As fluffy as a pair of Hello Kitty bedroom slippers, the film, takes a soft look at the psychological, socio-cultural and erotic power of vertiginous footwear. “Today the high heel is the icon of desirable femininity,” Elizabeth Semmelhack, curator of the Bata Shoe Museum in Toronto, said via email. “Nothing damns a woman faster than to describe her as wearing ‘sensible’ shoes.” When not offering commentary by fashion historians and luxury shoemakers, God Save My Shoes peers into the wardrobes of the singer Kelly Rowland, who consoles the slingbacks she hasn’t worn in a while, and the self-designated “lifestyle expert” Baroness Monica von Neumann, who refers to her shoes as her “everyday lovers.” What separates the other shoeaholics on display from Shak is her feverish, Imelda Marcos-like desire to accumulate high heels, high heels and more high heels. Shak concedes that even her favourite shoes sometimes feel as if they were designed by Torquemada. Then again, she insists comfort is the least important factor she considers in choosing footwear. Typically she falls head-over-heels at first glance, seduced by the thrill of slipping into a new persona. “High heels have a high transformational quotient,” Valerie Steele, curator of the Museum at the Fashion Institute of Technology in New York, said by phone. “Try on a bathing suit in a boutique, and the unforgiving dressing room mirror reflects your same old self, exposing all your flaws. But try on a shoe, and your foot slips into a whole new identity.” High-heel hoarding has been vigorously explored by Jayme Albin, a psychologist who appears in God Save My Shoes. In an email Albin said that most collectors “become almost aroused with pleasure from them, and that is the reward in itself.” Which might account for Shak’s numerous one-night shoe stands. “Of my 1,200 pairs, maybe 300 I’ve worn one time,” she said. “Another 200 I still haven’t worn.” In her suburban home she mostly pads around like the old-time baseball player Joe Jackson: shoeless. A skeptic might ask why Shak needs 1,200 pairs of shoes when she’s only got one pair of feet. She addresses that impertinence during the opening minutes of the documentary. “I went through a period in my life where I was really unhappy,” she says, “and the only thing that made me happy was buying a pair of shoes.” Perhaps to atone for the $500,000 she has spent on retail therapy, she has given 200 pairs of her heels to charity and is starting a website called Beth Shak’s Designer Shoe Swap. “I’m in a better place now,” said Shak, who is divorced from an oil-futures trader. “I buy less.” She buys partly with poker prize money. Her biggest jackpot ($328,683) was won at a 2007 nolimit hold-’em tournament in Las Vegas while wearing $650 black Louboutin pumps. As always, Shak was fashion conscious. The company said the screen has more than 3.1 million pixels, or four times more than the current iPad NYT SYNDICATE PPLE updated the iPad recently with a high-definition screen, a faster wireless connection and several other refinements, all packaged in a device without any major design changes. As recent history has shown, though, Apple may not need a bold overhaul of the look of its tablet computer to attract waves of new buyers. The company said the new iPad would go on sale at a starting price of $499, unchanged from the last generation of iPads. The product will have a screen that provides a comparable level of clarity to the iPhone’s “retina display,” with higher resolution than conventional high-definition televisions, according to Apple executives. “That is distinctive and is a kind of leapfrog above existing and announced products,” said AM Sacconaghi, an analyst at Sanford C Bernstein & Co. And in a sign that Apple intends to more seriously protect its share of the tablet market, which is expected to get more competitive this year, the company said it would continue to sell its secondgeneration iPad, dropping the price to $399 from $499. At a company event, Apple also showed a new version of Apple TV, the company’s $99 set-top box for accessing Internet video, which streams movies in the sharpest of the high-definition video formats, called 1080p. The initial reaction to the tablet computer was mixed, as has frequently been the case of late with Apple’s new iterations. Apple’s stock price was about flat in regular trading, ending up 43 cents higher, at $530.69, a 0.1 percent gain. The new tablet, called simply the new iPad, with no numbers or letters after the name, is an effort to keep growth chugging along in a two-year-old business that has turned into a major franchise for the company. Apple’s $9.15 billion in iPad sales over the holiday quarter was almost double the amount of revenue Microsoft reported from its Windows software and not far from