Rachel YANKEY 25 mins Power e t t e l e m O Easy “ High National Team: England Club Team: Arsenal Ladies Recipe: Power Omelette ” It gives me the energy I need to last the whole game. Ingredients: 300g potatoes, boiled, cooled and sliced 1 tablespoon olive oil 5 mushrooms, sliced 100g ham 1 onion, chopped 4 eggs Preparation: Fry cooked potatoes in ½ tablespoon of olive oil until lightly browned. Set aside. In the same pan lightly fry the mushrooms, ham and onions and then add the potatoes. For breakfast before a game I like: Add beaten eggs and stir gently once with a wooden spoon. Weetabix with granola, scrambled eggs with salmon on brown bread and a glass of apple juice. Shake the pan a little as you cook over a low heat. With a fork, lift up cooked edges, tilt pan to let liquid run under but do not stir, lift edge to see if browned. For lunch I like: Chicken with rice and tomato sauce. Fold and tip onto a serving plate and serve with salad or gherkins. My favourite dinner after a game? Chicken or steak, potatoes and vegetables. For a fresh drink I like: Orange juice. Food I really love: Chicken, lamb chops, salad, nuts. Favourite dish when I was a child? Mash potatoes, fish fingers and peas.
