across our productive and beautiful
county.
We have visited farmers, producers,
cafes, pubs and restaurants to show you
where your local food originates, how you
can be assured of the quality in care and
processing and ultimately how you can
best enjoy this produce in your home, or
at outstanding eating establishments in
every corner of Lincolnshire.
There is an extensive listing which,
wherever you are in the county, will

highlights forthcoming food fairs, Farmers’
Markets and family days out for you to
enjoy in the coming months.
As autumn begins and the festive
season is not far away we hope that

champions of local sourcing and may

Mary Adams and Lizzi Harlow come from
a long line of pie makers. George Adams
was well known for his pies in Spalding
and a few miles down the road in Boston,
Dick Harlow was one of his rivals. Many
years later their names are united. Their
granddaughters Mary and Lizzi have joined
forces to create Adams and Harlow, a
company which specialises in artisan pies.
The pies are made in the original Adams
shop in Spalding, some of them following
the recipes from years gone by.
George Adams started the original
Adams butchers shop with just £10 back
in 1910. It gained an excellent reputation
and the company grew and grew. By
1963 there were twenty shops and a
pork pie factory. Soon after, it grew even
bigger developing wholesaling activities
and building an abattoir and several
production sites. All this time the company
was always family run and kept the
original shop despite the fact it was now
an enormous concern.
George Adams, who had started the
business, had a trading motto: “Personal
involvement in all aspects of the company
and a dedication to quality and service.”
Unfortunately in the early 2000s the
decision was made to sell the business
due to health problems of the then
managing director Mark Adams. The
original butcher’s shop was left and carried
on running as it always had done.
Mary and Lizzi had always been
involved in the family business, helping
out in the summer holidays to earn extra
pocket money. Mary went off to London
after finishing university to work as the
assistant grocery buyer at Fortnum and
Mason in Piccadilly, which gave her a
brilliant opportunity to learn more about
food. Lizzi was more interested in the
production side of things and carried on
working for the family business learning
everything she could about running a
food manufacturing company.
In 2010 Mary and Lizzi decided to join
together to rebuild the company and
rebrand themselves as Adams and Harlow
and they launched their new business
at the Speciality and Fine Food Fair in
London. The girls have invested a lot of
time, money and hard work in doing this

and it is certainly paying off. Of course
they have had their ups and downs like all
new businesses but they have always risen
to the challenge. The first Christmas they
were trading was one of the worst times.
Power cuts meant that the ovens could
not work and they had staffing problems
too. Mary has memories of spending
the night at the shop snatching sleep in
between putting the next batch of pies in
to bake.
They have created fourteen varieties
of pork pie all made with finest British
pork. Their original hand raised pork pie
tops the list and is followed by a glorious
selection with an assortment of flavours
to tempt any palate. My favourite so far,
although I have not tasted them all, is the
Poachers Pie. This is filled with seasoned
pork with a layer of Lincolnshire Poacher
cheese through the middle, topped with
sweet roasted baby onions. There is
the Gamekeeper Pie filled with venison,
partridge and rabbit cooked in a sweet
redcurrant sauce, then crowned with
Morello cherries soaked in cognac; and
a Pork and Stilton pie filled with finest
Lincolnshire pork and Nottinghamshire’s
Cropwell Bishop Stilton. The Ploughman’s
contains seasoned pork, Red Leicester
cheese and a helping of classic pickle
while the Red Devil Pie is a pork pie with

a hint of sweet chilli. How can you start
to choose from all these amazing taste
sensations? I have decided to work my
way through them all.
Others not mentioned yet are Chicken
and Ham, in which tender chicken breast
and ham are mixed together with a light
blend of mixed herbs. The Oak Smoked
Tomato is a classic pork pie topped with
intense oak roasted tomatoes from the
Isle of Wight. The Lincolnshire Pie is filled
with sausage meat and the Huntsman is
a jellyless pie, layered with seasoned pork
meat and tender chicken breast topped
with a classic sage and onion stuffing.
Scrumpy is a pie filled with seasoned
pork and sweet apple, and the Game
pie contains chunky seasonal game
encased in rich savoury jelly and crisp
pastry. Last but not least are the Pork
and Mustard pie and the original pork
pie with nothing added. These pies can

be bought in various different sizes. It is
best to check availability on the website
www.adamsandharlow.co.uk. You can also
follow them on Facebook and Twitter and
you can sign up to a mailing list so you
can keep up with what is going on in the
company.
They have even done pork pie wedding
cakes too! They did a five tier cake made of
pork and chicken pies. The pies started at
a huge six kilos at the bottom and worked
up to the top tier of a half-a-kilo pie. It
was 60cm high and cost £180. If you fancy
something different at your wedding do
get in touch with them.
As was the way in the past each Adams
and Harlow pork pie is individually made
and only the finest ingredients are used
including 100% British meat. Each hand
raised pork pie is made over a two-day
period with sixteen different stages to
complete before it even enters the oven.
They are made with extraordinary skill
passed down the generations.
I am sure that George Adams and Dick
Harlow would be very proud of what their
granddaughters are doing and would
congratulate them on following in their
footsteps but having the vision to adapt to
a more modern market.

