“This is my hobby,” Greg
Uithoven said recently while
standing in the office of the
lambing barn on his farm just west
of Magnolia. “It truly is a hobby for
me although it’s gotten bigger than
just a hobby.”
Uithoven has been raising
sheep for 30 years since he got
out of high school and now two
of his sons are also involved in the
operation. He says the sheep are
his hobby because he does have a
full-time job off the farm as one of
four owners of the Luverne Farm
Store. Although an owner, he’s also
the swine manager — a position
that works out well as he’s able to
check the ewes and lambs during
the lambing season while he’s out
in the country checking the area
hog barns.
This year’s lamb crop is the first
to use the new lambing barn built
by Uithoven and his sons, Adam
and Aric, Aric’s buddy Randy,
daughters Amanda and Annie

it. Uithoven said he’d need more
help if they were going to build a
new barn, and asked his son to get
involved. His son agreed.
“I told them if that is what we
were going to do, then we would
have to go to at least 300 ewes if not
400,” he said. “We then went pretty
quickly down to Norfolk, Neb. and
bought 110 ewes down there that
were open, and we bought another
50 ewes from a young fellow by
Luverne.”
The Uithoven’s sheep are
predominantly a foundation of
purebred Dorsets; and they breed
them half-Finn and half-Targhee,
thus creating a kind of homemade
Polypay.
Uithoven said that all the ewes
they bought in Nebraska were all
Bork. He said they started in June
and finished up the beginning of
January. Both of Uithoven’s sons
are carpenters for Cleveringa
Construction in Luverne.
“We were cleaning stuff up on
Friday night so we could shear
on Saturday morning, Jan. 3,”
Uithoven said. “Then we started
getting babies pretty soon after
that. We start lambing about the
first of January and finish up
around March 15. There were 155
ewes in the first group and 145 in
the second group.”
Rather than build new, Uithoven
had planned to convert an older,
five-door shed into a lambing
barn. At the time, he had 160 ewes
and only one son helping with the
operation. That changed after a
trip near Woodstock to the Gary
and Gail Boeve farm. His son who
wasn’t part of the operation, fell
in love with the Boeve barn and
when they returned home, said
he wanted to build one just like

purebred Polypay. To make up
their herd they have bought about
220 purebred Polypays and then
they have their own self-mades
and about 50 purebred Dorsets
that they either breed purebred
Dorset or half-Finn, half-Targhee.
“All the kids were in 4-H so we
kept the purebred Dorset line
going for the fair,” he said. “Now
our grandkids are starting to get
in 4-H so we are still breeding a
purebred line of Dorsets also so
we keep that line running. But it’s
getting less.”
Uithoven breeds 50 ewes
purebred Polypay and keeps the
replacement daughters from them.
All the other ewes, outside of the
purebred Dorsets, are bred Suffolk
and are terminal market lambs.
“So anything that is black
or speckled will never be a
replacement animal,” he said. “A

few might go to the fair as speckles,
but outside of that, they are bred
terminal for meat.”
The Uithoven operation is
different from other commercial
market lamb operations because
they raise “natural” lambs. This
basically means they aren’t
given any growth promotants or
antibiotics.
“We are a member of a
cooperative called Dakota Lamb
Co-op based in Hettinger, N.D.,” he
said. “We got into the coop when it
was first built about five years ago.
This is something we feel is very
much niche marketing.”
The coop struggled at first, he
said, but is now paying off. To his
50 shares he added another 200
the end of last year when it became
feasible to make the shares cash
flow. According to Uithoven, one
share is basically equivalent to one
lamb delivered.
“It’s been good,” Uithoven said.
“I’m very happy with the fact that
our lambs have been bringing

treat her. Her lambs then need to
be ear-notched whether they are
treated or not because it will pass
through the milk.”

dependent upon plentiful bedding,

of animals under one roof.
Although the lambs are ‘natural’
they don’t need to be hauled to
North Dakota to be slaughtered. All

TV. I can watch TV out here and
stay busy. I can go out and work in
the barn.”

