THE PRINCIPALITY OF MONACO
The Principality of Monaco is situated on the French Riviera, between France and Italy. The state has enjoyed a strong
heritage ever since it became an international attraction, following the rule of Prince Charles III in 1860.
The privately owned Hotel Metropole first welcomed guests in 1886 and had been quickly renowned as one of the most
glamourous place of Monte-Carlo.
The Hotel Metropole Monte-Carlo is located in the Golden Square of the Principality in close proximity to the luxurious
amenities of Monaco, just a few steps away from the Casino, the luxury boutiques and beautiful gardens. A few meters
away from the sea and not far at all from the snowy mountains, Monaco suits all types of activities.
Spring and Summer are the busiest months in Monaco gathering all types of events such as galas, multi-national
popstar concerts, performances of the Ballets de Monte-Carlo, international festivals, art exhibitions etc.
Monaco’s pinnacle season is undoubtedly May with the Formula 1 Grand Prix taking place each year which has
definitely become a not-to be missed event. The Grand Prix attracts thousands of visitors and has definitely become the
major event of the Principality. The Hotel Metropole Monte-Carlo is lucky to have a very good location offering a clear

HISTORY OF THE METROPOLE
ONCE UPON A TIME, THE METROPOLE
DATING BACK TO 1889 AND EXPERIENCING EVER
SINCE A LONG SEQUENCE OF WONDERFUL DAYS AND
BALMY NIGHTS.
It came into being in the euphoria and prosperity of the
"Belle Époque", towards the end of the 19th century. Before
being acquired in 1886 by the Monte-Carlo Hotel Company
Ltd., the land on which the first version of the Hotel
Metropole Monte-Carlo was built once belonged to Pope
Leon XIII. So much for the birth certificate of one of the
flagships of the hotel scene in the Principality. American
novelist Edith Warton may have had it in mind when she
wrote "The House of Mirth", published in 1905, with one part
set in Monte-Carlo. She paints a picture of a Garden of Eden,
dazzling architectural luxuriance and tropical gardens, all
“standing out against the mauve mountains, which provided
a magnificent backcloth…”. Nostalgic signs of the beautiful
setting of which the Metropole has continued to offer an
emblematic representation ever since it opened, with its
landscaped gardens and a façade in patrician palace style,
flaunting the flamboyant neo-classic taste typical of
residences built in the "Belle Époque".
A silky bubble of enchantment
Right from the start, the hotel attracted an international elite,
businessmen and great names belonging to the aristocracy.
The era dedicated itself to the pleasures of refined
vacationing, for which the Metropole became one of the
most highly-prized addresses on the Côte d’Azur. Almost a
century passed by, until the 1980's. A real fan of Monaco,
Lebanese developer Nabil Boustany acquired the Metropole
and undertook a major operation to restore its former
brilliance. Re-named the Metropole Palace, it pursued its
goal of velvety luxury, warmth and hospitality. A silky bubble
of enchantment, a place of meditation sheltered from
agitation though right at the heart of town, the address drew
ever wider attention for its fundamental values. An
exceptional approach, today more than ever its own, thanks
to a second complete restoration of the hotel. Work began in
the autumn of 2003 and the hotel emerged from its chrysalis
in the summer of 2004; the Hotel Metropole Monte-Carlo,
the official name of the new 5-star establishment which
then opened its doors on the site. Here, a new concept of
prestige hotelry unfurled its wings, in exemplary softness
and serenity. An exceptional voyage to the heart of Monaco
and the pinnacle of luxury…