Stamford based professional chef crowned
CLA Game Fair’s Game Chef of the Year
Lincolnshire-based professional
chef Phil Kent was crowned the
2015 CLA Game Fair’s Game Chef
of the Year, held in association with
The Field magazine.
The competition was
designed to find an unrecognised
professional chef and amateur
cook who both enjoy cooking
with game meat and embrace the
Great British Countryside through
their food. The judges were leading
game chef Mike Robinson and
the editor of The Field, Jonathan
Young. All finalists were asked to
cook a loin of venison, provided by
Home Farmed Venison, together
with five ingredients of their choice
and three mystery ingredients.
Jaimie Haselock, who runs
Champers & Hampers on the
CLA Game Fair’s Picnic Lawn, in
association with The Week, cooked
his venison with poached carrots,
roasted garlic and butternut
squash.
Phil Kent works at The William
Cecil hotel on the Burghley Estate
in Stamford. He cooked his venison
with sautéed potatoes, blackberry
compote and a madeira reduction.
“I have never felt so nervous,” he
commented, adding: “But I was
really pleased with the food that
I produced and wouldn’t have
changed anything on the plate. I
think the secret to cooking venison
well is to let it rest sufficiently. This
is the first time I have ever entered
a competition so I am thrilled to
have won.”
Mallows & More is Great Taste 2015 star
The world’s most coveted blind-tasted food awards, Great Taste, has just released the Great Taste stars
of 2015 and Lincolnshire based Mallows & More is amongst the producers celebrating as its Lemon
Marshmallows now proudly carry the little gold and black Great Taste logo. Judged by over 400 of the
most demanding palates belonging to food critics, chefs, cooks, restaurateurs, producers and a host of
food writers and journalists, Great Taste is widely acknowledged as the most respected food accreditation
scheme for artisan and speciality food producers.
“As a small local business I wanted some independent professional
feedback on my product and as my Lemon mallows are the most
popular I decided to enter them,” said Cassandra Jameson,
owner of Mallows & More. “I was delighted to receive my
star and one of the judge’s comments was that ‘it was
definitely worth crossing the road for’ which made me
smile. It’s been a bit of a whirlwind since the results
were announced and I will be putting more of my
flavours forward next year.”
Interwar pub listed by Historic England
Historic England has celebrated great pubs with a
new listings across the country, one of which is in
Lincolnshire.
Between 1918 and 1939 breweries across the
country rebuilt thousands of pubs, amongst which
was The Berkeley Hotel in Scunthorpe.
Built in the late 1930s, The Berkeley Hotel was
commissioned by Edith Kennedy who in a highly
unusual collaboration developed the pub in
partnership with brewery Samuel Smith, decorated
it and eventually ran it with her husband. It is a fine

and incredibly intact example of a ‘roadhouse’ pub
which was the peak of the interwar ‘improved’ pub
movement, designed with a large car park to attract
both local and visiting customers.

Producers

winning pork
Caroline Bingham went to Morton,
near Gainsborough to interview
Jane and Terry Tomlinson, owners of
Redhill Farm Free Range Pork.
I think both Jane and I shocked ourselves slightly
when we backtracked and worked out that it
was seventeen years ago when I made my first
visit to the farm. At that time they were bringing
up their young family, Jane was working to
establish a network of Farmers’ Markets across
the county, the retail shop had just opened
and Terry was putting in long days managing
their naturally reared free range pigs as well as
manning their stall at the markets.
When I visited this summer the pace was
still hectic but after a very delicious lunch Terry
and Jane took me on a tour of the farm. Their
ethos, since they moved to the 180 acres and
began to build their home and business, has
been based on simple artisan principles. Here
they farm, produce and sell their pork products
taking care at every stage to show respect to
the meat they produce.
The grain for their animals is grown on
their own and neighbouring fields, milled and
brought back to feed the herd. It was a warm
day so there was plenty of rooting by the pigs
to find the cooler earth below the surface;

