Rutherford Estate Vineyard 2013 Barrel Experiment Cabernet Sauvignon During the barrel aging process, wine evolves, matures and gains complexity primarily from the oak in which it rests. Winemaker Sara Fowler’s yearly barrel experiment is well known among her fellow winemakers in Napa Valley. For the 2013 vintage she chose to work with 60 different barrel toasting styles and 23 coopers, then shared this learning tool with her peers by offering a comparative tasting to determine the flavors and textures that come from each unique oak treatment. The resulting wine is not only a unique expression of our Cabernet Sauvignon grapes, it is also an ode to the spirit of the Napa Valley. Sold out Recipe & Wine Pairing Recipe & Wine Pairing from the Peju Kitchen Duck Confit Serves 6 | Cook: 3 Hours Pa i rs w i t h P ej u 2 0 1 2 M er lot INGREDIENTS: 4 ½ lbs. Duck legs (6 legs) 3 tablespoons coarse salt 3 tablespoons pink or rack salt 3 bay leaves, crumbled 6 garlic cloves, smashed and peeled Finely minced zest of one orange 8 sprigs fresh thyme 2 ½ lbs. Duck fat DIRECTION: Trim fat from duck legs and thighs, leaving skin intact over meat, but removing excess. In a bowl, combine salt, orange zest, bay leaves, thyme sprigs and garlic then rub all over duck to cover completely. Cover and refrigerate for at least 12 hours or up to two days. Remove from refrigerator and rub off excess cure. Melt duck fat over medium heat in Dutch oven large enough to hold duck with about three inches of space at the top. Add duck, skin side down, and heat until fat reaches about 200 degrees (test with a candy thermometer or electronic probe). The surface should look like it is gently boiling, but should not actually be at a boil. Adjust heat if necessary to keep temperature consistent throughout cooking. Cook until the fat is clear and a knife stuck into one of the legs slides out easily, about three hours. Transfer the legs to several glass or stainless-steel containers. Strain fat, discarding any solids and pour, still warm, over legs, making sure they are completely covered. Cool to room temperature, then refrigerate until ready to use, up to 3 weeks. Remove desired amount of confit from fat, scraping off any excess, and keeping remaining legs covered with fat. Place skin side down in a cold cast-iron skillet or other heavy skillet. Place over medium-low heat and cover. Cook until skin is crisp, spooning off excess fat as it cooks, about 10 minutes. While taking notes in my early school years and college I would draw and doodle all over my notebook. What excites us the most about these wines is not just the quality, though they are mouth wateringly delicious, but that they are emblematic of our Peju family values and that of the Napa Valley wine growing community. Our first release, H.B. Sketches I, bears a design that we’re both very proud to share with you. A Bordeaux blend of which only 114 cases were produced, the label on this small lot wine showcases a beautiful watercolor painted by our mom H.B. This wine is the first of a series initiated as an ode to the creative values that our parents instilled in us. We hope that as this series progresses each of us can contribute a work of art to the label. Maybe even one day Benji will contribute! The Barrel Experiment, at just over 600 cases, is the first public release of a project that Sara has been working on since she started here at Peju in 2006. An “experiment” of the flavors that different barrels impart into wine as it ages, every year Sara invites other winemakers from the valley to participate in a blind comparative tasting of the results. At 100% new oak, this wine is big but also balanced by nice acidity and rich, bright fruit components. Peju Artistic expression is a value I have held dear throughout my life. While taking notes as a student I would draw and doodle all over my notebook. Through the words of my teachers, I drew visual representations of instruction, integrating lessons into shapes in my imagination. This helped me concentrate and retain information while exercising my artistic tendencies. When I had my two daughters, Lisa and Ariana, I always encouraged them to keep sketchbooks and draw in their free time. We enjoyed playing a game by drawing a simple shape, line, or squiggle on a blank paper and then each of us would take turns making it into a complete picture; our end results were always completely different! When the girls were younger I taught drawing and crafts in their elementary classes. I taught the students that it doesn’t matter whether you think you can’t draw. Be unafraid and use a lot of bold colors— everyone can be an artist in their own way! For me, art is a way of seeing and recognizing the small magnificence of everyday life. The confidence to create something from nothing but the notion in your imagination is an extremely powerful skill that translates throughout one’s life. Working closely with H.B., Winemaker Sara Fowler created a magnificent wine encompassing the beauty that H.B. sees in everyday life. Each vintage of this wine will showcase a new artwork of H.B.’s, and she hopes Ariana and Lisa will contribute their art in future vintages. An elegant yet expressive wine, the first vintage of H.B. Sketches I showcases a rich nose of raspberry, dried cherry, cocoa bean and cedar. The palate reveals juicy blackberry, plum, black cherry and baking spices.