In 2003, the Hotel Metropole Monte-Carlo selected leading names in the fields of design, gastronomy and
well-being to open a new chapter to the hotel.
A DREAM TEAM…
Jacques GARCIA, Interior Architect
Internationally renowned architectural and interior designer, Jacques Garcia,
was selected to recreate the interiors and the exterior landscape of the Hotel
Metropole Monte-Carlo as part of the property’s multi-million pound
renovation plan.
Garcia, who has redesigned hotels in Paris, Geneva, New York, Beirut and
Marrakech, has also transformed the 126-room hotel from an old world luxury
property typical of Monte-Carlo, into a hipper, more contemporary location
unlike any other in the Principality.
Jacques Garcia adapted his “Signature Designs” to produce a warm,
Mediterranean interior for the Metropole.
Jacques MESSIN, Landscaper
Jacques Messin, a Parisian Garden Designer, has worked in the botanical
industry for over twenty years. His wealth of knowledge was created through
several years of higher education; beginning at the School of Architecture,
moving onto the Institute of Political Studies, and finally the University of
Paris.
Messin uses the three major tools of landscaping perfectly; the pen, the spade
and the secateurs. In his career he has worked on the Parisian terraces,
France’s private gardens as well as gardens of prestigious castles.
Didier GOMEZ, Interior Designer
Didier Gomez designed Yoshi, the hotel’s Japanese restaurant by Joël
Robuchon. His previous work included the decor of Asian inspired restaurants,
"The Mood" in Paris, as well as his collaborations with prestigious brands such
as LVMH, Vivendi, Ferragamo, Céline, Jean-Paul Gaultier, Yves Saint Laurent
and Armani.
In 2008, Yoshi opened at the Hotel Metropole. The dining room opens onto a
Japanese inspired garden designed by Jacques Messin. The landscaper worked
closely with Didier Gomez to create a real transitional space between the
interior and exterior of the restaurant, creating harmony with the surrounding
environment.
Joël ROBUCHON,
Chef and Creator of the restaurant concepts
Joël Robuchon, the world’s most Michelin-starred chef, was born in 1945 in Poitiers, France.
Following his extensive studying and research in the culinary field, he has been rewarded
with several awards, such as the "Chef of the Century" by Gault Millau and the "Best
Restaurant in the World" by the International Herald Tribune.
As a teacher and innovator, Joël Robuchon has constantly created iconic recipes for the
public. A true musician to the heart, Joël Robuchon considers his cuisine like music, an
authentic art that includes technique and rigour.
In 2004 he developed with Christophe Cussac and his team a special original and innovative
concept for the Hotel Metropole Monte-Carlo. With his vast experience in Mediterranean
cuisine, the two chefs collaborate to create menus highlighting classic dishes blended with
contemporary flavours and Mediterranean styles.
Christophe CUSSAC,
Head Chef
Christophe Cussac is Joël Robuchon’s protégé. He has worked along his side in several wellestablished and famous properties before running the Cussac‘s family hotel in French
Burgundy.
Later, Cussac heads to the south and becomes Chef at La Réserve Hotel in Beaulieu-sur-Mer
(French Riviera) from 1997 to 2004 where he was rewarded with two Michelin stars.
In 2004, Christophe Cussac joins the Hotel Metropole Monte-Carlo for the reopening where
he supervises all the restaurants of the property. Chef Cussac is thrilled to be part of this
wonderful adventure with Joël Robuchon and as pure visionaries they imagine tomorrow's
gastronomy by getting their inspiration from their experience and clients’ feedback.

Karl LAGERFELD
Fashion designer, Photographer, Editor
Karl Lagerfeld is the master of reinvention, having repeatedly transformed
himself as well as his labels. He is currently the creative director of
Chanel, Fendi and his eponymous label. He has previously designed for
Chloe and created a range for H&M.
In 2012, Mr. Lagerfeld was called in to design the pool-area into a “haute
couture” setting now named as ODYSSEY. A pool, terrace, gardens, poolhouse: the various areas entwine their curves, the different elements melt
into each other around the heated sea-water pool in a great splash of
light conceived by the fashion legend designer.
Béatrice ARDISSON,
Sound Designer
Béatrice Ardisson is the Sound Designer of the Hotel Metropole MonteCarlo. She was thrilled to work on this projects alongside famous artists
and designers. Inspirations came right away and she composed a sleek
and contemporary musical atmosphere.
In the 90’s, Beatrice Ardisson worked as sound designer for a TV show
Paris Dernière resulting in the release of several records distributed in the
United States, Spain, France etc. The mix composer Ardisson also works
prestigious brands such as Louis Vuitton, Jules & Jim etc.
Her work in the Hotel Metropole Monte-Carlo is based on a “Riviera
Glamour” concept creating a chic and sensual ambiance.
SERGE ETHUIN, GENERAL MANAGER
« It’s a great honor to be chosen to manage the Hotel Metropole Monte-Carlo,
for which I always felt a particular emotion.
My main objective is to accompany and lead the teams in order to build
together the future of this mythical establishment».
Serge ETHUIN
Graduated in 1982 from the Ecole Hôtelière in
Strasbourg, Serge Ethuin began his career in 1983
working for the Hilton Group as a receptionist at Hilton
Paris, as well as in Strasbourg and Orly.
He quickly evolved within the same group as front desk
manager then business development manager assuming
functional as well as operational responsabilities.
In 1997, he is entrusted with the general management of
the Hilton Madagascar and successively Hilton Rome
Airport and Hilton Arc de Triomphe.
The year 2008 marks his arrival at the head of a
legendary Roman establishment: Il Rome Cavalieri,
which will become the first european hotel to integrate
the prestigious Waldorf-Astoria Collection.
During six years, Serge Ethuin will inspire a new
dynamic through the three Michelin Star restaurant La
Pergola, the Grand Spa Club, the unique Art collection
and will significantly expand all emerging markets for
the hotel. In 2011 he is awarded « Best General Manager
» by Waldorf Astoria Worldwide.
After 30 years within the Hilton Group, Serge Ethuin
takes the reins of the Royal Monceau Raffles Paris
confirming the Palace position in the Parisian and
international hotel scene.
His accession as General Manager of the Hotel
Metropole Monte-Carlo is a new challenge ahead for
this accomplished professional.

