These five basic principles guide our health disparities and cancer research agenda. Voter education, registration and and a working knowledge of the benefits of the Affordable Care Act so we will be equipped to advocate for continued health care reform. ALHMI Spotlights Mini-Grantee Grace Temple C.O.G.I.C. of Contra Costa County Grace Temple (GT) C.O.G.I.C. started is collaboration with the ALHMI in 2008 and early on embraced the Body & Soul Program as the template for its health ministry. Katrinka Trail heads up their health ministry. Through its Abundant Life mini-grant, GT began by incorporating fruit in all meals served, declared GT a ―Body & Soul‖ Zone, and provided nutritional information to members and community. In 2009 GT started the ―Scripture-cise‖ classes. These classes are offered during Bible study, where attendees have a Bible lesson and then they exercise to gospel music, and finish with a healthy snack. In 2010 GT provided a diabetes screening after one of its Sunday services. An overweight 13-year-old child was identified with an alarmingly high blood glucose level in the 200s. The child was admitted to Children‘s Hospital to be stabilized. There, the child was diagnosed with Type II Diabetes, and placed on insulin treatment. Grace Temple‘s Health Ministry Nurse is providing case management and following up with the child and the family routinely to support her treatment. In 2012 GT now includes the federal summer meals program during its summer vacation Bible school. This summer‘s meal program allowed GT to serve 125 children free lunch for 5 days a week through the entire summer while children were out of school. These healthy meals always include a fresh piece of fruit or fresh, raw vegetable. GT has already contracted to provide "Free healthy breakfast and lunches" every weekday through the "Seamless Food Program of The CA Department of Education." The Free Summer Breakfasts and Lunch Program for 2012 will be run from June 19th through August 3rd and will feature John Muir nutrition education and heart healthy exercise equipment donated to GT by and thru the ALHMI sponsored Body & Soul Program. GT's Pastor Henry Kelly recognizes the daily struggle that many in our community face in keeping their children well fed and fit in this economic recession. Grace Temple COGIC Body & Soul Program 3 Page 4 SUMMER 2012 Left: Pastor Ishmael Burch Below: Breast Cancer Family History Education Event Health Ministry Leader Patricia Matthews Bible Fellowship Missionary Baptist Church in Oakland became an Abundant Life Health Ministries St. Andrew Missionary Baptist Church in San Francisco has collaborated with the UCSF Abundant Life Initiative (ALHMI) partner in 2009 and adopted the Body & Soul – Healthy Eating and Living Program through their existing health ministry. The health ministry was formally established in 2005 and evolved from a 40 year old Nurses Guild Ministry. Sister Patricia Mathews, Health Ministry Leader says, ―We encourage every adult member to learn all they can and take action by knowing their numbers, controlling blood pressure, exercising, eating healthier and abstaining from smoking.‖ On February 26, 2012, Bible Fellowship partnered with a team of health professionals from the American Heart Association, Alta Bates Summit, local paramedics and nurses to offer health screenings and one-on-one consultation for church and community members to learn how to make healthier choices and access community resources to help improve their health. Health Ministries Initiative (ALHMI) since 2009. Their health ministry program was established in 2003. Pastor Ishmael Burch of St. Andrew is a champion supporter of the UCSF ALHMI and health ministry. He has served as an ambassador promoting nutrition, healthy eating, community gardening and prostate education. When UCSF announced a new Family History Breast Cancer Risk Education project, Pastor Burch and St. Andrew Health Ministry team members expressed interest in the project and attended trainings and community workshops to learn how to bring the information to their church. St. Andrew launched its first workshop, ―Know Your Story- Know Your Breast Cancer Risk‖ on April 15, 2012 to educate members about breast cancer that runs in families called hereditary breast cancer. Jump for Your Heart Priscilla’s Picks HHS HealthBeat Baked, broiled, not fried Vacation Bible School Over the past few decades, childhood obesity rates in America have tripled, and today, nearly one in three children in America are obese. During the summer months, Faith and Health Partnership offers a summer campaign for youth called Jump for Your Heart Vacation Bible School. The campaign is designed to encourage children to put down the video games, and bring back the art of jump rope, double dutch and fun outdoor activities. The campaign promotes healthy eating and encourages physical fitness among children to reduce the risk of childhood obesity. This year 14 churches in Contra Costa County will participate in the campaign, engaging youth in at least 60 minutes of physical activity and serving healthy meals and snacks during their summer vacation bible school. Eating fish the right way may help you and your brain. Researchers at the University of Pittsburgh looked at the cognitive benefits of eating fish, following elderly people for 15 years, tracking the effects on memory and learning. According to Dr. Cyrus Raji, a scientist and medical resident at the University of Pittsburgh Medical Center, Mercy Hospital. ―Individuals who consumed baked or broiled fish on a weekly basis scored higher on tests for working memory. Fried fish, on the other hand, does not confer this benefit.” Dr. Raji suggests eating fish the right way can sustain brain structure, reducing your risk for Alzheimer‘s disease. The study was presented at the Radiological Society of North America meeting and supported by the National Institutes of Health. Learn more at hhs.gov. The summer will be a great success! 