he doesn’t want to make it too

In downtown Brookings tucked into a
storefront you’ll find a coffee house with inspired
lighting, room to spread out and the smell of fresh
coffee overlaying the whole place. You will have
entered Cottonwood Coffee at 509 Main Ave.,
opened in 2006 by Lynn Askew, Jacob Limmer
and Limmer’s partner, Sarah Trone.
Since then, the Cottonwood has been bucking
coffee house conventions by drawing a more
varied clientele.
“When we started the project, it felt a little
cliché, but we said we wanted to appeal to a wide
spectrum of people,” Jacob said.
But first and foremost, as Jacob will tell you and
their website proclaims (www.cottonwoodcoffee.
com), Cottonwood Coffee is a coffeehouse serving
high-quality coffee drinks prepared by trained
baristas. The coffee beans come from around the
world and are roasted by PT’s Coffee in Kansas
City. The roasted beans are then immediately
shipped to Cottonwood Coffee where, according
to their website, “we use the most stringent
methods and top of the line equipment to brew
the finest coffees in the region.”
The coffeehouse also serves soups, sandwiches
and salads. Each morning, freshly-baked pastries
and granola are pulled from the oven. The bestsellers are lattes and mochas and their hot chai
is “extremely popular,” Jacob said. The grilled
Panini sandwiches don’t last long on the grill and
when paired with a daily soup creation, provide a
special that satisfies the lunchtime crowd.
“People go nuts for our tomato basil soup,”
Jacob said. “It’s so popular our policy is to carry it
every day.”
But it’s not all about the coffee or the food.
Jacob, 31, and Sarah, 32, who own an organic
small-scale vegetable farm 45 minutes northwest
of Brookings, envisioned a coffeehouse that met
the needs of the community.
“There were several places to get coffee and
espresso-based specialty drinks, but nowhere
students and business owners could sit down in
large numbers,” Jacob said. “We wanted a place
where they could not only get high-quality drinks,
but a place that was a community focal point.”
A ‘community focal point’ connotes a wide
spectrum of people and as anyone who frequents
coffee shops knows, they tend to cater to one
demographic, such as college students. And
since Brookings is home to South Dakota State
University, you’ll find a strong representation
of students and faculty members, particularly
during the evenings.
But by day, the Cottonwood draws a large
business crowd for lunch — “a major spike,” as
Jacob described it — and around three o’clock,
high school students ending their day shuffle in
for an after-school pick-me-up.
The diverse demographic that frequents
the coffeehouse is a result of the owners’
conscientious attendance to the atmosphere
that helps them achieve their community-based
goals.
“Sometimes in urban areas, you’ll have
employees that are just a little bit too edgy for
some of the older more conservative clientele,”
Jacob said. “So we’re really conscientious about
who we hire and training and customer service
so we don’t alienate anyone.”
But don’t take our word for it. Stop in and see
for yourself. And don’t forget the coffeehouse’s
sister store, the Cottonwood Bistro, where Chef
Sarah serves up a full breakfast and additional
lunch items.

4-H fares well at Little “I”
On Friday and Saturday, March 27 and 28, South
Dakota State University hosted their 86th annual
Little International (Little “I”). As part of this event,
383 4-H and FFA teams from across South Dakota,
Minnesota, and parts of Iowa converged on the
campus of SDSU to compete in 12 different judging
contests and quiz bowl events.
Pipestone County 4-H was well-represented by the
seven teams that competed in the judging and quiz
bowl competitions. The Pipestone 4-H horse team
took top honors in their judging contest, placing
first out of 50 teams! Members of the team included
Ashley Petersen, Karli Ryan, Emma Shriver, Dana
Wolfswinkle, and Vanessa Wolfswinkle. Individually,
Ashley Petersen placed first, while Karli Ryan and
Emma Shriver both placed in the top ten. There were
a total of 193 individual participants in this event.
In the Dairy Cattle Judging contest, the 4-H
team from Pipestone County placed 14th out of 53
teams. Team members included Kyle Viland, Alisha
VanderWal, and Bernice VanderWal.
The Pipestone County Meats Judging team also did
well. The team placed 18th out of 41 teams. This is
definitely respectable for a team made up of younger
individuals, all competing against predominantly
high school-aged FFA teams. Members of this team
include Andrew Berg, Jaden Carlson, Taylor Homann,
Hayden Kerkaert, and Tia Muller.
Finally, four of the Livestock Quiz Bowl teams from
Pipestone County competed in a single-elimination
quiz bowl competition. In this competition, two
teams of four individuals compete head-to-head in
each match. It is a single-elimination competition,
so one loss eliminates a team from the competition.
The four teams from Pipestone County swept this
eight-team event, placing first through fourth!
The Pipestone senior team, consisting of Samantha
Berg, Marissa Moeller, Shalayna Weber, and Carlton
Johnson placed first in the competition. Pipestone’s
junior teams earned second, third, and fourth
in the contest. Members of these teams include
Andrew Berg, Jacob Bierstedt, Jaden Carlson, Taylor
Homann, Hayden Kerkaert, Tessa Leuck, Tia Muller,
Travis Pierson, Coby Ploeger, Josh Stangeland, Tasia
Woelber, and Christina Fehrman (Lincoln County).

Uithoven sees working with his
sons as a very good thing.
“We spend a lot of fun time
together,” he said. “I always tell
people that while some fathers and
sons are car racers, we raise sheep
together. This way I can help my
boys out, give them a little extra
income. But they still work for it.
So it works our really nice.”
Though they enjoy working
together, that doesn’t always mean
Uithoven’s advice is taken or that
his sons work the operation for the
same reasons.
“I certainly taught my boys, but
they don’t always listen to Father,”
he said. “They don’t have the love
of the sheep business that their
dad does but they like the money.
They are though getting to enjoy it
more.”
