A bottle of Seager's London Dry Gin, produced in the 1960s, which was around the time that
the company who made this gin bought the Laphroaig distillery through Long John Distillery.

French Style or Rhum Agricole, is very different to other Rums. It must
be made from fresh sugar cane juice rather than molasses and must be
distilled in a single column still. The resulting Rum retains much of the flavour of
the cane and is very fruity and floral

Byrrh – Green Chartreuse - Maple Syrup - Angostura Bitters – Peychaud’s Bitters
A harmonious matrimony of sweet maple, fragrant Chartreuse and
Aperol are lead down the aisle by a bittersweet hint of Byrrh.
Added is a rich measure of punchy young Cognac all
rounded off by the complex spiciness of Rittenhouse Rye
to produce an elegant finish.

While Vodka has probably been made since the 8th Century or so, the Vodka that is made
today is a very different beast. Distilled to a point of almost pure alcohol, then filtered many
times and watered down, modern day Vodka is almost characterless. The greatest
Vodka’s manage to retain some character of their original product, like the ones below
If you like it a little stronger switch out the cognac and rye blend
for a full measure of Monkey shoulder blended malt scotch whiskey
and give it .some ‘legs’.

bitter oranges. A wonderful exercise in simplicity, where the sum is
truly greater than the parts.

Spanish Style

Scotch Whisky
American Whiskey
Many think of Scotch immediately when the word Whisky is uttered, yet not
as many value the nuances of Scotch and how to appreciate it. The true beauty
of Scotch lies in its regional variances.
American Whiskey went through a dark age from the prohibition era until the later
part of the twentieth century. While American Whiskey does have regional
differences, the key differences lie in its Marsh Bill. This is the list of grains that go into
whiskey. The grains that might be included on the ‘Bill’ are corn, wheat, rye, and malted
barley. Corn Whiskey must contain 80% Corn, Bourbon Whiskey must have at least 51%
Corn, Rye Whiskey must have at least 51% Rye and for any of them to be labelled
“straight” they must be aged for a minimum of two years.
Single Malt refers to a spirit made only from malted barley, in a pot still, from one
distillery. Most consider these the lords of the Scotch world. Single grain refers to spirit
made from malted and un-malted barley, generally in a column still from one distillery.
Blended Scotch refers to a spirit that is a blend of many distilleries’ single malts with Grain
Whisky.

In some crude form a juniper based spirit that has been with us since the 11th Century.
It was believed that the juniper would ward off many maladies, including the Bubonic
plague. At some point, hundreds of years later, it went from health tonic to Gin and tonic.

Brandy derives from the Dutch word of “burnt wine”. Originally distilled for ease of
transport and to avoid taxation, which was based on volume, it was quickly discovered
that the time the raw spirit spent in wooden barrels improved it greatly.
So began the noble tradition of ageing & blending distilled wine.

Rum
Rum truly is the pirate of all spirit categories. Whilst most other spirits are now
recognised in various governments and international trade regulations, Rum
has very little in the way of this. In fact, the only regulation for Rum is that it has to
be made from a by-product of sugar cane, be that sugar cane juice or molasses.
This means that you get a huge diversity in Rum styles and means of production, with a
larger variety of flavours and expressions than any other spirit category. To try to assist
you through this somewhat confusing category, we’ve done our best to group them in what
we regard as suitable Rum “styles” that are similar in the means of production,
history and flavour profile.
Age Classifications for all Rum:
The age statement is often obtuse and deceitful. We’ve pointed out where the age statement
is the minimum age and where it refers to the maximum age.
Traditional English Style
These Rums are generally aged quite extensively in charred oak, often distilled in a copper
pot and are blended to maintain their distinctive flavour. They are quite heavy, molasses
rich with hints of spice and chocolate.

Modern English Style
Sometimes pot still, sometimes column still, these Rums are also generally aged
extensively. The resultant spirit is rich, and has notes of spice, but with a touch of fruit
and is generally smoother, lighter and more refined than their traditional cousins.