farrowing sows one side of the field and their
offspring growing naturally at their own pace
on the other. Each Monday morning livestock is
taken to be slaughtered and returns to the farm
to be butchered.
“We have worked over these years to build
strong relationships with our customers,”
explained Jane. “They can be assured of the
extra care and attention that we give our
livestock. This trust is not easily won but we
know it has been consistency and outstanding
quality which has earned us our reputation and
loyal customer following.”
This year has also seen the completion of a
major investment at Redhill Farm. “It has taken
three years of planning and construction but
earlier this year we opened our new purposebuilt butchery and kitchens with bakery and
smokery as well as a spacious new Farm Shop.”
The processing of the pork can be overseen
by visitors through viewing windows on a
walkway which runs to the side of the building.
Here the same care and simple hand skills are
used by members of the Redhill Farm team to
make their range of products including dry
cured bacon, hand raised pies, sausages and
haslet.
Farmers’ Markets are still the way most
Lincolnshire customers buy their favourite
Redhill Farm product but you can also find
their free range pork on the menus of a select
number of hotels across the country, as well as
in restaurants and delis.
The new Farm Shop has its own butchery
and chilled counters as the public access to
the new production building. The country style
shop also stocks a wide range of Lincolnshire
award winning produce including drinks,
honey, cheeses, jams, chutneys and giftware
with a home and garden theme. There is also
fresh lamb from the farm’s own Zwartble and
Charollais sheep and fresh beef from their
British Blue herd.
Certainly Jane and Terry have been
recognised as amongst the very finest
producers in the UK, winning significant
national awards and accolades.
Redhill Farm products have been winners
of Great Taste Awards every year for the past
decade and earlier this year Jane was invited
to a Number 10 Downing Street reception
recognising the DEFRA UK ’50 Food Stars’ 2015.
Jane and Terry have certainly achieved so
much but Jane summed up the reason for
their enduring success: “In everything we do
we want to stand out from the crowd and
concentrate on producing the very best.”

Serves 4
VENISON SAUSAGES WITH
ROASTED GARLIC MASH

Serves 4
RACHEL GREEN
Ingredients:
2 tbsp rapeseed oil
8 venison sausages
1 onion, peeled and finely
chopped
8 juniper berries
1 tbsp plain flour
1 tbsp balsamic vinegar
200ml red wine
300ml chicken / game stock
1 tbsp redcurrant jelly
1 bay leaf
½ tbsp thyme leaves
For the roasted garlic mash:
1 head garlic
4 tbsp rapeseed oil
1kg floury potatoes, peeled and
cut into quarters
Sea salt and black pepper
Method:
Preheat the oven to 180°C/350°F/
Gas Mark 4.
First prepare the garlic for the
mash. Cut the head of garlic in half
horizontally and place both halves,
cut side up, on a sheet of tin foil.
Drizzle with half of the rapeseed
oil and season with sea salt and
black pepper. Loosely wrap the
foil over the top of the garlic to
make a parcel and twist the edges
to seal. Place on a baking sheet
and roast in the preheated oven
for 30 – 40 minutes, until the
garlic is completely soft and lightly
caramelised.
For the sausages, heat the
rapeseed oil in a casserole dish
or heavy based saucepan and
brown the sausages well on all
sides. Remove from the pan and
set aside. Add the onion and cook
over a low heat for 10 minutes
until soft and translucent. Add the
juniper berries and flour and cook
for a further 2 minutes. Blend in
the balsamic vinegar, red wine
and stock, stirring all the time, until
you have a smooth, thickened
sauce. Add the redcurrant jelly
and herbs and return the sausages
to the pan. Simmer gently for 15
minutes.
For the mash, place the
potatoes in a large pan of salted
water and bring to the boil.
Simmer until tender, drain very
well and purée through a ricer
for a very smooth texture. If you
do not have a ricer just ensure
that you mash the potatoes as
smoothly as possible. Season well
with sea salt and black pepper
and squeeze in the roasted
garlic cloves. Add the remaining
rapeseed oil and beat in well.
Serve with the sausages and
sauce.

Ingredients:
1kg of Lamb shoulder
trimmed and roughly diced
10 new potatoes, quartered
1 onion finely diced
4 celery stalks chopped
1 leek chopped
1 swede chopped
2 parsnips chopped
3 cloves of garlic, finely

2 bay leaves
1 pint of lamb or vegetable
stock
2 tbsp redcurrant jelly
2 tbsp HP Brown sauce
2 pints of local ale
2 tbsp vegetable oil
Plain flour
Method:
Preheat oven to 140 degrees.
Coat the diced lamb with
a light dusting of flour and
place into a large, heavy based
saucepan.
Seal on all sides and leave to
one side.
In the same pan add the
vegetable oil and gently sauté
the vegetables until soft.
Place the lamb back in the
pan and add the remaining
ingredients.
Place in the oven and cook
for six hours until the lamb
is beautifully tender and the
sauce has thickened.