At Joël Robuchon's 2-star restaurant, the refined and very
comfortable setting provides an unostentatious décor for
warm, attentive service. Here, everyone’s attention is focused
on the dishes, in which everything revolves around
outstanding ingredients.
While the chef's cuisine is very well-suited to the warm
Mediterranean ambiance created by interior architect Jacques
Garcia, it is hard to pinpoint exactly what it is that gives rise to
this delightful feeling of conviviality: the fact that it opens out
to the sea? The sumptuous Gobelins tapestry? The velvety
armchairs? The warmth of a parquet floor made of exotic
wood? The simplicity of a relaxed but irreproachable welcome?
One's gaze is already drawn elsewhere, fascinated by the
spectacle of the open kitchen and "tepanyaki" where
Christophe Cussac, Executive Chef of the Kitchens, and his team
are busily and deftly performing a subtly orchestrated
choreography. This is a hallowed moment, and guests have
their own role to play. For Joël Robuchon, sharing and making
people happy is all about transparency.
Refined cuisine, healthy and simple
With a fondness for the Mediterranean, the menu promises a
Garden of Eden which you are invited to discover by the staff,
well-versed in discreet attentiveness and helpful advice. The
menu is easy to read, the ingredients are immediately
identifiable. The unrivalled master of precise cooking and
seasoning focuses on essentials, giving priority to flavours and
textures, combining healthiness with tastiness.
You opt for crayfish presented in a crisp wrapping with basil,
quail which arrives caramelized and stuffed with "foie gras",
accompanied by potato purée with truffle. Curiosity impels you
to investigate the extensive choice of dishes in small sampling
portions. The head wine waiter, Frédéric Woelffle, meets all
your desires. You must leave room for homemade bread and
the dessert trolley. And plan your return...

YOSHI* - THE UNIQUE JAPANESE- STYLE RESTAURANT,
SIGNED JOËL ROBUCHON
When Joël Robuchon wanted to share his poetic, contemporary vision
of Japanese cuisine here in France, he decided to open his restaurant
at the Hotel Metropole Monte-Carlo. Unique worldwide, it was
awarded a Michelin star in 2010.
“Proposing the exceptional in all simplicity is undoubtedly the most
challenging task," says Joël Robuchon. “In Monaco, we are fortunate
in having a discerning clientele in search of natural simplicity, and
Yoshi's success is this quest for naturalness.” Here, the chic and sobre
decor designed by French interior architect Didier Gomez blends the
preciousness of ebony, stone and silk with wonderful light in hues of
green, white and ivory. Large enough for about 40 privileged guests,
the restaurant opens out to a garden of Japanese inspiration, a
protective screen of greenery designed by landscaper Jacques Messin.
And the menu is in perfect osmosis with this light, serene ambiance.
Divine goodness*
With the complicity of Japanese chef Takéo Yamazaki - one of his
most loyal collaborators -, Joël Robuchon took on the challenge of
treating Yoshi to healthy, modern cuisine, typically Japanese but
carefully adapted to the Western palate. Based on this concept, their
collaboration was crowned 15 months after the opening by a star in
the Michelin Guide. The open kitchen and sushi bar ensure
transparency. Sushi, maki and sashimi, teppan-yaki meat and fish
compete for freshness, and guests taste here the best saké and
Japanese green teas. Yoshi? People come out of curiosity, are won
over by quality, and return for sheer enjoyment!

enhanced by artistic floral compositions reflecting the seasons,
the warmth of ancient works of art. Nowhere else more than

Background music signed Béatrice Ardisson accompanies each
moment of gourmet enjoyment: the discovery of rare and
precious alcohols, or personalized cocktails proposed by the
head barman, Michaël Bellec; the arrival of the pastry trolley
with its luscious macaroons, tasty lemon tarts, candied fruit
cake at tea-time; the certainty of being in just the right place
while relishing “Vitello Tonnato with aromatic herbs”,
“Carpaccio of beef with virgin olive-oil” or a simple “Club
sandwich with chicken or smoked salmon, garnished with
bacon”. Just like the pastries, these dishes are from the kitchens

