Learn how to make delicious bread at home -without the mess and stress of kneading. We will
explore ingredients and their roll in baking, how
fermentation affects flavor and how to hand shape
custom loaves of bread. You will get Emily's NJ
State Fair blue ribbon winning recipe (previously
top secret), 2 pain d’epi breads, 2 round loaves
ready to be baked at home and your very own
dough spatula. You will build the confidence and
skills required to recreate these breads flawlessly
at home. It's "kneadlessly simple" and nothing is
more satisfying than homemade bread.
Meet Emily!
Emily Downs fell in love with baking while
studying art in Italy. Soon afterward, she was
baking rustic wood fired breads at Bobolink Dairy.
Later she worked with NYC's renowned master
baker, Jim Lahey, at Sullivan Street Bakery crafting
traditional Italian breads. She has spent the last few
years adapting the techniques she learned
specifically for the home kitchen. She is passionate
about demystifying baking and making it easy, fun
and accessible for the amateur home cook. Tamaracks Country
