills and a
foundation that will last a lifetime.
The weekend before the dinner, Shannon
Montgomery and Rebecca Ruiz of Sandia High
joined Farmer Ric Murphy of Sol Harvest to assist in
harvesting ingredients for the meal. The girls picked
Swiss chard, fingerling potatoes, green onions, and
kale. On the evening of the event, Rebecca returned
with Daniel Castro, another ProStart student from

HUTCHINSON NAMED AS TOP PERFORMING CEO
The New Mexico Restaurant Association would like to congratulate
Tom Hutchinson, NMRA Board Director, on being named one of NM Business
Weekly’s Top Performing CEOs in the medium company category. Hutchinson
owns La Posta in Old Mesilla and was honored at an awards luncheon in
Albuquerque in October.
BUSINESS ECONOMIC CENSUS IS COMING SOON
This fall, 390,000 businesses in accommodations and food service will receive
2012 Economic Census forms from the U.S. Census Bureau. Selected companies
will receive forms in November, but most will get them in December. Chances
are, yours is one of the businesses that will receive a 2012 Economic Census form.
Forms go to all but the very smallest businesses in this tally done once every
five years.
The forms ask for basic information like your location, employment, payroll, and
sales by type of product or service. Businesses that receive a form are required by
law (Title 13, U.S. Code) to respond. Forms are due by February 12. All businesses
have the option to file on paper or electronically. For more information or help
completing the form, see the Census Bureau's business help site at econhelp.
census.gov or call 1-800-233-6136.
There are a lot of interesting facts from the last Economic Census, available about
the hospitality industry at business.census.gov. Examples there illustrate how
Census Bureau economic statistics are used by local businesses for marketing
and planning, as well as by government agencies and researchers. Information is
published for more than a thousand industries as well as for states, counties, cities
and metropolitan areas.
Economic indicators we use every day -- like the Gross Domestic Product, monthly
retail sales, and producer price index -- all depend on the Economic Census for
continued accuracy. The statistics are also used by businesses, both large and small.
So, if yours is among the millions of businesses that received an Economic Census
form in December -- fill it out. Send it in. America needs your numbers.
CLAIM YOUR FREE LISTING ON NEW MEXICO’S
TOURISM WEBSITE
Many of our members have not yet taken advantage of the opportunity to have
their business listed for FREE on the New Mexico Department of Tourism website,
www.newmexico.org. Many cities are not even included in the drop-down menu
yet because no listings have been uploaded in those communities.
The Tourism Department is developing a coordinated, statewide approach to
tourism Marketing and Promotion in order to make New Mexico the primary
destination for its targeted travel market. If you have not yet uploaded your listing,
you should do so. It is free advertising for your business and a great way to reach
visitors coming to New Mexico.
