News 2008 Waterfall Resort S 100,000 King of Kings Salmon Tournament Winners Cruisin’ for Two! That was a special day and year at Waterfall for me. I was fortunate enough to catch the King of my lifetime and Waterfall’s largest for the season weighing in at 68.3 lbs. Pictured with the 68.3 lb. King of the Season: Kevin Austin,Rodney Riddle, Jim Luke and Nelson Wheeler. As part of the McCarthy Building Companies, I’ve been a regular at Waterfall Resort for the last ten years. Each season, McCarthy and our subcontractors fly the adrenalincharged floatplane from Ketchikan to Waterfall. Eager to start fishing as soon as we land, we are greeted by the staff and guides at the resort who are consistently friendly, guest oriented and just plain great to be around! We’ve had some excellent fishing over the years, including the year the camp hauled in 13 Kings over 50 lbs. in one day! I thought I would never see another day of fishing like that at Waterfall ever again—and then came June 21st, 2008! Then, in October, I got a call from Waterfall telling me I had won a prize in their Fishing Derby. I immediately called my wife, Kris, to tell her how all that practice fishing back home on weekends had finally paid off. Now Kris and I get to go on a 2-week European cruise and I get to continue fishing at home on the weekends. Thanks, Waterfall! Grand Prize Drawing Winner My experience at Waterfall is one that I will fondly remember for the rest of my life. The breathtaking location and the abundance of wildlife continue to be the subjects of many stories to this day. Winning the King of Kings grand prize was icing on the cake. Mike Bolen, CEO/ Chairman, McCarthy Building Companies, fished Waterfall in early August with his daughters, Shelby, 13, and Haley, 11. Both girls loved the fishing, and half way thru the first day, Haley was dubbed “Coho Mike Bolen, Irvine, CA, with Haley and Shelby. Queen!” The girls were totally “blown away” by Pirate’s Cove and its breathtaking beauty. The Alaska wildlife “package” put on a spectacular nature show. Shelby and Haley loved the whales, sea lions, eagles and bears— especially the bears on the walk to the waterfall. There were two highlights: the Coho frenzy at Cape Ulitka where 2-4 fish were on for at least an hour, and then came the highlight of highlights! Several whales came in tight for bubble net feeding. All within 20 feet of the boat! It was high adventure at its finest! Mike has fished Waterfall annually since 1996, including trips in June and August 2008, but the August trip with his daughters was the most memorable because of the father/daughters bonding time. Mike, Shelby and Haley. They laughed, they bonded, they took home memories …and a lot of fish!!! Jo Jo Joyce - Queen for a Day times Two! Jo Jo reflections ~ Waterfall ~ June 15-20, 2008 Never before have I enjoyed such a well puttogether destination. Check in was a breeze, weather outfitting a riot and my cabin delightful. What a relief to have my luggage delivered and picked up! Breakfast, boat lunches and dinners were exceptional! Being King of the Day, or in my case Queen, is an experience I’ll live with forever. Who would have thought that the next day would provide even more excitement when I caught “Maynard,” my second King. With an additional KOD cap and a 40+ lb. patch in hand, I felt a little guilty but ecstatic. I was hooked on Alaskan fishing! “Jo Jo” Joyce, Hayden, ID, hugs her 35.2 lb. IN THE KITCHEN WITH CHEF STU Grilled Coho with Russian BBQ Sauce Baked Snapper with Tapinade Ingredients: Whole Coho fillet with the pin bones removed. Sheet of foil (large enough to cover the bottom of the fish) Russian BBQ Sauce: 1 Cup Mayonnaise 1 Clove garlic, minced 1/2 tsp. Brown sugar 2 Tbl. Catsup 1/2 Cup Distilled vinegar 1 Green pepper, minced 1 Pimento, minced 1 Onion, minced 1 Tbl. Horseradish 1 Tbl. Parsley, chopped 1/8 tsp. Cayenne pepper 1 tsp. Salt 1 tsp. Fresh ground pepper Assembly: Preheat grill. In a mixing bowl, combine all the ingredients for Russian BBQ Sauce. Put foil on grill and then place salmon, skin side down, on foil. Pour BBQ sauce over fish. Cook until center of fish starts to separate. Remove from grill and serve family style. 