4 Page 5 SUMMER 2012 Healthy Highlights & Healthy Happenings UCSF HDF CCC ALHMI Collaborates with California Council of Churches in ‘Faithful Reform’ event Men’s Health Committee receives new grant funding and finalizes Strategic Plan for 2012 and beyond April 2012 Members of the UCSF Helen Diller Family Comprehensive Cancer Center's Men‘s Health Committee (MHC) clarified their direction and focus for the future. The plan has led to immediate action. New Grant Funded: Unequal Treatment of African American Men with Prostate Cancer- A Needs Assessment to Inform Continuing Education for Community Under the leadership of Drs. Rena Pasick and Peter Carroll at UCSF and Dr. Justin Morgan, President of the John Hale Medical Society, a oneyear grant was acquired from the UCSF Mt. Zion fund. The project will develop a program of continuing medical education on state-of-thescience prostate cancer treatment targeted to clinicians serving the African American community and tailored to their perceptions and preferences. A research grant proposal was submitted to the National Cancer Institute to explore prostate screening decision-making among low-income African American men. Breast Cancer Family History Project informs the community April 2012 The new alliance of the ALHMI with the California Council of Churches brought 100+ Bay Area church representatives together in Oakland to learn the facts and dispel the myths about the nation‘s Health Care Reform Law. Members of local Bay Area church congregations received essential information on federal and state health care programs to inform them of what is available for everyone now – and what is coming in the future. Cancer 101 Workshop August, 2012 Could you explain to someone what is cancer? Are you familiar with the symptoms of cancer? Would you like to learn about ways to prevent cancer? The St. Paul of the Shipwreck Health Ministry will be presenting a series of Cancer 101 workshops on August 5, 12, 19, 2012 where you'll learn this and much more. Attend all three of these physician led workshops with time for questions and answers and receive a graduation certificate. Register for the Cancer 101 workshops by going to the Shipwreck website at: www.stpauloftheshipwreck.org April 2012 The Family History Project is a collaboration between the UCSF Helen Diller Family Comprehensive Cancer Center's Abundant Life Health Ministries Initiative, the African American Community Health Advisory Committee of San Mateo and John Muir Health to improve education about breast cancer that runs in families. In April, women gathered together in a workshop at San Francisco‘s St. Andrews and True Hope Churches to learn about and share personal experiences of Breast Cancer in families. In May, Oakland‘s Acts Full Gospel Church held its workshop. Page 6 SUMMER 2012 Highlights from 2011-12 Nourishing your Body and Soul Springtime Eating American Heart Association Sponsors Healthy Mac & Cheese Recipe Smaky Mac 1. By Michelle Thomas 2 cups (8 ounces), uncooked regular or whole wheat elbow macaroni 2 cups fat-free (skim) milk 3 tablespoons Gold Medal ® all– purpose flour 1 teaspoon Dijon mustard ¼ teaspoon salt ¼ teaspoon ground black pepper 1/8 teaspoon ground red pepper 2 cups (8oz) shredded reduced-fat sharp cheddar cheese 2. 3. 4. In 3-quart saucepan, cook and drain macaroni as directed on package. Return to saucepan; cover to keep warm. Meanwhile, heat oven to 350oF. Spray 8-inch square (2 quart) glass baking dish with cooking spray. In quart saucepan, stir milk, flour mustard, salt, black pepper and red pepper with wire whisk until smooth. Cook over medium heat, stirring constantly, until mixture boils and thickens. Remove from heat. Stir in cheese until melted. Add cheese sauce to cooked macaroni; mix well. Spoon into baking dish. Bake 20-25 minutes or until edges are bubbly. Source: American Heart Association Veggie Scramble Wraps Ingredients: 1 nonstick cooking spray 1 cup chopped fresh or frozen vegetables (bell peppers, onions, broccoli, and mushrooms) 1 cup egg substitute 2 (6-inch) flour tortillas ¼ cup grated lowfat Cheddar cheese Directions: 1. Spray a medium skillet with nonstick cooking spray and heat over medium heat. 6 2. Cook vegetables until tender, about 5 minutes. 3. Add egg substitute and stir until thoroughly cooked, about 5 minutes. 4. Warm the tortillas in the microwave for 5 to10 seconds. 5. Place half of the egg mixture in each tortilla and sprinkle with cheese. 