SALADS SOUPS ENTRÉES DESSERTS 1 APPETIZERS DESSERTS Carol’s Dirt Cake United States Description of Dish: Dessert with Oreo cookies, Cool Whip and pudding APPETIZERS Name of Dish: Prep Time: Approximately 20 minutes Servings: Makes two 9" x 13" inch pans SALADS Ingredients: 2 packages Oreo’s (crushed) 1 package cream cheese (use fat free cream cheese) ½ cup margarine (use butter) 1 large container Cool Whip (use Reddi Whip fat free) 1 cup sugar 3 cups milk (use 2% milk) 1 teaspoon vanilla 2 large packages instant vanilla pudding SOUPS Preparation: 1. Place two packages of Oreo’s in Ziploc bags and crush with rolling pin into a “dirt-like” appearance. 2. Mix in a large bowl, cream cheese, margarine, Cool Whip and sugar. 3. Mix in a medium bowl, pudding mixes, milk and vanilla. 4. Combine both mixtures together. 5. Place ¼ of Oreo’s (dirt) in the bottom of the pans. Pour cream mixture of “dirt” and top with remaining Oreo’s. 6. Chill 10–12 hours or freeze for 2 hours. ENTRÉES Consider these substitutes for a lighter dish. Submitted by: Carol Smith Louisville, KY DESSERTS 2 DESSERTS Mama’s Apple Walnut Cake United States Description of Dish: A cake that picks up the moisture from the apples and comes out tasting moist and light APPETIZERS Name of Dish: Prep Time: 10–15 minutes Servings: 12–24 depending on how big each serving is SALADS Ingredients: 3 eggs (use 6 ounces of Egg Beaters) 1½ cups sugar 1 cup vegetable or olive oil 2 cups of flour 1 teaspoon baking soda 1 teaspoon cinnamon 2 cups of apples/1 cup walnuts SOUPS Preparation: 1. Mix eggs, sugar and oil in a bowl. 2. Mix in flour, baking soda and cinnamon. 3. Then add apples and nuts. Mix all ingredients to a batter. 4. Scrape batter in a 9" x 12" greased baking pan and bake 35 to 45 minutes at 350 degrees, some ovens vary. Let cool then sift some powdered sugar on top and enjoy. Green Phoenix, AZ DESSERTS 3 DESSERTS Taraulies (pronounced Trollies) United States Description of Dish: Italian Cookies APPETIZERS Name of Dish: Prep Time: 2-3 hours depending how many people you have helping make them Servings: ½ batch makes 7 dozen cookies SALADS Ingredients for Taraulies: 6 eggs (use 12 ounces of Egg Beaters) 8 good sized tablespoons of Crisco (use butter instead) 10 tablespoons of sugar 1 teaspoon of salt 1 - 8 ounce wine glass of Whiskey (I use Crown Royal Whiskey) 1 tablespoon of vanilla 4 cups of flour 5 teaspoons of baking powder SOUPS Ingredients for buttercream icing: 1 pound package of 10x confectioners sugar ½ cup butter or margarine—softened (don’t use margarine) 3–4 tablespoons of milk (use skim milk) 1 teaspoon of milk (use skim milk) Preparation for Taraulies: 1. Take and beat eggs well. 2. Add Crisco, sugar and salt. 3. After all is mixed well, add the whiskey and vanilla then gradually add the flour and baking powder. DESSERTS 4 DESSERTS Taraulies (pronounced Trollies) (cont.) United States 5. Roll into a ball. Take small pieces at a time and form into a twirl (or spoon batter onto cookie sheet). APPETIZERS Name of Dish: 6. Place on cookie sheet and bake at 375 degrees for 10–12 minutes. Preparation for buttercream icing: 1. Combine in large bowl, with mixer at low speed, confectioners sugar, butter, milk and vanilla. 3. After cookie has cooled, spread small amount of frosting on top of cookie and use your favorite dip (i.e., sugar sprinkles, chocolate jimmies, nuts, coconut, etc.) SALADS 2. Beat at medium speed 1–2 minutes until creamy. If desired, add more milk until frosting is spreading consistency. SOUPS ENTRÉES Consider these substitutes for a lighter dish. APPETIZERS Name of Dish: Prep Time: 8 minutes Servings: 8 SALADS Ingredients: 2 packages (8 ounces each) of cream cheese (use fat free cream cheese) ½ cup sugar ½ teaspoon vanilla 2 eggs (use 4 ounces of Egg Beaters) Ready to use graham cracker pie crust (6 ounces or 9 inch) Preparation: 1. Mix 2 packages of cream cheese, ½ cup sugar, and ½ teaspoon vanilla with electric mixer on medium speed until well blended. 