Imbued with her unique and personal touch, it’s no surprise that this inspiration is contagious to those who visit the tasting room. In a fortuitous visit, one such artist to find inspiration at Rideau Vineyard was Maestro Philip Fortenberry. As a versatile piano soloist and improvisational artist whose styles encompass a wide range of musical genres, Philip brings a distinctive style of playing to his music. He has performed in concert nationwide at prestigious venues from Lincoln Center and Carnegie Hall to the White House. His unique and entertaining interpretations of timeless classical and popular favorites as well as new music created specifically for the audience in attendance have garnered Philip critical acclaim as a must-see, must-hear, and must-experience showman. Happening upon Rideau Vineyard late last year, Philip was so taken with the wines, the history, and the ambiance of the estate that he and his management team have returned each season. Through the experiences Philip has shared with Iris and the staff at Rideau Vineyard -- all while sipping his favorite Rideau Wines -- he has been inspired to create music in accordance with each of these passing seasons, as each visit has allowed for a new perspective of the qualities that make Rideau Vineyard a much-loved destination. CELLAR CLUB NEWSLETTER PAGE 2 September Shipment Wines CASE SPECIALS 2007 SBC Pinot Noir 2010 Reserve Estate Viognier There is no bottle of Rideau white wine more savored and extolled than our Estate Viognier. Iris fell in love with the Viognier grape many years ago, and through her passion for it, we know that many of you Composition: 100% Viognier have as well. Suppressed, ignored, Aging: 40% Neutral French Oak (4 mo.) and uprooted for its reputation 60% Stainless Steel as an unusually finicky grape, Viognier had seen a drastic decline in plantings over the last century, even verging on extinction, but is now beginning to resurface, making an especially large impact on the California Central Coast. Despite finding ideal conditions in this region, the grape remains unwieldy on the vine, requiring much attention and dedication to guide it safely towards harvest. Our 2010 Reserve Estate Viognier is one of two Viognier varietal wines we produced that year, and is one of our first to feature mild neutral oak aging. This neutral oak does not impart heavy oak flavor, but bestows a richness to the body that is not achievable using only stainless steel. The nose is immediately alluring, with notes of honeysuckle, guava, and vanilla bean. The creamy palate is replete with tropical fruit and is balanced by a soft acidity. An excellent addition to our long line of premium Viognier! 2009 Sangiovese Although Rideau is best known for its Rhône varietals, there is no doubt that one of our signature wines features an Italian varietal: Sangiovese. Evocatively named “the blood of Jove” by the Romans (after Jove, King of the Gods), this hearty, eminently drinkable fullbodied red is dark, meaty, and fruit-forward. Notes of framboise, blueberry, and sweet tobacco lie upon well-integrated tannins that run through the entire course of the palate to a finish that lingers literally for minutes. Our 2009 Sangiovese is very age-worthy, yet drinkable now, and is best paired with Italian cuisine such as mushroom risotto or chicken parmesan. $218 (Retail Case Price: $336) 2009 Estate Roussanne $144 (Retail Case Price: $240) Italian Wine Vino Italiano I taly is home to an immense and influential wine culture – one of the largest in the world. In fact, in recent years, it has managed to surpass France as the foremost producer of wine in the world, which is quite a feat. And just so we know that all that wine doesn’t go to waste, the Italian people also consume the most wine of any country in the world. Compare their 70 liters per capita to our 25 and it’s easy to see the relative insignificance of our wine drinking habits! Like those of France, Italian wines are primarily named after the region from which they originate, then organized into categories that range from Vino da Tavola (table wine), to the more prominent (and expensive) Denominazione di Origine Controllata. The naming conventions of Europe can be a little confusing to Americans, but you’re more likely to recognize the varietals contained within many of their most prominent wines. For example, the high-end Brunello di Montalcino, as well as Chianti, and what are known as “Super Tuscans,” all prominently feature Sangiovese, a varietal that you’re receiving in your shipment this month. The renowned Barolo, as well as Barbaresco and Gattinara, all contain the Nebbiolo grape. The world of Italian wine is vast and varied, as can be expected from a culture that has been in the business since 800BC. Enjoying Italian cuisine with native Italian grapes is one of the great pleasures of food & wine pairing, so if you love our Sangiovese, we encourage you to further explore the realm of Italian wine! Solvang, CA 93463 Chicken Parmesan Preheat the oven to 500 degrees F. Ingredients • 3 tablespoons olive oil • 1 teaspoon chopped fresh rosemary leaves • 1 teaspoon chopped fresh thyme leaves • 1 teaspoon chopped fresh Italian parsley leaves • Salt and freshly ground black pepper • 8 (3-ounces each) chicken cutlets • 1 1/2 cups Simple Tomato Sauce, recipe follows or purchased marinara sauce • 1/2 cup shredded mozzarella • 16 teaspoons grated Parmesan • 2 tablespoons unsalted butter, cut into pieces Simple Tomato Sauce • • • • • • • • • • 1/2 cup extra-virgin olive oil 1 small onion, chopped 2 cloves garlic, chopped 1 stalk celery, chopped 1 carrot, chopped Sea salt and freshly ground black pepper 2 (32-ounce) cans crushed tomatoes 4 to 6 basil leaves 2 dried bay leaves 4 tablespoons unsalted butter, optional Stir the oil and herbs in a small bowl to blend. Season with salt and pepper. Brush both sides of the cutlets with the herb oil. Heat a heavy large oven-proof skillet over high heat. Add the cutlets and cook just until brown, about 2 minutes per side. Remove the skillet from the heat. Spoon the marinara sauce over and around the cutlets. Sprinkle 1 teaspoon of mozzarella over each cutlet, then sprinkle 2 teaspoons of Parmesan over each. Sprinkle the butter pieces atop the cutlets. Bake until the cheese melts and the chicken is cooked through, about 3 to 5 minutes. ~ In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors. Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce. If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.