Google’s total revenue as a company during the same period. Speaking from the same stage where Steven P Jobs, the company’s late chief executive, introduced the second-generation iPad almost exactly a year ago, the company’s new chief executive, Timothy D Cook, said the iPad last quarter out- A sold the number of personal computers sold by any individual manufacturer. “In many ways, the iPad is reinventing portable computing and outstripping the wildest predictions,” Cook said. The new iPad, the third generation of the device, is nearly indistinguishable from its predecessor, though it is slightly heavier and thicker. The iPad will also allow users to dictate email, though Apple did not introduce an iPad version of Siri, a voicecommand virtual-assistant feature that proved popular on the iPhone 4S. Last fall, Apple disappointed some pundits and enthusiasts by making mostly incremental enhancements with the iPhone 4S. That product ended up squashing doubts to become a smash hit, leading to record sales over the holidays. During that time, Apple, based in California, solidified its lead as the most valuable company in the world, with a market capitalisation of almost a halftrillion dollars, well ahead of its nearest rival, Exxon Mobil. At times, Apple has wowed people by radically rethinking the design of its products. Several years ago, it overhauled its MacBook Air with a drastically thinner case. It gave the iPhone 4 a novel, hard-edged case that looked very different from the design of early iPhones. Charles Wolf, an analyst at Needham & Co, said those kinds of radical redesigns did not happen every year, partly because the smaller components and other underlying technologies that made them possible did not change at that pace. Wolf said he believed that more of Apple’s innovation was happening in software because it was not as encumbered by the development of outside technologies in that area. “I always look at Apple as a software company,” he said. The new iPad may show how durable Apple’s hold on the tablet market is. For most of the two years the iPad has been on sale, Apple has faced a phalanx of competitors from Hewlett-Packard, Research in Motion, Samsung and Motorola, yet none has established a firm beachhead in the tablet business. A few of those competitors, like HP, gave up. In a recent survey of American consumers with tablets by Forrester Research, 73 percent said they owned an iPad. That is a sharp contrast to the smartphone business, where Apple’s market share has steadily eroded as phones based on Google’s Android operating system have swept the market. Phones with Android software accounted for 51.6 percent of smartphone shipments worldwide in the fourth quarter, compared with 23.4 percent for the iPhone, according to Canalys, a research firm. Sarah Rotman Epps, an analyst at Forrester, said the iPad had maintained its grip on the market because most consumers bought it through retail stores rather than wireless carriers. “Android smartphones are selling like hot cakes because that’s what the carriers push,” she said. “With tablets, carriers are not the main destination for tablets.” The new iPad, though, is likely to face more serious challenges to the product’s dominance than in the past. Over the holidays, Amazon is estimated to have sold more than 5 million of its Kindle Fire, a smaller tablet that has attracted a new group of consumers to the category with a $199 price tag. Later this year, the first tablet devices to use Windows 8, a new operating system from Microsoft, are expected to hit the market. The software has been redesigned by Microsoft to take advantage of touch-screen devices. Apple sold 15.4 million iPads over the holiday quarter and has sold 55 million iPads in total since they first went on sale in 2010. Cook told the audience recently that Apple had sold 315 million iOS devices through the end of 2011 and that iPads, iPhones and iPods were now responsible for 75 percent of the company’s revenue. The chief criticism that some stalwarts of the PC industry have levelled at the iPad is that the device is not well suited for creating content, even if it is good for consuming it. Apple, though, sought to undermine that argument with a number of new apps. Those include a new version of its Mac software for editing digital photographs, iPhoto. Add pasta and cook for eight to ten minutes or until al dente; drain. Meanwhile, spray cooking oil in a large skillet and saute red bell peppers, garlic and cayenne pepper over medium heat for three to five minutes. Stir in sour cream and broth; simmer uncovered for five minutes. Remove from heat and stir in cheese. Toss hot pasta with sauce and season with salt and pepper to taste; serve. Serves: 4. FETTUCCINE WITH SWEET PEPPER-CAYENNE SAUCE Re-create snack