2. Add 2 eggs; mix until blended. SOUPS 3. Pour into 1 ready-to-use pie crust 4. Bake at 350 degrees for 50 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. ENTRÉES Consider these substitutes for a lighter dish. Submitted by: Vicki Turner Phoenix, AZ DESSERTS 6 DESSERTS Grandma O’Neill’s Brownies United States Description of Dish: Dessert APPETIZERS Name of Dish: Prep Time: 15 minutes Servings: 24 squares SALADS Ingredients: 2 sticks (1 cup) of unsalted butter, softened to room temperature 2 cups sugar 4 eggs (use 8 ounces of Egg Beaters) 4 squares Baker’s Unsweetened Chocolate, melted and cooled; add pinch of salt to chocolate 1 cup flour 1 teaspoon vanilla ½–1 cup chopped walnuts (optional) Preparation: 1. Preheat oven to 350 degrees; grease 13" x 9" baking pan 3. Add melted chocolate and mix 4. Add vanilla then flour and mix well; stir in chopped nuts SOUPS 2. Blend butter and sugar; add eggs one at a time, beating well after each until batter is smooth 5. Spread evenly into baking pan; bake 17-22 minutes (depends on oven); test with toothpick for doneness; cool and slice into squares ENTRÉES Consider these substitutes for a lighter dish. Prep Time: 35 minutes Servings: 40 small or 30 medium sized cookies SALADS Ingredients: 2½ cups flour 1 teaspoon baking soda 1 1/3 cups packed brown sugar 12 tablespoons butter or margarine (a stick and a half) (use canola oil) 2 tablespoons hot water 12 ounce package of semi-sweet chocolate chips 2 eggs (use 4 ounces of Egg Beaters) Andre mints or chocolate mints SOUPS Preparation: 1. In medium sauce pan, heat and stir brown sugar, butter or margarine, and water over low heat until butter is melted. 2. Add chocolate pieces. Heat and stir until chocolate is melted. 3. Pour into large bowl and let stand until cool (about 10 minutes). 4. Beat egg into chocolate mixture. 5. Stir in flour and baking soda—mix well! Dough will be soft. Bake 350 degrees for 8 minutes. 8. Remove from oven and immediately put ½–1 Andre Mint on top. 9. Return to oven for 2 minutes. 10. Swirl melted chocolate on cookies and let cool completely. Worth, TX DESSERTS 9 DESSERTS Winter S’mores United States Description of Dish: This is the year-round, cool-treat version of your favorite summer-time, campfire treat: s’mores. APPETIZERS Name of Dish: Prep Time: 10 minutes Servings: Up to you SALADS Ingredients: Graham Crackers, your favorite brand (use Honey Maid low fat) Whipped Topping, your favorite brand (Cool Whip works great, but canned topping is better for you) (use Reddi-Whip fat free topping) Mini Semi-Sweet Chocolate Chips Preparation: 1. Break each 5.5" x 2.5" graham cracker sheet in half, leaving a 2.5"x 2.5" square cracker 2. Place 1–2 tablespoon whipped topping on one half of the cracker 3. Place 1 teaspoon chocolate chips on top of the whipped topping SOUPS 4. Place the other cracker half on top, making a sandwich-like s’more. 5. Repeats steps 1–4 for as many Winter S’mores as you want to make. 6. Freeze for 2 or more hours in a freezer safe container. 7. Remove from freezer and enjoy. Submitted by: Leighann Carey Kansas City, MO DESSERTS 10 DESSERTS Best Banana Bread Ever United States Description of Dish: Banana bread APPETIZERS Name of Dish: Prep Time: 10 minutes Servings: Approximately 12 SALADS Ingredients: 2 ripe bananas, mashed 2 eggs (use 4 ounces of Egg Beaters) 1¾ cups all purpose flour 1½ cups sugar ½ cup vegetable oil ¼ cup + 1 tablespoon buttermilk (use fat free buttermilk) 1 teaspoon baking soda 1 teaspoon vanilla 1 teaspoon salt SOUPS Preparation: 1. Preheat oven to 325 degrees. 