HONEY ROAST
PARSNIP SOUP
Serves 4
STEVE BENNETT
Ingredients:
4 large parsnips, peeled and
sliced
1 onion, finely diced
100g butter
3 sprigs of thyme, chopped
3 tbsp honey
2 pints chicken stock
½ pint double cream
50g cornflour mixed to a paste
with 25ml cold water
Method:
In a large pan, gently fry the
parsnips, onions and thyme in
butter and cook for 15 minutes
until soft. Add the honey and
cook for a further 5 minutes,
until thoroughly coated. Add
the chicken stock and cook for
20 minutes on a simmering
heat. Pour all of the cooked
ingredients into a mixer and
blend until smooth. Pour back
into a pan and add the double
cream, cooking for 15 minutes.
Add the cornflour paste to the
soup, stirring gently until the
soup mixture has thickened.
Garnish – Parsnip Crisps:
1 large parsnip, finely sliced.
Deep fry in a pan of hot oil for
around 2 minutes. Drain and
season with sea salt. Leave in
a warm area (on top of oven)
until they have dried out and
crisped.
HORLICKS HOT
CHOCOLATE
Serves 4
STEVE BENNETT
Ingredients:
1 pint whole milk
1 tbsp Horlicks powder
1 tbsp cornflour
1 ½ tbsp icing sugar
2 tbsp cocoa powder
50g dark chocolate (70-80%), grated
½ tsp ground cinnamon
Pinch salt
For the topping:
100ml double cream, whipped for
topping
Marshmallows
25g grated chocolate
To serve, place the soup into
four bowls, top with parsnip
crisps and drizzle with cold
pressed rapeseed oil and
season with salt and pepper.
HONEY ROAST
PARSNIP SOUP
Method:
Bring the milk to the boil and mix in the rest of the
ingredients. Whisk continually whilst bubbling away. Once
everything has combined, place into mugs and top with
freshly whipped double cream, marshmallows and grated
chocolate.

The Old Tile Works is situated in 17 acres of rural land on the
southern banks of the River Humber and the fully restored
working factory of William Blyth dating back to 1840, using
local clay and traditional techniques to create a range of
handmade roof tiles, fittings and pottery. As part of our site
development we have built a stylish coffee shop and restaurant
with a beautiful south facing terrace overlooking the ponds and
the old town of Barton. Serving great homemade food using the
best local produce, the coffee shop and restaurant is open 7
days a week between 10.00am and 4.00pm.
The Old Tile Works is also home to an artisan village which
currently houses Les Hardwick-Grey, manufacturer of fine
furniture, and our own resident potter Gabriel Nichols and his
team, as well as our in-house sculptor John Wilson. All of the
pottery and unique garden sculpture can be purchased onsite
from The Drying Shed.

Cheese is one of the few products that spans
an entire market, from cheap and cheerful
to laughably expensive; with the Serbian
donkey cheese Pule fetching over £700 per
kilogram. Cheese is both a day-to-day food
and an artisanal treat to be savoured on cold
winter evenings. When it comes to artisanal
cheeses, Lincolnshire offers some of the best
in the country. While every cheesemaker will
have their own secret recipes and methods,
it is quite clear that in Lincolnshire we have
something of an edge when it comes to
making this coagulated milk product.
While the origins of cheese are altogether
unknown, it is generally accepted that the
Romans invaded Britain with their love of
cheese during their occupation around 2,000
years ago. Due to Lincoln’s status as a major
Roman town, it is probable that Lincolnshire’s
relationship with cheese began then. After
the fall of the Roman Empire, cheese along
with other artisanal products like mead and
beer, were entrusted to monks. Monasteries
developed the cheese making process over
several hundred years and the different
techniques in each monastery led to a
flourishing of variety amongst British cheeses.
Unfortunately, 1,100 years after the Romans
left Britain, Henry VIII closed all monasteries
during the creation of the Church of England.
And so, national cheese production suffered
massively, until more modern and industrial
methods of cheese making were developed
a few hundred years later. Though cheese
was now able to be produced on a large
scale, the artisanal variation of cheeses of the
monasteries was still lacking.
It wasn’t until the early 1970s when a
Campaign for Real Cheese began under
the guidance of Patrick Rance, who is often
regarded as the ‘Champion of Cheese’. Since
then artisanal dairies have sprung up across
the country, including Lincolnshire, with each
county having its own specialities. Cheese
competitions have become something of a
national and international phenomenon and
help to give the best cheeses the attention
they deserve.
Lincolnshire is the home of a variety
of dairies, each making their own unique
cheeses and winning numerous awards and
accolades in the process. Firstly, Cote Hill
Farm of Osgodby, Market Rasen, a family run
farm which has been making cheese for ten

POACHER CHEESE
years. Cote Hill produces a variety of cheese
including Cote Hill Blue, Cote Hill Yellow and
Cote Hill Red. These cheeses have won a
whole host of awards including a ‘Super Gold’
from the World Cheese Awards, and are sold
around the country in shops and delis whilst
also being served at several hotels. Lincolnshire
Poacher Cheese from Ulceby Farm is another
one of Lincolnshire’s best dairies, using
traditional methods along with unpasteurised
milk to produce their cheeses. They produce
four cheeses: three varieties of Lincolnshire
Poacher (smoked, unsmoked and vintage) and
also Lincolnshire Red which is reminiscent of
the classic Red Leicester cheese. Lincolnshire
Poacher has won both Supreme Champion
at the British Cheese Awards and Best British
Cheese at the World Cheese Awards in the
past.

