In 1983, the four Cabay brothers took over Herve Société, a cheese
dairy in Pays de Herve, a region of exceptional green pastures that
has always been close to the family’s hearts, as birthplace of the
world’s most flavourful cheeses.
There is only one method to make true Herve cheese which is passed
on from generation to generation, using the freshest milk from their
cows. The secret to their cheese production lies in the methodical
and precise ripening process that is in the hands of their workers.
The Master Cheesemakers at Herve Société are experts in their
field. In keeping with tradition that dates back over 100 years, their
cheesemakers keep a close watch over the long maturation process
of their cheeses.
Herve Société was awarded the British BRC certification, which
is your guarantee that they apply the most rigorous hygiene
and quality standards to their cheese production. Based on tight
controls and their own set of specifications, this system enables
