Italian cuisine has developed through centuries of social and political changes, with roots dating back to the fourth century BC The kitchen itself has been influenced by Italian cuisine Etruscan, ancient Greek, ancient Roman, Byzantine, Jewish and Arab. Important changes were had with the discovery of the New World and the introduction of new ingredients such as potatoes, tomatoes, bell peppers and maize, now fundamental in the kitchen but were introduced in quantity only in the eighteenth century. Cuisine Coffee , and more specifically espresso, has become highly important to the cultural cuisine of Italy. Some famous dishes and items include pasta , pizza , lasagna , focaccia , and gelato . Cheese , basil , oil , tomatoes , wine , potatoes are major parts of the Italian cuisine Typical foods of Piedmont and Valle D’Aosta are for example: Bagna Cauda, the lady's kisses, the bonet, meal, veal with tuna sauce, fondue, agnolotti ... The folklore in Lombardy includes foods such as: the schnitzel, risotto, polenta, panettone ... Some typical dishes of Trentino: polenta, apple strudel, barley soup, gnocchi ... In Venetian typical dishes are: cod with anchovies, risotto with radicchio and gorgonzola polenta, gnocchi ... Food typical of Friuli Venezia Giulia: plum dumplings, lasagna, goulash, muset ... In Liguria typical food are: focaccia of Recco, Genovese pesto, porridge, marinated olives… Food dishes from Emilia Romagna: flatbread, lasagne, tagliatelle with meat sauce, tigelle... Presents the Tuscan foods such as: the crushed, tiramisu, the gingerbread, the chestnut, the almond biscuits ... Marche also have special courses such as:the stuffed olives, pies, sardines Marche ...
