Hidden among the row homes, community gardens are an urban escape
“We’re really privileged to use this space,
and we recognize that, so we share the produce that we get,” she says.

Over in Upper Fells Point, at the intersection of Wolf St. and Pratt St., another community garden, three house lots large, offers
residents a chance to get into nature without
leaving the city.
“This is the only community green space
in Upper Fells Point,” says Kurt Schiller, a
self-employed carpenter who has been with
the Upper Fells Point Community Garden
since the beginning.
“The community just took the initiative to
clean it up and brought in some top soil,”
says Schiller.
There are now 13 garden plots and community green spaces in the front and rear of
the garden, where the Upper Fells Point
Improvement Association holds cookouts
and other community events. In the Haunted
Garden event around Halloween, Schiller
has been known to spring out of a box and
terrify local kids. Another community member then chases them around the garden with
a gas-powered chainsaw (chain removed),
ensuring that the kids won’t sleep for the
next week.
Schiller says that he and other community
members vested in the gardens started making moves to secure the land in 2001.
“We saw a slight uptick in home values,”
says Schiller. “We were afraid that, with the
craziness going on, the city would sell the
lots for $100,000 each to somebody.”
Eventually, Schiller became a founding
member of Baltimore Greenspace, a nonprofit dedicated to owning community
greenspace land, and, most importantly,
assuming the liability incurred by ownership.

“A lot of people have no idea what they’re
doing, and a lot of people are experts,” says
Heidi Vorrasi, describing the range of gardening aptitude among the South Baltimore
residents who use the community garden at
S. Charles St. and E. Heath St.
In this and several other locations scattered throughout the city, corn, tomatos,
peppers, eggplants and other produce grow
in a vacant lot among the row homes, businesses, and traffic. At the Charles and Heath
St. garden, peninsula residents can pay $30
to use a plot for one year.
The land was formerly an “unofficial dog
park,” according to Vorrasi. “I soon realized
it was disgusting and that I would never take
my dog in there,” she says.
Despite the landmines, she saw potential.
“I though that would be a good spot for a
community garden,” says Vorrasi, who has
enjoyed gardening for her entire life.
There were some administrative hurdles.
Vorrasi and other aspiring city gardeners
collected 170 signatures requesting that permission be granted to garden on the land,
which belonged (and belongs) to Baltimore

Recreation and Parks. The official “use” of
the land had to be changed.
“That took forever,” Vorrasi says.
There were also physical hurdles. Those
who wanted plots paid $50, and participated
in most of the five half-days it took to convert the land to a useable garden. Vorrasi
says that John Wood, a nearby resident who
shares the title “community garden overseer” with herself, did a lot of the physical
labor.
Now in its third summer, the Charles and
Heath St. garden is “running over with
tomatoes,” according to Vorrasi.
“I picked three two-gallon buckets one
morning,” she says.
As it is a community garden on land
owned by Recreation and Parks, the garden
is operated by City Farms, which also

administers the community gardens in several city parks, including Patterson Park. For
all of its community gardens, City Farms
provides a hose and water hookup as well as
liability coverage.
“The liability would have been too big if
City Farms hadn’t taken it on,” says
Vorrasi.
City Farms has some rules for community
gardeners: Seeds must be planted by Apr. 1,
and plots must be cleared by Dec. 1 for the
winter. If produce “hits the ground,” or falls
off the plant and goes to waste, a gardener
could lose his plot. City Farms will tend a
plot if a gardener goes out of town, but produce will be donated.
Vorrasi said that a lot of produce from the
Charles and Heath St. garden is informally
distributed to locals anyway.

Local fighter knocks out cancer

Jerome Featherstone Jr., 28, is a 5-0 middleweight (maximum weight 160 lbs.) fighting out of the Baltimore Boxing Club.
On Friday, July 13, Featherstone defended
his East Coast Champion title against Ryan
Watson of Salisbury at Du Burns Arena.
“He knocked him out,” said Featherstone’s
coach, Charm City legend Jake Smith,
owner of the Baltimore Boxing Club in
Fell’s Point. “He knocked him out of the
ring, actually. It was nice.”
The event benefitted the American Breast
Cancer Foundation.
The soft-spoken Featherstone had a standout high school wrestling career and took
his skills to Oklahoma State. The Baltimore
Guide caught up with him as he was gearing
up for the fight.
How is boxing different from wrestling?
There’s a big difference. In wrestling, you
can stall—it’s a strategy. In boxing, you’re
fighting the whole time.
Why did you start boxing?
I was doing MMA (mixed martial arts),
and I wasn’t efficient in striking. I wasn’t
punching guys as good as I thought I could.
Will you go back to MMA or stick
with boxing?