Not only does Lincolnshire offer the more
traditional cow’s milk cheeses but also
goat’s cheese. The Goatwood Dairy run by
John & Carolyn Gunner on the edge of the
Lincolnshire Wolds produces four cheeses.
Each is named after a village near the edge
of the Wolds: Langton, Bardney, Kingthorpe
and Apley. The dairy’s cheeses are also award
winning, and they have won two Gold Awards
at the British Cheese Awards, so far.
Cheddar is another variety of cheese
made in Lincolnshire, with both Parkview
Dambuster Cheddar and Lincoln Little Imp.
Quite clearly from both of their names you can
tell the cheeses are Lincolnshire cheeses, with
Dambuster honouring Scampton’s famous 617
Squadron and Little Imp borrowing from the
well-known image of the Lincoln Imp. Both
are very strong cheddars that go well with
chutneys to balance their flavour. Lymn Bank
Farm which makes various flavoured cheeses
also makes several artisan cheeses, including
Skegness Blue, Skegness Gold and Lincolnshire
Brie, which the farm proudly presents as the
only Brie made in Lincolnshire. From all of
these cheeses its plain to see that not only are
they fantastic products but they also carry the
name of Lincolnshire wherever they go, they
are heralds in dairy form.
Around the county there are also some
fantastic specialist cheese shops, many of
which sell the county’s local cheeses. The
Cheese Society in Lincoln sells a huge variety
of cheese from a wide assortment of places,
from England to Italy and Wales to Norway.

shop to you. The Cheese Shop in Louth much
like Lincolnshire’s cheeses is award winning.
The artisan delicatessen has won the food
category in ‘The Best Small Food Shops in
Britain Awards’, a competition run by retail
consultant and broadcaster Mary Portas.
Stamford Cheese Cellar not only sells cheese
in their normal capacity but also wedding
cheese cakes, and no this doesn’t mean a
vanilla cheesecake but in fact cheeses in the
shape of cakes, complete with grapes, figs and
other fruits.
Whether for a special treat or a dinner party,
support our Lincolnshire dairies, you certainly
won’t be disappointed. Many of their websites
have a wide range of recipe ideas, or substitute
a local cheese into one of your favourite meals
for a Lincolnshire twist. This once historic
practice has become a fantastic modern
artisanal craft, of which the whole county
should be proud.

expected to attend the
Lincolnshire Food and Gift Fair in
November.

trading at the event for the first
time last year.

up the marshmallow business

following evening and early
hours making more stock to

Great Bake Off
It was cake galore at the
Lincoln Minster School Holiday
Club Bake Off. With a theme of
the Great Outdoors, and not to
include people and pets, kids
were given the opportunity to
let their creative sides run wild
in the 2015 Bake Off week.

tasted fourteen very different
options before crowning the
winner and runners-up.
This year the children were
given carte blanche on flavour
and decoration which meant
the judges sampled some

The 2015 winner was Isobel
Reetham who injected lemon
into her cake using a syringe
and decorated the two tier
cake with a waterfall in the
woods theme.
Runner-up Connor had an
imaginative volcano theme,
using chocolate fingers to
support his icing and Edward
also had a waterfall theme
with signposts to popular
Lincolnshire destinations.

Woodhall Spa’s Jubilee Park is the
hub of popular events – such as
the 40s weekend – that attract

three years after the pair took
the plunge and launched their
business in one of the best-loved
parts of the city – award-winning

“Our first priority is to give

Roasted Turkey with Fig,
Apple and Shallot Stuffing
with Fresh Sage
Serves 4

Ingredients:
5kg free-range Totally
Traditional Turkey
4 tbsp rapeseed oil
Sea salt and black pepper
Fig, Apple and Shallot
Stuffing with Fresh Sage:
75g butter
2 tbsp rapeseed oil
8 shallots, peeled and finely
chopped
3 cloves of garlic, peeled and
finely chopped
250g dried figs, chopped into
small cubes
2 small eating apples
250g fresh breadcrumbs
3 tbsp fresh sage leaves,
chopped
750g sausage meat
3 tbsp of parsley, chopped
1 large egg beaten
Sea salt and black pepper
Method:
Preheat oven to 230°C/Gas Mark
8.
Remove turkey giblets and
reserve. Rinse the turkey inside
and out and dry well.
Place the turkey in a large
roasting pan, brush the turkey
generously with rapeseed oil
and season with sea salt and
black pepper and cover with foil.
Place the prepared turkey in
the pre-heated oven and cook at
this temperature for the first 30
minutes. Then, lower the oven
temperature to 180°C/Gas Mark
4 and cook for approximately 30
minutes per kilo, basting every
hour.
To prepare the stuffing, heat
the butter and rapeseed oil until
the butter has melted. Add the
shallot and fry gently until well
softened but not browned. Stir in
the garlic and season well with
sea salt and black pepper.
Remove from the heat and place
in a bowl, leave to cool.
Peel the apples, cut into
quarters, remove the core and cut
into small cubes. Mix the figs,
apples, breadcrumbs, sage,
sausage meat and parsley with
the shallots, season well with sea
salt and black pepper using clean
hands and then mix in the beaten
egg. The mixture should be quite
firm; with wet hands, mould the
stuffing into balls the size of a golf
ball.
Place on a greased baking
sheet and bake in the pre-heated
oven for about 20 minutes, until
golden brown and cooked
through.
Alternatively you can use the
mixture to stuff an onion, per
person, and place the rest of the
mixture into an ovenproof dish to
cook.
Take one small onion per
person and peel, leaving the top
of the onion intact and the base
root in place. Peel and boil,
whole, in salted boiling water for
8-10 minutes, until just soft, drain
and cool in cold water. Drain and
cut the top off the onion, about
three quarters of the way up, so
as to make a lid. Using a sharp
knife, hollow out the onion and
stuff with the stuffing mixture,
replace the lid and brush all over
with rape seed oil. Bake for 30-35
minutes in the oven alongside
the turkey until cooked through
and slightly caramelised.
When the turkey is
approximately 35 minutes before
the end of cooking, remove the
foil, drain off any of the excess fat

