Association this Summer in Tinley Park.
The 65th Annual ILSNA State Conference will be held June 15-18,
2015 at the Tinley Park Convention Center, Tinley Park, Illinois. Join
our enthusiastic and diverse crowd of school nutrition professionals,
industry members, and allied organizations as we come together for
a conference experience that is sure to be one of the most informative, engaging and exciting that ILSNA has ever
offered!
Pre-Conference sessions will include the Sanitation Manager Certification Training and Nutrition 101 on Monday,
June 15th. Space is limited so make sure you sign up early.
Our conference theme this year is “Happy Days." Come prepared for engaging speakers, sessions and a little bit

"MGM", Dayle Hayes and Margo Frazier.

to include: Production Sheet Basics, USDA Food Updates, Allergy Management, Media Interviews, Purchasing
Produce Properly, Work Wellness into your Day, Prepare for a Safety Crisis and the list just goes on.

to the "Happy Days" and help us honor our industry members, who help us each and every day with feeding the
children of Illinois. The Wednesday evening banquet will take place at the The Great Hall of Café Brauer at the
Lincoln Park Zoo, this evening will truly be a celebration of the 65 years that ILSNA has been serving its members
and Illinois Schools.

CONTINUING EDUCATION
ILSNA is a recognized Continuing Education provider
through the School Nutrition Association, conference
participants can earn Key Area Program Hours (KA)
and Continuing Education Units (CEU) during the three
days of education sessions that are being offered, Key
Hours and CEU’s are listed adjacent to the sessions
they apply to. Additionally, all CEUs count towards
USDA Professional Standards continuing education
requirements.
SNA CERTIFICATE IN SCHOOL
NUTRITION
SNA’s Certificate in School Nutrition Program is
based on the standards of practice and indicators in
the Keys to Excellence in School Food and Nutrition
Programs that define nationally accepted standards
for quality programs. There are three levels of the
certificate through SNA all with specific requirements.
Additionally, effective July 1, 2015, SNA’s Certificate
Program will be aligned with USDA Professional
Standards so your continuing education unites (CEUs)
will count for both USDA Professional Standards and the
SNA Certificate programs. For those who already have
their certificate, continuing education units (CEU) will
be earned to assist with your annual certificate renewal.

SNA Certification and Food
Handlers License FAQ’s
Q: Can I obtain my Level 1 SNA Certificate in School Nutrition by
attending ILSNA’s conference?
A: Yes! In order qualify for the SNA Level 1 Certificate, you
must take and pass the Food Service Sanitation Manager
Certification (FSSMC) and Nutrition 101, then apply for
your certificate through SNA (https://schoolnutrition.org/
Certificate/Earn-SNA-Certificate/). Both of these courses
are offered as Pre-Cons this year at ILSNA’s conference. In
addition, Nutrition 101 is offered on-line (www.nfsmi.org) at
no cost and may be taken anytime. FSSMC is hosted privately
through IDPH approved consultants and typically costs $150180 per person. At conference, it’s being offered at a reduced
cost of $75 to the participant as ILSNA picks up the other half.
Q: What are the requirements for me to get my Illinois Manager
Certification?
A: In order to receive the Food Service Sanitation Manager
Certification (FSSMC) from the state of Illinois, the employee
must take an approved 8 hour training course and pass an
accredited exam every 5 years. The Illinois requirement for this
course was shortened from 15 hours to only 8 hours as of July
1st, 2014. No longer is a “refresher course” offered.
Q: What is the Illinois law on certified managers?
A: The Illinois Department of Public Health requires that all food
service establishments that prepare and serve food to have
a certified food service manager on the premises at all times
food is being handled.
Q: Once I receive my Exam score am I then Certified?
A: Once your instructor receives your Serv Safe score (1-2
weeks), they will send the scoring info to the State. You will
receive from your instructor the Serv Safe Certification with
the following information. The State will send each Student
the official notification on passing the Test and the final
paperwork. Once you fill this out and send back to the State
with a $35.00 check- you will receive your official Certificate
from the State in the mail (4-6 weeks)
Q: What’s the difference between FSSMC and a Food Handler
license?
A: IDPH requires that at least one supervisor of any food service
facility hold a Sanitation Manager Certification at all times.
ALL OTHER FOOD SERVICE EMPLOYEES MUST OBTAIN AND
MAINTAIN A FOOD HANDLERS LICENSE. The Food Handlers
license expires every 3 years.
Q: Can anyone take the Food Handler Train the Trainer class?
A: The pre-con will be limited to only those who are employed as
School Nutrition employees in a school district.
Q: Do I need to take the Food Handler class if I have my FSSMC?
A: No. If you hold a current FSSMC you do not need a Food
Handler license. If you would like to train your own employees
so they may obtain their Food Handler license, you must
attend the Food Handler Train-the-Trainer class.

A Taste of Food and Fitness; provides a basic overview
of nutrition and helps to underscore the importance
of nutrition in daily life. The program offers tools for
guiding food choices, information on macronutrients
and micronutrients, information to assist you in making
good diet decisions, and an overview of nutrition
issues in the media. Reminder: In order to earn your
SNA Level 1 Certificate, one must complete Nutrition
101 and hold a valid Sanitation Managers Certificate.

School food service staff that wish to train other
school food service staff to meet the new Illinois
Food Handler Training requirement should attend
this course. To become a trainer, attendees MUST
be a Food Service Manager, Kitchen Manager (or
similar supervisory position), AND they MUST
have a current Food Service Sanitation Manager
Certification (FSSMC). To be eligible to take the
Train-the-trainer class, an individual must 1)
hold a current food service sanitation manager’s
certification and 2) be in a supervisory role
(Manager, Supervisor or Director).
Conference Hostess Volunteers Needed: ILSNA is
looking for volunteers to help with hostess duties
during the 2015 ILSNA Conference. Hostess help
is greatly appreciated and assists in making our
conference run smoothly. If you would like to
volunteer for this year’s program, please select