In an "Haute Couture" setting imagined and designed by Karl
Lagerfeld, Joël Robuchon's third restaurant plays the ace of
freshness and lightness.
Happy he who, like Ulysse, embarked upon a long voyage... and
discovered the Odyssey! A beneficial port-of-call, a source of
new energy, where time stands still. A pool, terrace, gardens,
pool-house: the various areas entwine their curves, the different
elements melt into each other around the heated sea-water pool
in a great splash of light conceived by designer, couturier and
photographer, Karl Lagerfeld. With the fascinating photographic
fresco on glass screens dedicated to the Greek hero's adventures,
reality outdoes the myth in an epic version revisited by the artist.
A unique experience, exclusive to the Hotel Metropole MonteCarlo, reserved during the day for hotel residents and "Odyssey"
members of the SPA.
A place which dresses and undresses, depending on the season.
Covered in winter, it opens up to the sky in spring. Its walls move
aside, its horizon widens. The restaurant area around the pool
makes way for comfy sun-loungers, moving out to the coolness
of the terrace under the protective shade of large white sails. The

Thanks to his expertise in decoration, designer Jacques Garcia
has given brilliant illustrations of his talent in the most
renowned international hotels. For the Hotel Metropole MonteCarlo, he composed the most harmonious example of chamber
music, endowing the hotel with a score blending warmth and
luxury in chic but cosy tones. A kind of magic formula, whose
wonderful effects are felt in all the 126 guest rooms, all
categories combined.
Decorated in Mediterranean style, they seem to have stepped
out of a scene in a noble residence. Headboards shaped as if
with a scroll saw, the most refined fabrics selected from a
palette of glowing and shimmering hues, wood with a patina of
honey-coloured varnish… The charm of these finely-wrought
interiors casts its most delicate spell.
Space and comfort
The most dominant feature in the decor gives priority to light
and a feeling of refined comfort. Against this backcloth, the 64
suites come with separate sitting-rooms and a balcony for the
bedroom. The notion of space is thus magnified, maximized, to
attain a surface area of 240 m2 in the Suite Carré d’Or, the largest
in the hotel. As for the bathrooms, they play an important part
in the overall layout. In white Carrara marble, with massage jet
showers, large bathtubs and double hand-basins, they fit
beautifully into the luxurious atmosphere that reigns in all the
Metropole's rooms and suites.

To meet its clients' expectations, the Metropole SPA cultivates a

Pedi:Mani:Cure Studio by Bastien Gonzalez, a fitness studio and
ten treatment rooms. It also proposes a stimulating and original

PEDI:MANI:CURE STUDIO BY BASTIEN GONZALEZ
The internationally renowned podiatrist Bastien Gonzalez proposes exclusive treatments in Monaco performed by talented
studio manager Christophe Champs.
Bastien Gonzalez, foot specialist to the stars, is famous worldwide for his
glamorous and unique approach to foot treatments.
Bastien Gonzalez started skiing at a young age but got seriously injured
during a racing competition. Consequently, he spent six months in
physiotherapy, where he met a podiatrist. Then, he realized that he had
discovered his vocation and moved to Paris to start his three-years
Podiatry training.
The passion for his profession has brought him to the highest levels of
perfection in terms of quality, innovation and « savoir-faire » and has
earned him the privileged status of «foot Virtuoso».
The uniqueness of his concept lies in the fusion of well-being and
beauty.
His treatment protocols are focused on the nails. Firstly on their
integrity thanks to medically designed protocols; then, their shine

The Hotel Metropole Monte-Carlo is
equipped with 6 conference rooms. Elegant
and spacious, the meeting rooms are all
located within the property.
The « salon Méditerranée » overlooks the
Mediterranean sea and the Casino’s gardens.
The « Théâtre » and the « Foyer », two
distinctive meeting rooms, can be joined
together to offer a greater space for larger
events. Ideal for film projections,
exhibitions, press conferences etc.
The meeting rooms Homère, Ulysse and Penelope were imagined by Karl Lagerfeld, they are located on the
1st floor of the hotel and all enjoy natural lighting. Adapted to welcome business clients they all have hightech conference equipment, Wi-Fi access, ADSL telephone line.