2. Mix all ingredients and pour into loaf pan. 3. Bake for 1 hour + 10–20 minutes. 4. Do not double recipe! If you have a larger pan, mix two separate batches and bake in one pan. ENTRÉES Consider these substitutes for a lighter dish. APPETIZERS Name of Dish: Prep Time: 15 minutes Servings: 8 SALADS Ingredients: 1 - 9 inch pie shell, baked 1 cup flaked coconut (toasted*) 1 cup frozen whipped topping (use Reddi-whip fat free topping) 3 cups half and half (use 1 ½ cups of half and half and 1 ½ cups of 2% milk) 2 eggs (use 4 ounces of Egg Beaters) ¾ cups sugar ½ cup all-purpose flour ¼ teaspoon salt 1 teaspoon vanilla extract SOUPS Preparation: 1. Put half and half, eggs, sugar, flour and salt into a saucepan and bring to boil over low heat— stirring constantly. Remove from heat and stir in ¾ cup of coconut and vanilla extract. Pour mixture into pie shell and chill 3 hours (or until firm). 2. Top with whipped topping and then with remaining ¼ cup of coconut *To toast coconut, spread in an ungreased pan and bake at 350 degrees for 6 minutes, or until golden brown, stirring every couple minutes. APPETIZERS Name of Dish: Prep Time: 10 minutes Servings: 6–8 SALADS Ingredients: 1 graham cracker pie crust 2 tubs of low-fat/sugar-free key lime yogurt 1 packet fat-free/sugar-free lime Jell-O 1 container light Cool Whip Preparation: 1. Combine yogurt and Jell-O powder (no water!) in blender and fill pie crust. 2. Chill in fridge for one hour or until firm enough to spread Cool Whip on top. 3. Cover pie with Cool Whip, chill another 30-40 minutes and serve. SOUPS ENTRÉES No need to lighten this dish up with substitute ingredients. It’s perfect as is. APPETIZERS Name of Dish: Prep Time: 10 minutes Servings: 8 squares SALADS Ingredients: 4 eggs (use 8 ounces of Egg Beaters) ½ cup butter (melted) 1½ teaspoon vanilla extract 1 cup Splenda Baking Blenda Sugar 2 tablespoons lemon juice (juice of a real lemon) 1 teaspoon of lemon peel or rind 1 tablespoon cornmeal Preparation: 1. Preheat oven to 450 degrees. 3. Place crust in oven for 2–3 minutes or until crust is slightly golden brown. 4. Pour mixture in pie crust and cover edges with foil. Bake for 15 minutes. In a mixing bowl, mix eggs, butter, vanilla, sugar, lemon juice, lemon peel and cornmeal until blended well. DESSERTS 14 DESSERTS Quick and Easy Caramel Apple Dish United States Description of Dish: This recipe is excellent for the fall when the apples are fresh and firm. It is a cross between a dessert and an appetizer! Great for tailgates and casual get togethers. APPETIZERS Name of Dish: Prep Time: 20–30 minutes Servings: 8–10 SALADS Ingredients: 8 ounces whipped cream cheese (use fat free cream cheese) 1 container of caramel apple dip Granola cereal (use a low fat granola like Kelloggs) 4–6 hard crisp apples—(empire, green “granny” apples, McCoun, Gala, etc.) Sprite (optional) Preparation: 1. Spread the cream cheese into a pie plate or low sided serving dish. 2. Spread about ½ of the container of caramel dip over the cream cheese and spread evenly. 4. Core and cut apples into wedges ½ inch thick. To help keep them from browning up, place the apple wedges into a Ziplock bag, add a few ounces of sprite and toss until all the apples have been coated. Drain the excess soda. Arrange the apple wedges, skin side up, along the edge of the pie plate. Place any extra apples into a bowl or replace as they are eaten. SOUPS 3. Cover the caramel with granola. 