My name is Andrea Johnson, I am the former Family & Consumer Science Agent from Magoffin County. I will be transferring to Floyd County as the Family & Consumer Sciences Agent on August 29, 2016. I am a Floyd Countian, born and raised. I attended Allen Elementary as a child and graduated from Prestonsburg High School in 2008. From there, I attended Big Sandy Community & Technical College and transferred to the University of Kentucky to pursue a Bachelor's in Science degree in Dietetics. During my time at UK, I was a two-time Extension Summer Intern in Floyd County in 2012 and 2013. I fell in love with Extension during my first summer internship and knew I wanted to become an Agent someday. I graduated from the University of Kentucky in December 2013 and began my professional career in Extension on January 1, 2013. I currently live in Floyd County in the Prestonsburg area. I have a beautiful family and spend all of my time outside of work with them. On the weekends, you'll find us at Archer or Jenny Wiley Park, at family functions, or at a local restaurant in downtown Prestonsburg. I'm excited to work in Floyd County with you all and, to be close to my friends and family. I love my job and putting forth my knowledge and efforts to make this community even better, healthier, and stronger. “Let’s Cook” Zippy Zucchini Cakes 2 cups shredded zucchini 1 cup shredded Mozzarella cheese 1/3 cup all purpose flour 1 egg white 1/4 tsp. dill 2/3 cup corn meal 1. 2. 3. 4. 5. 6. 7. 1 tbs. olive oil 2 large eggs 1/2 tsp. salt 1/3 cup whole wheat flour 1/4 cup skim milk 1 tsp. black pepper Combine the zucchini, eggs, egg white, milk and olive oil. Stir until just mixed Add the remainder of ingredients into zucchini mixture. For added zip, substitute Pepper Jack cheese for the Mozzarella, add 1 tablespoon chopped jalapeno pepper or 1/2 teaspoon crushed red pepper flakes Stir until moistened. Spoon the batter onto a lightly greased griddle or large non-stick skillet to form 2 inch cakes Cook 3 to 5 minutes or until the edges are lightly browned Turn and cook on the other side for 3 to 4 minutes. Serve Yield: 10, 2 inch cakes Nutrition Analysis: 80 calories, 2 g fat, 0 g sat. fat, 30 mg cholesterol, 140 mg sodium, 10 g carbohydrate, 1 g dietary fiber, 1 g sugar, 4 g protein Buying Kentucky Proud is easy.
