 Ramen Noodles
Serves 4
Noodles:
Ingredients:
3/4 Cups Flour
1 egg
about 3/4 tsp salt (or to taste)
about 1 Tbsp water (depending on flour and
humidity)
What you’ll need:
½ cup tofu, cubed
4 soft-boiled egg (see
instructions below)
noodles, cooked
One sheet of seaweed,
snipped into thin strips
1 green onion, thinly
sliced
2 carrots, matchstick
1 bunch bok choy, thinly
sliced
2 cups shitakes, thinly
sliced and sautéed
Hot broth, seasoned
Directions:
1. Mix the dry ingredients, make a well in the center, and beat the eggs
and water inside. Slowly combine the ingredients together
2. Once your ingredients are somewhat combined, dump the stuff onto
your CLEAN counter and start kneading. It should be a little stiffer
than bread dough. The dough is ready when your hands become
fairly clean and the dough does not stick as much anymore (and
when your forearms are sore). When it is the right consistency, you
should be able to lift your hand and the dough should fall off after
about a second.Once you have kneaded the dough, wrap in plastic
wrap and allow to rest for 20 minutes
3. Fill a large pot with water with and a tablespoon of salt and bring to a
boil
4. Using a pasta machine, roll out the pasta and hang to dry slightly.
Once slightly dried, cut your noodles by hand by rolling lightly and
slicing, or run though your pasta machine’s small noodle cutter
attachment
5. Once the water is boiling, add the pasta and stir. Boil for about 4-5
minutes, or until al dente. Drain noodles and place into 4 soup bowls
Soft Boiled Egg:
Ingredients:
4 eggs
Directions:
1. Fill a saucepan about halfway with water. Place the eggs in the pot
of water. Bring to a boil.
2. Fill a bowl with ice and cold water. Set aside
3. Once boiling, allow the water to boil for one minute.
4. Remove from heat and let sit for 4-6 minutes in hot water. 4 minutes
for a yolk that is still runny and 6 minutes for a yolk that is barely set
5. Scoop eggs out of hot water and place in ice water. Once cool to
touch, peel eggs, slice in half lengthwise and place in bowls with
noodles
To Assemble Ramen Noodle Soup:
Place your noodles, egg, seaweed, tofu, carrots, mushrooms, bok choy
and green onion in a large soup bowl. Pour the hot broth over until almost
covers the ingredients. Enjoy hot!