2 Ingredients 6 – 5 oz. Snapper fillets skinned and boned 3 Eggs beaten 1 Cup All-purpose flour 3 Tblsp. Canola oil Preheat oven to 350. Heat skillet over medium heat. Dredge snapper in flour, then dip in eggs. Pour oil in skillet. Place snapper fillets in hot skillet and turn after 1 minute. Cook 1 more minute and place on a baking sheet. Top snapper with tapinade and finish cooking in oven about 6-8 minutes. Tapinade Assembly I have received a lot of requests for a special Red Snapper recipe so I searched through my cookbook, Then & Now, and came across one of my long-time favorites! 1 Cup Whole Kalamata olives 1 Cup Green olives 1/2 Cup Capers with juice 1-1/2 Tblsp. Lemon juice 1 oz. Anchovies 1/8 Cup Shallots 1/4 Cup Chopped parsley Salt & Pepper to taste Combine all ingredients in a food processor and pulse for 1 minute until items are chopped and well mixed together. Waterfall Resort News www.waterfallresort.com Grilled Coho Ingredients 1 Coho fillet with skin on 2 Tblsp. Butter, diced 2 Tblsp. Brown sugar 1/2 Lemon 1/2 C Vermouth Salt & Pepper to taste Foil to cover bottom of salmon Heat BBQ Grill to medium high. Place fillet, skin down, on top of foil, Turn up edges of foil. Salt and pepper top of fish. Sprinkle brown sugar evenly over the salmon. Place butter on top of sugar. Pick up foil with salmon and put on the middle of BBQ grill. Pour vermouth around fillet. Lastly, squeeze lemon over coho. Close lid and grill until salmon flakes. I generally use a total of cooking time of 10 minutes per 1 inch thickness of your fillet. 800.544.5125 WHAT MEMORIES! Notables 6th Annual King Salmon Jackpot Challenge: June 7-10, 2009 Fishing Report Every three years the Alaska Board of Fish meets to consider changes to S.E. Alaska fishing regulations. The following positive changes are a result of that meeting. $100,000 Special Bonus Award & Up to $248,000 in Cash Jackpots! King Salmon retention for the entire season: If the abundance index remains at or below the 2008 level, guided anglers will still be able to retain at least one king salmon in July and August. The trophy fish rule, implemented in 2008, requiring a king to be at least 48” to be retained after July 15th has been eliminated. The one-fish per day/three fish annual limit will remain in effect for May and June. Trophy Lingcod: Guided anglers retain the right to harvest one ling cod within the existing slot limit and now are allowed a second lingcod if it is over 55 inches! As most of you know, we experienced a low point in King Salmon abundance in 2008. The last time this occurred was in 2000. The following year, in 2001, the abundance index improved from 1.1 to 1.29. The Alaska Department of Fish and Game is optimistic that we will see an increase in the abundance index in 2009. If it is anything like 2001, we will get back to traditional limits of one king per day and three for the season which will apply for the entire fishing season. Waterfall to Air on 2 TV Series! One might think we kick back, slow down and relax… but now the transformation truly begins! The boats and docks are pulled out of the bay and stored. Power and water are shut off to all but 2 or 3 buildings. Waterfall now takes on the historic look of a cannery rather than the popular sportfishing destination it has become. As summer gives way to fall and winter the transformation is complete. POW Hatchery King Salmon Enhancement Program This program will supplement King Salmon returns to the west side of Prince of Wales (POW) Island starting in the summer of 2010. Waterfall Resort, other charter operators, and many of our guests have helped support the efforts of the Prince of Wales Hatchery program since 1997. The hatchery has been releasing five hundred thousand King Salmon fry per year and expects a return of one to two percent, five to ten thousand fish, beginning in 2010. Hospitality Supervisor, Colleen Cockrell, offered her insights into what’s happening at Waterfall on Independence Day! The highlights of the 4th of July are the games on the dock. All the guests are invited to participate and a great many do so. The egg toss, water balloon toss, neck-to-neck orange race, fish head toss, and the tote race across the boat harbor generate energetic mixed-team camaraderie between the co-workers and guests. One of our guests, celebrity boxer Tye Fields, stole the show. At 6'8" tall, Tye skimmed across the harbor in just a few strokes leading his team to victory.