Bliss for young and old alike: here, the rule applies to
everyone. Throughout the summer holidays, the
Metropole has made arrangements to lay on
preferential treatment for its young guests (aged 4 to
12). Head for the KClub in the hotel, which welcomes
children and offers entertaining and playful activities
(from colouring books to parlour games and video
consoles to suit the age range) or a wide choice of
films.
On site, two qualified attendants take care of their
young guests, making sure they are comfortable and
creating an atmosphere in which they enjoy
themselves and have lots of fun. All in a very colourful
setting inspired by the "Rio" cartoon, accompanied
by figurines of Yoshi, the hotel mascot, and friend
Yumi.
In the rooms, by the pool at Odyssey, other attentions
and tailor-made delights await children. Finally, a
multilingual baby-sitting service can be booked in
advance with the hotel's concierges. For stays under

of Monaco on a urban circuit created in 1929.
Today the Grand Prix is the major event of the Principality and a key race in the Formula 1 World Championship.

MONACO YACHT SHOW
The Monaco Yacht Show is one of the major annual events of the Principality unequivocally the world’s most
renowned Yachting event.
Taking place every September at the Port Hercules, the 2014 event turned out to be a record-breaker counting up more
than 33,000 visitors and 115 exhibited yachts.
In Monaco the Yachting remains an authentic lifestyle, a state of mind and even a real philosophy.
In 2014, the Principality opened the new Yacht Club building designed by the architect Norman Foster. Today, the Yacht
Club has 1,300 members including many famed personalities from 66 different countries. A quarter of the 100 biggest
yachts in the world belongs to Monaco’s yacht club members.

SOCIETAL COMMITMENT
NAMASTE, ASSOCIATION FROM MONACO
Since 2009, the Hotel Metropole Monte-Carlo is involved with the
association NAMASTE, in concrete projects – mostly for education
and training in Rigaon , Nepal.
Following two major events « Arty Spring » (summer 2009) and «
Met’Art » (autumn 2010), funds were raised and allowed the
construction of primary school inaugurated by TT.SS.HH Prince
Albert II and Princess Charlene in October 2011.
In June 2013, the hotel commits to a third project to collect
enough funds to build a high school for 250 students of Rigaon ,
Nepal.

PLASTIC CAPS & CORK COLLECT
The hotel is involved in waste sorting initiatives and recycling,
through the « Green attitude » policy of the establishment.
Collecting plastic caps and corks was easy to start and put in
place.
The Metropole staff collects plastic caps to give it to the
association « Les Bouchons d’Amour », who sells them and uses
the money to purchase handisport material for disabled people.
The cork collection is for the benefit to the France Cancer 06
Association.
ENVIRONMENTAL COMMITMENT
Towards the Planet...
The main goal of our commitment is to prevent , control
and reduce our impact on the environment. Each year, an
action plan is established listing our upcoming projects
and new ideas. Since August 2010, the Hotel Metropole
Monte-Carlo has chosen to participate to the GreenResponsibility Chart of the Young Economic Chamber of
Monaco. For instance, the Metropole follows the path of
H.R.H Prince Albert II of Monaco by choosing not to serve
red tuna (endangered marine species) in the restaurants.
Since 2012, our postage is now mainly sent using green
stamps meaning that the letter is delivered in 48 hours and
not transported by aircraft leading to a major decrease of
gas emissions.
Towards our collaborators…
Upon arrival, each new collaborator is given a booklet
explaining all the green gestures defined by job. During
their induction day, each employee is given a training
about the environmental policy of the Hotel that they are
expected to apply and respect on a daily basis. GREEN is
everywhere, displays, information send through email,
follow-up of the green events in Monaco. A suggestion box
and a Green Comity have been established to allow
everyone to participate in the improvement of our actions.
Towards our clients…
We favour electronic communications with our clients:

ebrochures
etc.
The introduction of the “Act Green” in the rooms suggests
our guests to reduce the laundry frequency as they wish.
This action enables to save water and cleaning products.
Our restaurants are also committed to serve local and
seasonal products and when possible organic agriculture.
Our guests also have access to the Chic Green Traveller Chart
as well as Green Activities programme available in Monaco.
Towards our suppliers…
A Green Chart is sent to our main suppliers and subcontractors. Each service of the hotel strives to select the
local suppliers.
Reducing energy consumption…
Each month we carefully study our energy consumption.
Each year we invest in technical equipment and
installations: motion captors in back-office areas, internal
and external LED lighting etc. On a regular basis, internal
audits are carried out and each year the Hotel participates
to the Earth Hour event.
Reducing water consumption…
We have a monthly follow-up of our water consumption.
The property has invested in technical equipment and
installations: touchless faucet, double flushing toilet etc.
Waste Management
Optimised management of stocks and raw materials.
Selective waste sorting: paper, glass, cardboard, batteries,
corks, used-tonner, cooking oil… Recycling bin in offices,
cafeteria and resting area. Bottle and can crusher. Training
sessions for the staff in association with the Monaco
Sanitation Company to improve our waste management.
