Too bad mother nature didn’t cooperate, but even with all that we learned there are still a few little details we can improve on for next time. Thanks to all members who braved the elements and did their fair share. Thanks to all the sponsors who even made it possible, and a special thanks to Toby’s BBQ and PhotoRodz for sticking with us to the end! Wish we could all have made a little more money, but twas not meant to be. Our meeting for July will be at Darcy’s on the 20th. Lunch at 2 pm and meeting at 3 pm. We will discuss what went on at the car show and go over our expenses and proceeds. We will also begin preliminary discussions for the AutoNation Chevrolet show coming up in September. Fill pot with cold water; season generously with salt. Bring to boil; reduce heat and simmer until potatoes are tender when pierced with knife, about 15 minutes. Drain and set aside to cool. Dressing: While potatoes are cooling, combine oil, vinegar, salt and sugar in small bowl. Once cooked potatoes are slightly cooled, place them in large bowl. Gently toss with dressing and season with pepper. Fold in celery, scallions, eggs and bacon. Sprinkle with parsley. Serve slightly warm or at room temperature.
