TOUR DE FORKS COMMITTEE - Center for the Arts Crested Butte

Ninth Annual Tour de Forks —
Our Signature Fundraising Event!
WELCOME TO THE NINTH ANNUAL TOUR DE FORKS, a fundraiser for the Center
for the Arts in Crested Butte, Colorado.
The Center for the Arts, Crested Butte’s home for arts and culture, offers engaging
opportunities and educational experiences to enrich and expand the life of our
community. We provide an affordable venue for community produced events such as
the Crested Butte Music Festival and the Crested Butte Mountain Theatre. We present
nationally touring artists in our Winter Season, Summer Season and Alpenglow
concerts. Our Piper Gallery offers local and regional artists a venue to share their
artistic creations. Our visual arts classes give adults and children an opportunity to
learn and create. The Center’s board and staff lead efforts to build a cultural identity
for the Upper East River Valley. We are where the community comes together.
The Center must raise close to 60% of its operating budget each year through
fundraising events and contributions. The Tour de Forks is our signature fundraising
series. With 20 delectable events offered in partnership with many local and
national chefs, hosts and volunteers, we think you’ll enjoy relaxing with friends,
expanding your culinary expertise and learn more about our spectacular valley.
With each reservation you are supporting all that we offer here at the Center.
Please join us for another fabulous summer of Tour de Forks events!
Thanks to all of our wonderful sponsors for making these events possible.
Special thanks to the chefs who makes these events a huge success! Our chefs
travel near and far and take time away from their busy restaurants to support the
Center! Bon Appetit!

ENJOY A SUMMER EVENING STROLL, greeting old friends and experiencing the
culinary excellence of some of the best chefs in Crested Butte! This “progressive
dinner” will start with a trip to the Crested Butte Mountain Heritage Museum for a
history lesson from the always-entertaining Museum Director, Glo Cunningham.
She will invite guests to tour the museum, sip on a glass of wine and enjoy some
scrumptious appetizers while listening to stories of the local personalities who have
made Crested Butte such a special and unique place to live.
Guests will then take a short walk to Marchitelli’s Gourmet Noodle for a
mouthwatering roasted tomato salad and a glass of Maso Canali pinot grigio. Mike
may well be Crested Butte’s best-known Italian and as a Former Chefs on the Edge
competitor, he has consistently garnered local dining awards for his menu of his
family’s classic Italian recipes.
The culinary journey proceeds to the ever-popular Soupcon Bistro. Under the
care of Chef and Owner Jason Vernon, guests will enjoy a private seating in this
rustic and intimate restaurant while experiencing first-class customer service. Seared
Black Angus filet mignon will be prepared to perfection with white truffle mashed
potatoes and a ragout of wilted baby spinach to accompany this spectacular meal.
The evening will commence under the care and expertise of Vic and Candy
Shepard, owners of Le Bosquet for the past 33 years. The relaxed atmosphere of
this contemporary French restaurant will be a great way to end the evening with a
rich and decadent dessert. A memorable evening of fine dining in Crested Butte —
don’t miss this great evening to kick off the 2010 summer TDF season!

TOUR GUIDES: Kennedy and Martin Garcia
CHEF: Mike Busse, Garlic Mike’s, Gunnison and Montrose
A MOUNTAIN ESCAPE, Kennedy and Martin Garcia’s Anthracite house was selected
as a “Dream Home” by HGTV in 2008. Breathtaking views atop Anthracite Road
complement a secluded aspen setting. This house, both dramatic and cozy, is
clearly designed to entertain. Reclaimed wood and moss rock on the exterior make
the home look like a true Colorado residence. Large reclaimed timbers are used for
the trusses in the living room and a stone fireplace blend the living and dining
room spaces. Guests will enjoy exploring the creative design features that truly
make this house one of a kind; antique cabinets, a historic door used as a coffee