cakes, cookies and chips at home JENNIFER STEINHAUER NYT SYNDICATE HEN you tuck into a snack cake, calories are really not the point. But the good news is that homemade treats can be more nutritious, in an expansive sense of the word, than the storebought variety, a nutritional analysis of these recipes shows. To wit: a one-ounce serving of real Fritos has twice the calories of the ovenmade, and not necessarily because one is fried and the other baked; it is likely that the commercial version has quite a bit of fat mixed into the dough. And though the commercial Oreos are 40 calories more per cookie, the two recipes could go easily toe to toe nutritionally. But on the cupcake front, you’re out of luck: the homemade version had nearly 9 grams of saturated fat and 59 milligrams of cholesterol, versus the commercial version, with 2.5 grams of saturated fat and 5 milligrams of cholesterol. Of course, that fat comes from butter, so you can decide whether that’s not such a bad thing. Homemade goodies. W HOMEMADE FRITOS Time: 30 minutes Ingredients: 80 grams (about 1/2 cups) stoneground or other fine cornmeal (do not use whole grain) 1/2 teaspoon salt, plus more as needed 1 teaspoon olive oil or vegetable oil Vegetable oil for frying, optional. Method Heat oven to 375 degrees. Cut two pieces of parchment the same size as a baking sheet and set aside. Bring about 3/4 cup water to a boil. In a small bowl, whisk together the cornmeal and salt. Add 1/3 cup boiling water and mix with a fork until smooth. Add one teaspoon oil and mix again. The batter should be thick and slightly runny; if necessary, add more boiling water one teaspoon at a time for the desired consistency. Place one sheet of parchment on a work surface, and scrape the batter into the centre. Top with the second sheet of parchment and gently roll out the batter to about 1/3-inch thick. Transfer the parchment and rolled batter to the baking sheet. Remove the top sheet of parchment and score the batter into small rectangles. Bake until golden brown, 12 to 15 minutes. Allow to cool and break apart. Sprinkle with additional salt, if desired, and serve. Or, fry the chips as described below. Set aside a plate lined with a paper towel. Fill a small skillet with about 1 1/2 inches vegetable oil. Place over medium heat and allow to heat for one to two minutes. Test with a small piece of a chip; it should sink to the bottom of the pan, sizzle, float to the top and turn pale golden brown in about 30 seconds. Fry half the chips, using a metal strainer to transfer to the paper towel to drain. Repeat with remaining chips. Sprinkle with salt, if desired, and serve. Yield: Two to four snack-size servings. FAUXREOS Time: 2 hours, plus several hours’ refrigeration before serving Ingredients: For the cookies: 6 tablespoons unsalted butter, at room temperature the centre of the undersides of half the cookies. To finish, top with remaining wafers and press down with your fingers, applying very even pressure so the filling will spread uniformly across the cookie. Place cookies in an airtight container and refrigerate for several hours before serving. Yield: 24 two-inch sandwich cookies. Method For the cookies: Using a mixer, cream together butter, sugar, brown sugar, salt, baking powder, baking soda, coffee powder and vanilla extract. With mixer still running, add egg yolks one at a time. Stop mixer and scrape bowl with a rubber spatula. Add flour and one cup cocoa, and Time: 1 hour 45 minutes Ingredients: For the cakes: Nonstick vegetable oil spray 80 grams (1/2 cup plus 2 tablespoons) cake flour 30 grams (1/3 cup) Dutch process cocoa 1/2 teaspoon baking powder 1/4 teaspoon baking soda Pinch of salt 2 large eggs, separated 1/3 cup canola oil 110 grams (1/2 cup) plus 2 tablespoons sugar resume mixing at low speed until the mixture is crumbly and uniformly blended. Scrape the bowl and knead the dough lightly to form a smooth ball. Transfer to a work surface and flatten into a disk. The dough may be rolled right away or wrapped in plastic and refrigerated for up to a week; bring to room temperature before rolling. Heat oven to 350 degrees. Lightly sift some cocoa powder onto a work surface, and roll the dough to 1/8-inch thickness. Slide a metal spatula under the dough to prevent it from sticking. Using a 2-inch round cookie cutter, cut out cookies and transfer to an ungreased baking sheet. The cookies will not spread during baking so may be placed close together. Knead and reroll the dough scraps to make more cookies. To add texture to the cookies, place any remaining dough in a mixing bowl. Mix with enough hot water until the dough has thinned into a paste. Transfer to a piping bag fitted with a very small tip, or a heavy duty Ziploc bag with a tiny hole poked in the corner. Pipe a design on each cookie; a