Local chefs compete with each other to earn the title of Master Chef

Two local chefs—Timothy Dyson of
Federal Hill’s SoBo Cafe and Bill Hughes of
Barracuda’s Tavern in Locust Point—are
still vying for the title Mason Dixon Master
Chef.
The competition, held at Blob’s Park
Bavarian Beer Garden in Jessup, is similar
to the TV show of the same name. Chefs
face off against each other and rise or fall on
the flavor, texture, and presentation of their
culinary creations.
“It’s Baltimore, not New York City and
Tom Colicchio,” said Dyson, explaining the
judges’ slightly-more-relaxed demeanor in
the Mason Dixon contest as opposed to the
BRAVO TV show. “But they will tell you
what’s wrong, and they do know food,” he
clarified.
Cooking off against Mark Timms, who
once served as Hillary Clinton’s chef, Dyson
advanced to round two with a three-course
meal including a duo of lamb appetizer with
homemade caraway crackers, a lamb meatloaf, and a strawberry shortcake with sheep’s
milk ricotta.

that impressed the judges with its simple
deliciousness.
“We’re applying the same principles (at
the Sobo Cafe) that we did there,” said
Dyson, noting that the restaurant takes staple
foods, such as chicken pot pie, and applies
French technique and the highest-quality,
freshest ingredients for a superb dish.
Although the Sobo Cafe, located at 6 W.
Cross St., locally sources many ingredients,
Dyson said that he doesn’t like to “clutter up
the menu” with that information, and lets the
food speak for itself.
“I fell like it’s overdoing it to advertise
doing the right thing,” he said.
In addition to the high-caliber ingredients,
Dyson added that almost everything—
including condiments such as mayonnaise
and charcuterie such as chorizo sausage, is
made in-house.
He credited Sobo’s baker, Patrick
Gramens, with “the best biscuit in town.”

Dyson said assistance from Gramens,
plus his own organizational skills—he
meticulously planned his cooking, leaving
himself 20 “emergency minutes” at the
end—made the contest experience manageable.
“Yes, it’s high-pressure, but so is running
a kitchen,” he said.
The only panicky moment came after a
miscommunication over who would arrange
the dessert course on the plate.
“I literally, to the second, plated the desserts on time,” Dyson said.

Lawyer takes on a cooler side job

Say goodbye to old school popsicles, with
their artificial flavors and lurid, mouthstaining colors. Say hello to ice pops in flavors like strawberry basil lemonade or
vanilla peach spice.
The gourmet ice pops come from Pop
Couture, a company started by Baltimorearea lawyers Justin Daniel and his business
partner Pete Stine and debuted at the Fells
Point Farmers’ Market three weeks ago, just
in time for Baltimore’s 100-degree dog days
of summer.
Pop Couture ice pops are all natural and
made with locally sourced or organic ingredients. Daniel says now is the perfect time to
be in the gourmet ice pop business because
people are increasingly conscious of what
they are eating.
“Even it it’s a treat, people want to know
what’s in it and where the ingredients came
from,” Daniel says.
Daniel and Stine, who both have families,
met while working as lawyers and decided
they wanted a business that would help them
escape paperwork and put them out in the
community with the public.
“We both loved making ice pops for fun,
and we wanted to make a product we were
passionate about,” Stine says.
They turned their passion into a business
this past April and now make about 400
pops per week in a commercial kitchen outside of the city.
Pop Couture’s flavors change all the
time.
“It depends on the fruits we can get at
their peak of flavor. When we get great stuff,

says Stine, who sometimes goes to local
farms to pick the fruit he needs.
Flavors run the gamut from crowd-pleasers, like strawberry or blackberry, to the
exotic, sour cherry balsamic or spicy pineapple habanero. Pop Couture tries to keep
some basic fruit flavors in stock, but is
always working on new combinations.Its
flavors are works in progress and some are
downright experimental.
“Blueberry lemongrass is probably our
most unusual flavor combination to date,”
says Stine.

BIRDS HOUSE: Nick markakis takes a leading role

With the Baltimore Orioles having some
trouble at the top of the order, it was nice to
see Brian Roberts come back. Sadly, he got
hurt again, but, not long after that, Baltimore
had their right fielder come back, and he has
been a pleasant surprise in the leadoff spot.
Nick Markakis has usually batted second
or third as an Oriole. Before getting hurt,
Markakis was hitting third for the O’s and
doing so decently. Before his injury, he was
batting .256 with eight home runs and 26
runs batted in. Since his return, the power
numbers have been non-existent, but he is
hitting an impressive .364 so far in the 10
games he has been back.
Hitting leadoff is a tough thing to do,
especially if you’re normally a second or
third batter, but Nick has gotten the job done.
His .417 on-base percentage is a vast
improvement over the .333 he put up before
his injury. Even more impressive than that is
the fact that he has only struck out once in
44 at bats since coming back, compared to
37 strike-outs in his previous 199 at bats
before getting hurt. Not bad for a leadoff
hitter.
The O’s are still in the thick of things.
They are currently still holding on to the last
Wild-Card spot, and they will need
Markakis, as well of the rest of the offense,
to start producing.
Impressively, the Orioles are third in
home runs in all of baseball with 120,
behind the New York Yankees and Toronto
Blue Jays. The bad news is that they have
scored only 395 runs, which is 20th in the