Tray Baked Sticky Sausages
with Piccolo Parsnips,
Apples and Sage
Serves 4
RACHEL GREEN
Ingredients:
8 good quality pork sausages
1 tbsp rapeseed oil
2 pink lady apples
Squeeze lemon juice
300g Piccolo parsnips, washed
and trimmed
1 large red onion, peeled and cut
into wedges
3 tbsp sage

2 tbsp ketchup
1 tsp smoked paprika
Sea salt and black pepper
1 tbsp cider vinegar
1 tbsp chopped sage leaves
2 tbsp Worcestershire sauce
3 cloves garlic, peeled and
crushed
1 tbsp soft brown sugar
Method:
Fry the sausages on all sides in 1
tablespoon of rapeseed oil until
golden brown. Drain well.
In a large bowl mix together
the marinade ingredients.
Cut the apples into quarters,
remove the core and cut each
piece in half, put in a bowl,
squeeze some of the lemon
juice over the apple pieces and
reserve.
Place the browned sausages,
Piccolo and red onion wedges
in the marinade and coat well.
Place the sausage mixture in a
roasting tray and roast in the
oven for 25 minutes, then add
the apple and coat well in the
juices and roast for a further 15
minutes until cooked – keep
basting well.

Ingredients:
1.5kg potatoes, medium sized,
peeled
900g parsnips, medium sized,
peeled
2 tbsp plain flour
1 tbsp fresh thyme, chopped,
plus a few sprigs
6-8 tbsp rapeseed oil
12 shallots, peeled
200g pancetta, roughly chopped
6 whole bay leaves
Sea salt and black pepper
Method:
Preheat oven to 200°C/Gas 6.
Cut any large potatoes in
half and all of the parsnips
in half lengthways, cook the
potatoes in boiling salted
water for 8 minutes or until
par-boiled. Meanwhile, cook
the parsnips in the same way
in another pan for 4 minutes.
Drain the potatoes well then
return to the pan and cover.
Shake the pan to roughen the
edges of the potatoes.
Drain the parsnips and toss
them in the flour, chopped
thyme and seasoning.
Pour the rapeseed oil into
a large roasting tin and heat
in the oven; you need around
1cm of oil in the tin. Add
the potatoes and turn them
over in the oil using a slotted
spoon. Roast uncovered for
15-20 minutes, remove the tin
from the oven and turn the
potatoes, add the parsnips
and shallots and turn them in
the oil too. Roast for a further
35-40 minutes then turn all of
the vegetables again, add the
pancetta.
Increase the heat to 220°C/
Gas 7 for a further 15-20
minutes, adding the thyme
sprigs and bay leaves for the
final 10 minutes. Sprinkle
with a little sea salt and black
pepper and serve immediately.
Cider Glazed Roasted
Fenland Celery with Crispy
Parmesan Topping

celery cooks and softens. Serve
as a delicious vegetarian supper
with baked potatoes or as an
accompaniment to roast chicken,
game or fish.
Ingredients:
1 head Fenland celery, washed,
separated into stalks and cut into
approx. 10cm lengths
400ml medium dry cider
2 tbsp cider vinegar
For the Parmesan topping:
25g parmesan cheese, grated
25g Panko breadcrumbs
2 tbsp parsley, finely chopped
1 tbsp olive oil
Method:
Pre heat oven 200°C/ 180°C fan/
Gas 7. Grease an ovenproof
casserole generously with butter,
lay the Fenland celery in the dish,
pour over the cider and vinegar,
and cover with greaseproof paper

