In a medium ovenproof sauté pan over medium-high heat, add 1 teaspoon olive oil. Add chicken and cook until browned on the under side. Turn chicken and place pan in the oven to cook until juices run clear (about 12 minutes). Remove from oven and set aside. 5. Warm Goat Cheese Pom-Poms: In a medium sauté pan over medium-high heat, add 2 teaspoons olive oil. When hot, add the goat cheese balls and cook for 20 seconds until just warmed (not melting). Carefully remove to a plate using a small spoon. To Serve: Toss the greens into the dressing and serve alongside chicken with goat cheese pom-poms on top. Drizzle any leftover dressing over the chicken if you dare. H Pro Tip: 3. Make the Dressing: Separate the jalapeno from the cilantro. Set cilantro aside. Whisk together with a fork. Salt and pepper to taste. Set aside. Sweet and heat are great flavor neighbors!