IMMERSE YOURSELF IN THIS incredible event of English delights and traditions.
Talisker House from the Isle of Skye, was christened this special name after just a
‘wee bit of whiskey was poured into the foundation by the owners, David and Beth,
for good luck! Thus begins the amazing thought given in designing and building
this spectacular home. Upon entering start your visit by witnessing the massive
entry stonework, which is seen throughout the house in the fireplaces and the halfbath. You also won’t want to miss seeing the 5 bedrooms (two of which are
masters), the media room, 5-hole putting green, and the continuous water current
pool. If it is a clear night, look from the majestic windows and deck, and feel as
though you are right in the Milky Way.
Chef Elizabeth Bond attended schools in London, and the Royal College of
Music, thus the name of her company, Diva Catering. She has sung in operas and
concerts in Europe and American and performed in the Phantom of the Opera.
Although she has directed the Crested Butte Mountain Theatre for the past three
years, she still performs occasionally as a singer, so be prepared for her to burst
into song from time to time during the evening!
Guests will be welcomed with a refreshing glass of Pims, the traditional British
summer cocktail served at Ascot, Wimbledon, Henley, Glyndebourne and all the
other places to be seen during the British Summer Season. The dinner buffet will
include a variety of toothsome summer favourites, and an enticing array on the
dessert trolley will complete the feast!

TOUR GUIDES: Hal and Rosalind Cook
CHEF: Lon Lane, Inspired Occasions, Kansas City
VIEWS, VIEWS, VIEWS — 360 degrees of fantastic views! — That is what has been
achieved in this spectular home designed by Rosalind and Hal Cook. Second to the
views, the Cooks knew they wanted tall arched timbers, which reminded them of a
graceful cathedral. The theme of arches is carried throughout the house in arched
doors and an arched fireplace. The home has a Spanish Colonial feel, with its warm
and inviting soft-colored walls and cherry floors. The open floor plan incorporates
magnificent views of Grant Lake, Paradise Divide and Whetstone Mountain. One of
the focal points of the living room is the massive two-story double-sided stone
fireplace, something that has always been a dream of the well-known artist, Rosalind.
Guests will be in awe of Hal’s gourmet kitchen that lives large with vaulted
ceilings. The Cooks designed an artistic, kiva- stucco flue that goes twenty-three
feet to the ceiling, intersecting with a beam along the way, making it a part of the
architecture of the house with its Santa Fe look and feel.
Art is everywhere you look — it is an integral part of the house and it
compliments every detail throughout this incredible home. Guests will be
welcomed into the home by one of Rosalind’s bronze art pieces. Roz, a renowned
sculptor with notable works across the country, created the graceful sculpture
downtown in front of Lil’s Sushi Bar and Grill.
Chef Lon Lane hails from Kansas City where he began his passion for food
preparation and entertainment by co-funding “Inspired Occasions” with his wife
Marcia. Every year from 2003 through 2010, Lon has won multiple awards
through various Kansas City publications,
Alison White
one being the “Star Award 2007” by the
International Caterers’ Association. As a
current member of the ICA Educational
Foundation, Lon presents culinary,
marketing, and creative seminars at
Catersource, CaterArts and The
International Caterer’s Association’s
Regional Education Day events.
Guests should definitely come hungry!
Lon returns to Crested Butte this time to
dazzle the guests with his creative and
innovative style of cooking foods from
around the world as you travel from
station to station throughout this
beautiful home.

CHEF: Lara Ritchie, Nothing to It! Culinary Center — Reno, NV
BARBARA AND DAVID’S STUNNING and spacious home breathes new life into
reclaimed timbers. Their home is nestled in the Aspens overlooking the Club at
Crested Butte’s Golf Course, Grant Lake, Crested Butte, Paradise Divide and
Whetstone. Under the distressed exterior lies a structure built using as many
recycled materials as possible. Considering the home was built years before the
current “green” movement, you could say that this old-fashioned house was ahead
of its time! This elegant and comfortable home welcomes guests using its gorgeous
structural timber beams instead of walls to divide the rambling floor space.
We are pleased to welcome Chef Lara Ritchie to the valley and become acquainted
with her cooking expertise. Lara’s earliest childhood memories are the food and
family connections that shaped the foundation of her culinary career. She received
her formal culinary training at the New England Culinary Institute in Essex, Vermont.
She honed her culinary skills in San Francisco’s La Folie, Seattle’s Flying Fish, and the
Four Seasons in Seattle and Atlanta where Zagat’s Guide voted her brunch #1 in
Atlanta. Lara’s food styling has appeared in magazines such as Art Culinary and she
has had the honor of cooking at the James Beard House in New York City.
Lara is the culinary director for Nothing to It! Culinary Center in Reno and has
taught over 10,000 home chefs the secrets of cooking like a pro! She is a member
of Les Dames d’Escoffier and the International Association of Culinary Professionals.
She looks forward to cooking with the bounty of the Colorado Western Slope.
Keeping the “green” theme of the Dehaemer’s home, Lara’s menu will focus on
local and sustainable food.

