DAN KELLY’S
DROGHEDA CIDER
The McNeece Family have been growing apples here in Drogheda since
1962, and for long before that in Co.Armagh.
In addition to their “Stameen Farm” apple juice, they are pleased to
bring to the market their new cider called “Dan Kelly’s”, named after
their great grandfather.
Dan Kelly worked for the Great Northern Railway and was the
engineer on “The Hercules” and the original “Enterprise”. He spent his
working life on the Dublin-Belfast route, passing regularly through
their orchard. The farm was bought from The Cairnes Family, owners
of Wm Cairnes & Son Brewery! Colonel Cairnes was a director of the
Great Nothern Railway also.
They have crafted a completely natural cider with no artificial additives.
They use only hand picked apples and natural wild yeasts to ferment
their lightly carbonated slightly dry cider.
We hope you enjoy this natural, farm produced drink as much as we do!

DROGHEDA CIDER
Dan Kelly’s cider is made from hand picked apples. Most commercial
ciders are made from machine-harvested apples which would have a
much higher degree of bruising and would affect flavor.
Dan Kelly’s blend cider apples with Bramley and desert fruit to give
the cider a moderately dry taste with light carbonation to allow the fruit
flavor to come through. Not as sweet as some on the market, but very
refreshing and natural.
They don’t use sulphites and cultured yeasts. They don’t add acid,
artificial colours, sweeteners or anything else. Dan Kelly’s press the
apples and let wild yeasts do their thing. Then they add some juice before
pasteurising to allow the flavour develop.They are one of only a few cider
producers in Ireland who grow their own fruit.

Slane Castle Whiskey
Slane Castle to build Distillery
The Conyngham family are delighted to announce that we will be
building their very own craft distillery onsite at Slane Castle. This
project comes after they had to withdraw their award winning
whiskey blend from the market after losing their whiskey supply
in early 2012.
Not ones to take this blow lying down, Alex and his father, Henry
Conyngham, embarked on a mission to create their own Irish
whiskey distillery. A planning application for the distillery has
been lodged and they expect to start construction soon. The Slane
Castle distillery will focus on producing top grade Triple Distilled
Single Malt and Pure Pot Still whiskeys from the estate’s own
barley which is grown on the fields surrounding the distillery.

Nick Woollard is Executive Head Chef at Wm Cairnes & Son Gastropub. Nick
a native of Guernsey now living in Louth, brings a wealth of experience to Wm
Cairnes & Son Gastropub.
Nick joined us from Eamon O’Reilly’s Box Tree & Wild Boar in Stepaside
where he attained a Michelin Bib Gourmand.Nick was previously Executive Chef
at Ghan House, La Stampa Dublin and prior to this held Head Chef positions in
Pacific Restaurant Dublin, Peacock Alley Dublin(One Michelin Star), Maison
Novelli Restaurant London (Three AA Rosettes)and Les Saveurs de Jean
Christophe Novelli (One Michelin Star, Four AA Rosettes).

HISTORY
Wm Cairnes & Son Gastropub is housed in what was originally Cairnes’ Brewery, established by William Cairnes in 1825. William was related by marriage to
the famed Castlebellingham brewery family.
This brewery was formally operated by the Tandy Family, ancestors of the
“Napper Tandy”, but had closed down around 1800. William reopened the
brewing business and lived in the brewery house.
The brewery gave employment to almost 200 workers for over 150 years and
was famous for its ales and stout. The supply of brewing water was obtained from
a 400ft deep artesian well underneath the current bar. From 1951 the brewery
exported bottled stout to America. The firm also acquired the important wine and
spirit business of Preston Bros.
The Brewery closed in 1960, bringing to an end the brewing industry in Drogheda. Part of the brewery was then used to trade in grain, seed and fertiliser under
the name of Charles Dougherty & Co.The brewery buildings then changed hands
with the opening of Scotch Hall in 2005 and remained unoccupied until they were
reopened as Wm Cairnes & Son Gastropub in 2012.