Dee lost her battle
with cancer. She was
loved very much and
will still be loved.
She will deeply be missed. Her favorite
things to do were going to bingo, spending
time with her grandkids and going secondhand shopping with her friend Patty. She
was a strong independent woman - a single
mother and a beloved friend. She is leaving
behind her 7 kids (Clayton White, Aaron
Bryan and his wife Julie, Nathan Ransom
and his wife Amanda, Calvin Sirbaugh
and his wife April, Juanita Sirbaugh and
her husband Adam, Steven Sirbaugh and
Cheyanna Knight). She is also leaving behind 7 grand kids (Priscilla, Bella, Zachary,
Gabriella, Tabitha, Raysean and Alex). Her
funeral will be held at Kaczorowski Funeral
Home at 1201 Dundalk Ave on Wednesday,
July 25, 2012 from noon to 1pm. She will
be layed to rest at Oak Lawn Cemetery.

“We can only ask the city to give us this
super prize if we show that something is
being done with it,” says Avins. “It takes a
place five years or so to go from looking like
a project to looking like a place.”
In some cases, abandoned, nuisance land
may be used as a greenspace. Avins says that
if fines and taxes from the city are ignored
by a landowner, and that landowner is
nowhere to be found, then neighbors to the
property can improve it through the “selfhelp nuisance abatement procedure.”
Community members who have made a
greenspace on a nuisance property, she says,
“are not squatters. They’re exercising their
community’s right to abate a nuisance.”
Garden show
For those interested in seeing the city and
community gardens, the Charm City Farm
and Garden Tour is Saturday, July 28. Tours
of the gardens, starting at Cylburn
Arboretum, are available starting at 2 p.m.,
by bus or bike. Space is limited on the bus.

Master Chef: Judges choose ingredients

owner took over the restaurant.
Hughes of Barracuda’s had a different
reason for entering Mason Dixon Master
Chef. He is good friends with Erik Folkart,
the founder of the competition.
“He kept asking me to get in, get in, so I
did,” said Hughes. “It’s the last thing I
wanted to do. Monday’s my day off, and it’s
nice to do absolutely nothing,” he laughed.
Nevertheless, Hughes, who defeated
Moses Jackson of the Bethesda Blues and
Jazz Supper Club, has enjoyed the competition so far.
“I’m surprised—it was a lot more fun than
I expected,” said Hughes, adding, “I’m 40
now and past all the accolades—not trying
to downtalk it; it’s just me.”
He said he was pleasantly surprised to be
given an ingredient very familiar to him—
crab. A pumpkin blossom stuffed with
mascarpone and crab, fried green tomato
with crab salad, and crab toast crostinis saw
him through the appetizers. He served the
judges an entree of traditional jumbo lump
crab with sweet and spicy cucumber salad
with Maryland tomato, and pineapple-andgranny-smith-apple crepes with crab and
vanilla creme custard.
Hughes said that he was very happy to
have Barracuda’s sous chef, Damon
Morrison, along at the competition.
“He’s pretty outside the box, a pretty creative guy,” said Hughes.
On Monday, July 30, Hughes faces off
against Patrick Crooks of Roy’s Restaurant
in the Inner Harbor for a spot in the semifinals. Dyson’s next match is on Monday,
Aug. 13, against Christopher Lewis of the
Iron Bridge Wine Company in Columbia.

Boxer: Featherstone likes to spar, not run

What is your favorite part of boxing training?
I like sparring.
What is your least favorite?
It’s the running. We call it roadwork.
Putting in that roadwork, man. It’s tough.
But things are so much easier if you put that
work in.
That’s something different about boxing.
In wrestling, there’s always a guy that’s better than you. If you put your time in with
boxing, though, you can think your way
through it. In boxing, a guy could be better
than you, but it just takes one punch.
Do you have trouble making
weight?
Not really. I have to watch what I eat. I
can’t eat my fried foods that I like, and no
cheesesteaks. I eat everything. I’m always
eating. It’s my favorite thing to do.
What’s your favorite food?
I don’t have a favorite food. I don’t have a
favorite color, and I don’t have a best friend.
(Laughs) I like a lot of things.
How do you feel about boxing in a
breast cancer benefit?
It’s amazing. I haven’t been around someone with cancer—nobody in my family has
it. But whatever I can do to help, I’m down
for the cause. I’m always willing to help
whoever’s in need.

Stine explains.
Pop Couture sells its pops at local markets
and caters barbecues, pool parties, and other
private events. Just last week, they put their
umbrella-covered freezer on a freight elevator and catered a birthday party in a down-
town office building.
“That was a lot of fun,” says Stine.

Harrison, of Fells Point, recently sampled
Pop Couture’s mint lemonade ice pop at the
Baltimore Farmers’ Market.
“It’s excellent, not too sweet. Very real
tasting,” said Harrison, as he passed the ice
pop to his wife.
“It’s wonderful. It’s like air conditioning
for your mouth,” said Dugdale. “And you
can quote me on that.”