tight cornelli lace design gives the impression of an Oreo. Bake the cookies until firm, about 12 minutes. Remove from heat and cool completely on a rack. For the filling: Using a mixer, cream together shortening or butter, confectioner’s sugar, vanilla and salt. Beat on medium speed for five minutes, scraping the bowl periodically. The long mixing time smoothes, whitens and aerates the filling. For assembly: Using a pastry bag fitted with a plain tip or a spoon, place one teaspoon (or more if desired) of filling directly onto For the filling 6 tablespoons unsalted butter, at room temperature 165 grams (1 1/2 cups) confectioners’ sugar 3/4 cup Marshmallow Fluff 2 tablespoons heavy cream For the frosting: 1/4 cup heavy cream 4 ounces bittersweet chocolate, chopped 1 tablespoon unsalted butter, at room temperature. Method For the cakes: Heat oven to 350 degrees. Coat the interior of a 12-cup muffin pan with nonstick spray. In a medium bowl, sift together the cake flour, cocoa, baking powder, baking soda and salt. Using a mixer, beat the egg yolks with the oil, 1/2 cup of the sugar and 2 tablespoons water. With the mixer at low speed, add the cake flour mixture and beat until smooth; set aside. In a clean bowl, beat the egg whites until soft peaks form. Add the remaining two tablespoons sugar and beat until stiff and glossy. Mix 1/4 of the whites into the batter, then fold in the remaining whites until no streaks remain. Divide the batter among the muffin cups, filling them halfway. Bake until risen and lightly firm, about 15 minutes. Allow to cool for five minutes, then turn out onto a rack to cool completely. For the filling: Using a mixer, beat together the butter, confectioners’ sugar and Marshmallow Fluff. Add cream and beat just until smooth. Plunge the tip into the side of a cupcake, filling just until you feel the cupcake swell. Repeat with remaining cupcakes. For the frosting: Heat the cream just until bubbles begin to form on the edges of the pan, add the chocolate and remove from heat. Stir until melted and smooth. Add the butter, stirring to combine. Dip the top of a cupcake into the frosting, flip and set aside. Repeat with remaining cupcakes. Allow frosting to set, about 20 minutes. 6. Lopez was in Brazil to promote Q’Viva, the Latin-focused talent show that she hosts with her ex, Marc Anthony. It airs on Univision and also Fox, which also airs American Idol. REALITY TV star Kim Kardashian reportedly wants to buy David and Victoria Beckham’s English home as a European base for her family. Christopher Chaney of Jacksonville, Florida pleaded guilty in Los Angeles federal court to unauthorised computer access, wiretapping and other felony charges contained in a criminal indictment. He was ordered to be held in custody and faces up to 60 years in prison, plus fines and restitution of about $2.5 million when sentenced in July. Chaney, who admitted hacking the emails of more than 50 celebrities, was arrested in October 2011 after an 11month investigation named “Operation Hackerazzi” by the FBI. Other victims included former Disney Channel star Vanessa Hudgens and Renee Olstead, one of the stars of ABC Family’s The Secret Life of the American Teenager. Other victims were identified only by their initials, including J A., B P, and L B. Chaney, a clerical worker, told a Florida TV station shortly after his arrest that he had become addicted to prying into the affairs of movie stars and did not know how to stop. His snooping resulted in nude photos of Iron Man 2 star Johansson and a bubblebath picture of Black Swan actress Kunis reaching gossip websites. Johansson said later that the photos of herself topless and wrapped in a towel with an exposed backside were taken for her then husband, actor Ryan Reynolds. Chaney admitted that he had emailed many of the photographs and other personal information that he stole from celebrities to another hacker and to two entertainment websites. “Today’s guilty pleas shine a bright light on the dark underworld of computer hacking,” said United States Attorney André Birotte Jr, whose office prosecuted the case. “This case demonstrates that everyone, even public figures, should take precautions to shield their personal information from the hackers that inhabit that dark underworld,” Birotte said in a statement. The uptempo record MDNA sees Madonna continue her love affair with dance music in an album dedicated to club-friendly tracks. And Madonna has lost none of her ability to push boundaries, just as she did 25 years ago with themes of sexuality and youth rebellion. The title, MDNA — an allusion to the drug MDMA or ecstasy — has caused a stir, while the music video for the second single, Girl Gone Wild, has been slapped with an age restriction after YouTube deemed it too raunchy for under 18 year-olds.