Place in the oven for 45
minutes, remove the foil and
greaseproof paper. Mix together
the parmesan, breadcrumbs,
parsley and olive oil, sprinkle over
the Fenland celery and cook for
another 15-20 minutes until the
topping is golden.
Cook’s tip: Fenland celery is a
heritage variety of celery grown
in the Cambridgeshire Fens. In
2013, Fenland celery was awarded
Protected Geographical Indication
(PGI) status and joined the ranks
of Parma ham, Champagne
and Melton Mowbray Pork Pies.
Fenland celery is only grown in
small pockets of Cambridgeshire,
Suffolk and Norfolk using
traditional farming methods. The
deep, peaty soils in the Fens work
towards giving Fenland celery
its nutty-sweet flavour and paler
colour. Fenland celery is available
from October to December and
can be found in Waitrose, Ocado,
Wholefoods and Marks & Spencer.

combines Brussels sprouts with
sweet beetroot, creamy blue
cheese and crunchy walnuts

Ingredients:
680g Brussels sprouts, trimmed
and halved
2 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
60ml water
¼ tsp salt

250g pack cooked beetroot,
diced
25g crumbled blue cheese
25g walnuts, chopped
Method:
In a large frying pan, heat the
oil and butter to medium heat.
Add the Brussels sprouts and
allow them to cook cut-side
down for 4-5 minutes, or until
golden brown.
Add the garlic and
the water and cook for 3
minutes, uncovered, stirring
occasionally. Put a lid on the
pan and cook for 5-8 minutes,
or until all of the liquid is
absorbed and Brussels sprouts
are cooked to your liking.
Add the honey and
chopped beetroot and heat
for 1-2 minutes until the
beetroot is hot.
Transfer the sautéed
Brussels sprouts and beetroot
to a serving dish and add
the blue cheese crumbles
and chopped walnuts. Toss
everything together and serve.
Steamed Walnut & Date Sticky
Toffee Pudding
Create Individual puddings or one
large pudding.
ADAM DOWSETT
For the sauce:
250g soft dark brown sugar,
250ml double cream,
50g butter,
Pinch salt
Method:
Place sugar into a heavy bottomed
saucepan and slowly heat to melt
and dissolve the sugar, then allow
to simmer for 5 minutes. Add the
cream and bring back to a simmer
for a further five minutes then
remove from the heat. Add the
softened butter and stir in with a
wooden spoon until completely
incorporated. Put sauce to one side
to allow to cool.
For the pudding mixture:
250g chopped dates
2 tbsp black treacle
1 level tbsp cinnamon
1 level tsp nutmeg
Fresh orange juice to cover
1 tsp bicarbonate of soda
650g butter
650g soft dark brown sugar
12 free range large eggs
650g good quality self-raising flour
1 tablespoon baking powder
Walnut pieces
Method:
Place the dates, treacle, cinnamon
and nutmeg in a deep saucepan
and cover the contents with the
orange juice.
Gently heat the mixture until a
thick paste is formed, then carefully
add the bicarbonate of soda and
mix together. Set to one side
to cool. Using a wooden spoon
and some elbow grease, mix the
softened butter with the sugar and
whip until light and fluffy.
Gradually add the eggs to the
mix, a little at a time to avoid
curdling the mixture. Add the
cooled date mixture. Gradually
add the sieved flour and baking
powder.
In the bottom of the individual
pudding moulds or one large
tin, place some of the walnut
pieces – quantity depends on your
preference. Drizzle a tablespoon of
the cooled sauce over the walnuts.
Now place some of the sponge
mix on top of the sauce around
3-4cm deep. Cover the moulds
with greaseproof paper and foil
and place in a tray.
For best results, steam for two
hours, or place in a bains-marie in
the oven for an hour at 160°C. Test
the puddings using a skewer – the
skewer should come out clean
when cooked.
To serve:
Simply tip the mould upside
down and you should be left with
a beautifully formed pudding
topped with walnut pieces with
the sauce soaked into the sponge
and cascading down the sides. Put
the remainder of the sauce into a
serving jug and let your guests go
crazy. To finish the puddings off,
serve with a scoop of Dennett’s of
Spilsby homemade Lincolnshire
caramel ice cream.

Caroline Bingham went to meet Lincoln
Sausage Festival organiser Mark Brewer,
as he finalised plans for this year’s event.

Now in its thirteenth year, the Lincoln
Sausage Festival not only celebrates
this essential of the classic Full English
Breakfast but is also a popular date in
the diary for many locals and visitors to
Lincoln. Virgin Trains East Coast will be
laying on an extra service on Saturday 24th
October, leaving King’s Cross at 9.10am, to
accommodate the additional day visitor
demand.
The festival is organised by Mark Brewer
of the Rotary Club of Lincoln Colonia,
in association with Select Lincolnshire,
Lincolnshire County Council and Lincoln
BIG.
Held against the backdrop of the city’s
majestic uphill area and Cathedral, the
festival is held in the grounds of Lincoln
Castle and on Castle Hill. Thousands of
visitors come along to enjoy cooking
demonstrations (this year in the main
marquee by local celebrity chef Rachel
Green), the many food stalls, children’s
entertainment and live music.

the local community,” explained Mark,
“and its popularity seems to grow each
year. For the first time we are charging a
nominal entry fee of £1 for adults to help
cover the cost of stewarding services. This

to the Castle exhibitions and Wall Walk
which people may additionally
want to visit.

bought or consumed at the festival, with
visitors finding it too hard to resist the
delicious aromas and variety of flavours of
bangers on offer.