6. Wrap the tortilla around the egg mixture and enjoy. Source: Soulful Recipes from the Network for a Healthy California Page 7 SUMMER 2012 Healthy Headlines Sugar Is a Poison, Says UCSF Obesity Expert American Cancer Society Annual Report – 2011 Update U.S. Cancer Death Rates Decline but Disparities Remain Article date: June 25, 2009 By Jeffery Norris Article excerpts: Article date: March 28, 2012 By Stacy Simon Article excerpts: ―The rise of obesity is usually blamed on too much eating and not enough exercising, but Robert Lustig, MD, a UCSF pediatric neuroendocrinologist, asks us to look beyond the obvious.‖ ―The rate of death in the United States from all cancers combined is continuing the decline that began in the early 1990s, according to the Annual Report to the Nation on the Status of Cancer, published online in the American Cancer Society journal, Cancer. The report‘s special feature section focuses on important risk factors for several types of cancer—excess weight and lack of physical activity.‖ ―But behaviors that some might refer to as gluttony and sloth are merely consequences of the true cause of the epidemic, Lustig says. The problem is the increase in sugar consumption. Sugar both drives fat storage and makes the brain think it is hungry, setting up a ‗vicious cycle,‘ according to Lustig.‖ Race and ethnicity Cancer occurrence and death rates vary considerably by race/ethnicity. For all cancer sites combined, African American men have a 14% higher incidence rate and a 33% higher death rate than white men. African American women have a 6% lower incidence rate but a 17% higher death rate than white women. Factors known to contribute to racial disparities in mortality vary by cancer site and include differences in exposure to underlying risk factors (such as smoking for lung cancer among men), access to high-quality screening (breast, cervical, and colorectal cancers), and timely diagnosis and treatment for many cancers. Insulin and Leptin ―Lustig‘s own groundbreaking studies more than a decade ago stimulated the development of his controversial ideas about metabolism and biological feedback in weight control. One not-yet-popular idea is that, calorie for calorie, sugar causes more insulin resistance in the liver than other edibles. The pancreas then has to release more insulin to satisfy the liver‘s needs. High insulin levels, Lustig believes, in turn, interfere with the brain‘s receipt of signals from a hormone called leptin which helps send a message that the appetite has been sated.‖ Weight and physical activity ―Each year, the report includes a special feature section. This year highlights the effects of excess weight and lack of physical activity on cancer risk. Colon, kidney, pancreatic, endometrial, a type of esophageal cancer, and breast cancer among postmenopausal women are associated with being overweight or obese. Several of these cancers also are associated with getting too little physical activity.‖ ―Lustig believes that fructose generates greater insulin resistance than other foodstuffs, and that fructose calories, therefore, fail to blunt appetite in the same way as other foods.‖ Sugar No Better Than Fat ―High-fructose corn syrup is a less expensive mixture of glucose and fructose. There is no point in belaboring the difference, Lustig says. ‗High-fructose corn syrup and sucrose are exactly the same,‘ Lustig says. ‗They‘re equally bad. They‘re both poison in high doses.‘‖ ―For more than 30 years, excess weight, not enough physical activity, and an unhealthy diet have been second only to tobacco as preventable causes of disease and death in the United States. In addition to increasing cancer risk, excess weight and lack of physical activity also increase the risk of heart disease, high blood pressure, diabetes, and arthritis.‖ ―Much of processed food labeled ‗reduced fat‘ instead has sugar added to make it more palatable, Lustig says. But when it comes to harmful health effects, sugar is worse than fat, he claims. Consumption of either results in elevated levels of artery-clogging fats being made by the liver and deposited in the bloodstream. But fructose causes even further damage to the liver and to structural proteins of the body while fomenting excessive caloric consumption, Lustig says.‖ ―The report notes that for people who don‘t smoke, maintaining a healthy weight throughout life may be among the most important ways to prevent cancer. Excess weight is thought to increase cancer risk by the way it affects immune function, inflammation, and hormones. The American Cancer Society recommends that adults get at least 150 minutes of moderate-intensity activity or 75 minutes of vigorous-intensity activity a week.‖ Four Simple Guidelines ―Lustig prescribes four simple guidelines for parents coping with kids who are too heavy: Get rid of every sugared liquid in the house. Kids should drink only water and milk. Provide carbohydrates associated with fiber. Wait 20 minutes before serving second portions. Have kids buy their ‗screen time‘ minute-for-minute with physical activity.‖ ―‗You are not what you eat; you are what you do with what you eat,‘ Lustig concludes.‖ The report concludes that continued progress against cancer in the United States will require individual and community efforts to promote healthy weight and sufficient physical activity among youth and adults.
