(940) 387.1717 Ext 321 Buttermilk Fried Chicken with Cream Gravy I n gr e d i e n ts 2 cups buttermilk 2 teaspoons garlic & pepper seasoning blend ½ teaspoon dried thyme ¼ teaspoon ground cayenne pepper 10 pieces (about 4 lb.) cut up chicken (breast halves, thighs & drumsticks) 1 cup buttery club crackers, crushed 1½ cups flour 1 teaspoon paprika ½ teaspoon kosher salt ½ teaspoon black pepper Vegetable oil, as needed 4 tablespoons flour 1¾ cups chicken broth ¼ cup heavy cream or milk P r e p a r at io n Combine buttermilk, garlic and pepper seasoning blend, thyme and cayenne pepper in large baking dish and whisk to blend. Add chicken pieces and turn to evenly coat. Cover and refrigerate for at least 4 hours or overnight. Remove chicken pieces and drain thoroughly; discard marinade. Preheat oven to 350°F. Crush club crackers; combine with flour, paprika, salt, black pepper and paprika in shallow bowl. Dredge drained chicken pieces in mixture to evenly coat, shake excess and arrange on baking sheet or platter. Heat oil in heavy skillet over mediumhigh heat. Working in several smaller batches, carefully add 5 chicken pieces to oil and pan fry on both sides until light golden brown, about 10 minutes. Remove chicken pieces from skillet and drain on paper towels. Repeat with remaining chicken pieces. Arrange fried chicken on baking sheet; bake uncovered for 10 to 20 minutes or until fully cooked. While chicken is baking prepare pan gravy; drain oil in frying pan, reserving 2 tablespoons oil and pan drippings. Add flour and whisk over medium-low heat for several minutes. Slowly add chicken stock, whisking constantly over medium heat, until gravy has thickened. Add cream and whisk to blend; simmer over low heat until warm. Taste and adjust seasoning. To serve; arrange fried chicken pieces on plates; top each with a small ladle of cream gravy. Low Back Pain and Golf: Part 2 Last month we touched base on your glutes being active in order to stabilize the low back. This month we are going a little more in depth about how the glutes can become inactive through a muscle imbalance called the Lower Crossed Syndrome (LCS), which is shown below. With this imbalance, I want to bring attention to the main areas around the hip that will involve tight/strong muscles that will result in long/weak muscles. This requires a more in depth screening to find your limitations. We are asking the membership to make reservations when coming out to dine. First off let’s talk about what muscles are tight during the LCS. We see the hip flexors (front hip) and the low back muscles (thoracolumbar extensors) get tight. When this happens two potential major pain generators occur. First, this will cause your abdominals and glutes to become weak or inactive and in turn causes instability of the low back. Second, the muscle imbalances will cause your belt line to point down to the ground causing the small of your back to have more of an arch (lordosis). This increase in arch engages the joints of the back too much which causes the low back to “lock-up” and will eventually cause damage to the joints. We also encourage you to contact the business office, the general manager or the board right away with any complaints, concerns, ideas or feedback. Now let’s talk about the muscles that are weak during the LCS. The tightness we just discussed will cause the glutes and abdominals to become long and weak. With this weakness we have just lost some major stabilizers of the back and a major source of rotational energy we need to increase club head speed. We kindly thank you in advance for your help! How does this relate to the swing? LCS will guarantee 1 of 3 major swing faults: early extension, loss of posture, or reverse spine angle which in turn causes havoc on the low back and will eventually keep you off the course. The greens committee would like to ask for your help in placing the rakes out of the sand on the bunkers edge. In order to keep a uniform and playable situation, please place the entire rake outside of the bunker. Please enter and exit the bunkers at the lowest level spot in the bunkers, this will help keep the sand consistent throughout the bunkers. Due to all the weather we have been having, the Demo Days have had to be