The 5-Star resort environment of Phoenix and Scottsdale, AZ with training in
classical French cuisine ignited Chef Jonathan’s interest in gastronomic pursuits. Jon’s
culinary resume expanded to the “On Fire” innovative and creative southwestern
culinary scene of Santé Fe, NM, where he earned high accolades and a gold medal
in an American Culinary Federation competition. His journey then brought him to
Crested Butte Mountain Resort as Executive Chef with two local Iron Chef wins and
2005 “Chef of the Year” finalist in the ACF Colorado Chef’s Association competition.
Jon is currently the general manager of Sodexo, directing all restaurants and
catering operations at Western State College in Gunnison. Guests will want to
discuss with him the new facilities-Rare Air Café, Mad Jack’s Grill, and the
ballroom- that Western’s Student Center has made available for the community.
Chef Jon Coady will delight you with his poetic license in creating a showcase
evening of dining using Colorado Wild Game and Gunnison Valley Farmer’s market
produce and dairy.

TOUR GUIDES: Pam and Bobby Nichols
CHEF: Chef Daniel Rosa, The Crested Butte Mountain Resort, Mt. Crested Butte
THE BEST OF THE SOUTH COMES to Crested Butte for this event in the spectacular
home of Bobby and Pam Nichols known as the “Bear Tree”. By using 100-year-old
exterior timbers from a barn in Montana, the home appears to have been on its
35-acre property since the mining boom days in Crested Butte, and yet, it was
completed in 2006. Situated in the midst of both Aspen woods and evergreen
forests, the Nichols’ beautiful residence comes complete with both live, wild bears,
and subtle touches of bear décor (be sure to look at the etched glass in the front
door). The soaring two-story great room looks directly at Mt. Crested Butte. Located
at an elevation of 9,500 feet, it also features breathtaking views up and down
valley and the surrounding mountain ranges. Guests will enjoy wandering through
this mountain home with its custom finishes, such as Aspen iron stairs and loft rails,
leather wrapped stairway, themed bedrooms, and copper and pressed-tin ceilings.
Executive Chef Daniel Rosa owes his love of cooking to his mother’s mastery of
transforming exquisitely fresh vegetables, fruits and seafood into incredible feasts
for family and friends. Living in the tiny haven of Ponce, Puerto Rico, he learned to
take advantage of rich natural foods. After his family moved to New York City in
high school Daniel began working in Alfredo’s, an Italian restaurant. Seeing how
great chefs brought joy to their guests, Daniel Rosa decided to “cook himself out of
the ghetto” and enrolled in New York Restaurant School when he was eighteen
years old. Following graduation, he took an internship with Chef John Hill at the
Wigwam, a Five-Star, Five-Diamond Resort in Litchfield Park, Arizona.
In 2005, Chef Daniel accepted a
position as the Executive Chef position at
Nathan Bilow
9545 Restaurant and bar located at the
Inn at Lost Creek. Wanting to be near his
family, he moved back to Philadelphia
and worked under Chef George Perrier,
assisting with the opening of Table 31 in
the heart of downtown. After a year in
Philadelphia, the talented young chef
decided he missed the beautiful
mountains of Colorado and he moved to
live his dream and put his talents and
personal style to work as a chef for
Crested Butte Mountain Resort. Sign up
and take part in an evening of dining on
fabulous food in an elegant home with a
warm and comfortable feeling.
