However, before Shawn opened Senti on Butler Street in Lawrenceville with Franco Braccia in March of this year, he had a few stops along the way. Growing up in a town near Waynesburg, Pennsylvania — Shawn spent a few years in the Army in the 101st Airborne division. After his time with the army, as Shawn puts it, “I was doing odd jobs, here and there.” But, after finding a job as a dish washer for Toni Pais at Baum Vivant, everything would change for Carlson. While working there as a dish washer he was able to help with prep in the kitchen, and soon after he was enrolled at Le Cordon Bleu School in Pittsburgh and was working as Sous Chef at Baum Vivant. Shawn jumped around to a few different places after his time at Baum Vivant; he spent time at the Pittsburgh Zoo, Phipps Conservatory, Nordstrom, and others. Carlson did admit “After working at Nordstrom’s, I felt burnt out.” Then he met up with Franco Braccia, and after he cooked for him and his wife in their home, he became the head chef at Senti. “Senti has very true authentic Italian dishes, you won’t find Chicken Parm on this menu,” said Carlson. He continued, “We make our own bread and pasta in house, and we buy local and use fresh and seasonal foods.” Senti has a very modern feel to it, and the walls are displayed with paintings from Braccia’s mother-in-law. As Shawn puts it, “I use the paintings on the wall, and bring the colors down to the plate.” Come to Senti ready to eat real Italian food, and with a great seating area right inside the door, where you can taste wine from one of Pittsburgh’s first selfserve wine bars, and have small plates, or even “Have a full dinner, you could really do whatever you want here,” Carlson said laughing. Senti will be participating in Pittsburgh’s Restaurant Week starting August 10, with a special multi-course dinner. They also have the ability to close off their bigger sitting room for private events.