THE AUTHENTIC LINCOLNSHIRE
SAUSAGE
If there is one product known across the
UK, synonymous with our great county,
it is the Lincolnshire Sausage. How
frustrating that the campaign to gain EU
geographical protected status for our
great banger, even after three attempts,
has not been successful.

winner of each category and ultimately,
Butcher of the Year.
As tastes have become more exotic
and sophisticated, butchers have also
expanded their sausage range to include
continental influences, locally made
cheeses, fruit, vegetables and spices.
One of the enjoyments of local food fairs,
farmers’ markets and the annual Sausage
Festival is grazing the stalls to try as many
variations of this versatile treat as possible.

taste of a Lincolnshire Sausage as part
of a traditional full English breakfast. The

Christmas jumper
cookies
The cookie recipe I’m sharing is brilliantly easy to make and tastes
divinely Christmassy, with its warming spices of cinnamon and ginger.
You can pick up jumper shaped cookie cutters in most good cook
shops and I love the idea that you can play granny at her own game
and give her a Christmas jumperin return that she can really enjoy!
DOMINIC FRANKS
For the cookies:
180g golden caster sugar
150g butter
50g ground almonds
350g plain flour
1 large egg
1/2 tsp baking powder
1 tsp ground cinnamon
1 tsp ground ginger
For the icing:
700g icing sugar
2 egg whites
1 tsp lemon juice
Method:
To make the cookies, take a large bowl, cream the
butter and sugar till fluffy and then add the rest of
the ingredients, stirring until it comes together to
form a dough – pop this into cling-film and into
the fridge for at least 30 minutes.
Roll out and cut into shapes – bake on a
parchment-lined baking sheet for 15 mins on
170C until just beginning to turn golden. Set aside
to cool completely.

To make the icing, take a large bowl and beat
the egg whites and lemon juice with an electric
beater until the egg whites are soft peaks. Add
half the icing sugar and beat again for about 4
minutes, then add the remaining icing sugar and
beat until stiff peaks are formed. Then split into
two and add green and red food colouring and
stir until well combined. A small piping bag or a
piping syringe is a great tip here.

launched our eighteenth annual Food & Drink Awards, and this year

Our Chef of the Year category has seen
chefs from around the county supply a
three-course menu. On 5th October we will
see the five finalists create their menu for our
panel of judges in the historic College Hall at
RAF College Cranwell.
We have been receiving exciting
submissions for our New Business and Most
Innovative Product of the Year categories
and our panel of testers and tasters are
on standby for the products they need to
sample.
The Accommodation and Farm Shop
category have received many votes. It has
been great to see where our customers
are staying locally and buying their local
produce.
The Wedding Venue of the Year category
is the last of our new categories. Lincolnshire
Life has long promoted county weddings.
With a bi-annual magazine and annual
Wedding Fair, we know some of the best
venues in the county, but it has been great
to see feedback from the brides and their
guests about their own experiences.
We will still be awarding our four original
awards: Best Pub Food, Restaurant and Tea/
Coffee Shop are firm favourites amongst
our readers, and we are always happy to see
new places popping up around the county.
Our final award is Young Chef of the Year.
If it wasn’t for the new talent coming up
through our colleges the hospitality industry
would not be so vibrant. We have worked
in conjunction with Lincoln College to find
young talent for many years, and this year
we are excited to announce we will also be
judging talent from Boston, Grantham and
Grimsby Colleges, which will see a great
final.
Our awards with be nothing though
without a celebration Awards Evening. Our
2015 awards will be held at Oaklands Hall
Hotel, Laceby near Grimsby on Thursday
12th November.

Award winning Cote Hill cheeses are made on our farm
using the unpasteurised milk produced by our herd of

On the banks of the River Trent, the Boathouse is about to
undergo a long anticipated refurbishment and will be closing
its doors for 5 days in October, reopening on Saturday 17th
October. There will be some new dishes, freshly baked woodfired bread, stone baked pizza, 12 hour braised lamb shanks,
beef brisket and lots more using local produce and from local
suppliers. A selection of cask ales, continental beers and fine
wines are available. Plenty of events throughout the year
including “Sunday Sessions” which brings live music.
This family owned cafe was established in 1979 and sits
opposite the castle grounds in Newark. Enjoy a friendly
welcome in a homely atmosphere. Homemade food from a
daily changing menu of specials as well as regular signature
