LAMINGTONS LAMINGTONS USING UTILITY & LAM-KOTE MIX Ingredients Lamingtons Cereform Utility Cake Mix Egg Strawberry Jam, to spread Whipped Cream, to spread Desiccated Coconut, to cover Lam-Kote Lam-Kote Mix Water Method Weight(kg) 1.000kg 0.400L 0.350L 1.000kg 2.500L Lamingtons 1 Add water, eggs and cake mix to bowl. 2 Blend using whisk for 30 seconds. Scrape down. 3 Whisk on medium speed for 5 minutes. 4 Spread mix into lined baking tray. Bake until golden. 5 When cool, cut cake sheet in half and spread with jam and cream. 6C ut filled cake sheet into squares. Dip squares into Lam-Kote mixture, draining any excess. 7 Roll lamingtons in coconut to cover. Lam-Kote 1 Add Lam-Kote to water which has just come off the boil. 2 Using a whisk, mix on low speed for 1 minute, or until lumps have dispersed and mixture is smooth. 3 Allow mixture to cool, but not set.