5. Take an apple wedge and dip into the caramel—very yummy! **Both the dip and the apples can be prepared ahead of time and refrigerate, however the apples are best when cut close to the time when you will be serving the dip. DESSERTS 15 DESSERTS Cream Cheese Flan United States Description of Dish: Flan made with cream cheese so it has more of a cheesecake consistency APPETIZERS Name of Dish: Prep Time: 20 minutes Servings: 16 SALADS Ingredients: ¾ cup sugar ¼ cup water 16 ounce cream cheese, softened (use fat free cream cheese) 5 eggs softened (use 10 ounces of Egg Beaters) 1 - 14 ounce can sweetened condensed milk (use low fat sweetened condensed) 1 - 12 ounce can evaporated milk (use PET brand fat free) 1 tablespoon vanilla extract 2. Blend other 5 ingredients well and pour the mix into the dish on top of the caramel. SOUPS Preparation: 1. To make caramel: Pour sugar into pan and drizzle with water. Bring to boil on medium heat, then turn down heat to low and let cook until the sugar turns to a nice amber color. DO NOT stir while cooking! Pour caramel into your baking dish and let cool. 3. Bake uncovered for approximately 75 minutes at 350 degrees. 4. Let cool, then refrigerate over night (or at least 1 hour). When ready to serve, flip the dish over so the caramel is on top of the flan. ENTRÉES Consider these substitutes for a lighter dish. Submitted by: Stevie Sprow Orlando, FL DESSERTS 16 DESSERTS Pecan Custard United States Description of Dish: Pecan pie without the dairy, gluten, refined sugar and bad fat APPETIZERS Name of Dish: Prep Time: About 1 hour Servings: 6 SALADS Ingredients: 1 pound pecan halves (Trader Joes) 21 ounces organic brown rice syrup (Whole Foods) 6 organic large eggs (use 12 ounces of Egg Beaters) ¼ teaspoon vanilla extract ¼ teaspoon salt Parchment paper (Whole Foods) 2 pie pans Preparation: 1. Preheat oven to 325 degrees. Line 2 pie pans with parchment paper. 3. Beat eggs. Add brown rice syrup and salt and vanilla. Evenly pour this mixture over the pecans into the 2 pie pans, making certain all the pecans are coated. 4. Bake at 325 degrees for 50 minutes or until knife comes out clean that was inserted half way between center and edge of pan. Cool on rack. Serve after cooled. Cover and store in refrigerator. DESSERTS 17 DESSERTS White Chocolate Trifle United States Description of Dish: Elegant yet simple throw-together dessert APPETIZERS Name of Dish: Prep Time: 30 minutes Servings: 8 - ¾ cup servings SALADS Ingredients: 1 - 3.3 oounce package white chocolate instant pudding mix 2 cups fat free milk ½ cup seedless raspberry spread (i.e. Simply Fruit) 1/3 teaspoon almond extract 1 sugar free angel food cake; cut into cubes Sliced toasted almonds Preparation: 1. Prepare pudding according to package directions with fat free milk; let stand 5 minutes. 2. Combine raspberry spread and almond extract in small bowl, stirring with whisk until smooth. SOUPS 3. Arrange half of the cake cubes in 2 quart trifle bowl or glass bowl; brush with half of the raspberry mixture; spoon half of the pudding over the raspberry. Repeat another layer; cake/raspberry/pudding. 4. Sprinkle with sliced almonds. ENTRÉES No need to lighten this dish up with substitute ingredients. It’s perfect as is. Submitted by: Joy Yoder Columbus, OH DESSERTS 18 DESSERTS Frozen Peanut Butter Pie United States Description of Dish: Incredibly delicious, low calorie, low fat, frozen dessert APPETIZERS Name of Dish: Prep Time: 5–10 minutes Servings: 16 SALADS Ingredients: 1/3 cup reduced fat peanut butter 1 - 9 ounce container of Cool Whip Free 1 - 4 ounce fat free cream cheese –softened 1 cup confectioner’s sugar ½ cup skim milk 2 - 9 inch reduced fat graham cracker pie shells Preparation: 1. Place ingredients 1–6 in a large bowl. 2. Mix with electric mixer until blended smooth. 4. Cover and place in freezer until frozen.