rescheduled. Melissa started playing tennis when her and her husband, Robert, joined the Club in February 2009. Melissa had heard that DCC had a very patient tennis pro and she said that was exactly what she was going to need since she had never played tennis before. Two years and several lessons later, Melissa is now the captain of a 2.5 USTA tennis team and she just adores the DCC tennis ladies, many of whom are now her close friends. Melissa is a mom of two Argyle boys who are extremely active. She hopes that this summer she can get a few good family tennis matches in, to pass on her love for tennis. JIM COLLIN SCHOLARSHIP A scholarship for Denton Students has been set up in honor and in memory of Jim Collin, a valuable and key member who donated a lot of his time in making DCC what it is today. Over the years, Jim was Chair of the Marketing Committee, Vice President and President of Denton Country Club. Jim also was the facilitator of the ambassador clock that has been a beautiful addition to our 1st tee on our golf course, and recognizes other contributing members. Brian Cree, also a DCC member, was inspired to create and be the initiating sponsor of “The Jim Collin/Denton Country Club Business Foundation.” The Business Scholarship has been set up to give kids an opportunity for further education, one lucky recipient will be chosen every year. He and his wife Kayla raised three children through the Denton Public School System. Tom loved sports and in particular golf. Tom and Kayla helped the DHS golf program by funding a golf simulator and he was active in the DHS golf booster program. MEMORY WALK BRICKS M&M’S CORNER Messinger Reaches Finals of Country Club Tourney Mrs. Messinger, Dr. Pedigo in Play-off for Other Spot Grant Messinger this morning faced the prospect of meeting his wife in the final 18-Hole round of the First Annual Country Club Tourney. Mrs. Fran Messinger, the only lady in the championship flight of the six-flight tourney, birdied the 20th hole to beat Pinky Harpool 1-up to advance to the second round of play opposite Dr. James Pedigo. Denton Record Chronicle, July 8, 1962 Messinger Wins CC Golf Tourney 20 ft. Birdie Putt Sinks Dr. Pedigo’s Last Hopes A 20-ft putt on the 17th hole gave Grant Messinger a 3-1 victory over Dr. James Pedigo and the title in the First Annual Denton Country Club Tournament. Dr. Pedigo had defeated Mrs. Fran Messinger 4-3 Sunday morning to reach the finals against Messinger. Ann Pedigo defeated Ben Ivey 6-5 in the finals of the third flight. Denton Record Chronicle, July 9, 1962 That was the first Annual Men’s Championship Golf Tournament held at the new DCC course. According to the historical notes of Earl Vinson, it had been only a few years since a small group of members decided to restore the nine hole golf course that had lain dormant since the beginning of World War II. The first three holes were restored by a small group of members. Then in 1960, Grant Messinger was appointed chairman of the golf committee with the express purpose of finishing the golf course as soon as possible. Plans were made for financing the project, members donated equipment, and many spent time working on the course. Buster Creagh, the school teacher from Lewisville, worked tirelessly in the evenings and in the summer to finish the remaining six holes. Then in July of 1962, Buster was hired as club pro and maintenance chief for $75 a month. With the enthusiasm of that small group and Buster’s promotional abilities, that first “Annual Club Championship” consisted of six flights – 48 players!!! Because there are no complete lists of the early DCC club champions, the Denton Record Chronicle is the only source to find that information. By searching through the Archives of that newspaper, I have found the names of club champions in those first few years: 1962 – Grant Messinger; 1963 – Hal Jackson; 1964 – Rodney Harris; 1965 – Clayton Atkins; 1966 – Jim Pedigo; 1967—Rodney Harris; 1968—James Tritt; 1969—Chick Crain; 1970--?; 1971—Eddie Burrell; 1972 – Bob Hankins; 1973 – Bob Korba; 1974 – Bob Hankins. There are no records of those who won the championship from 1975 to 1982. Beginning in 1983, names were etched on to plaques – some of which were found stored in cabinets. If anyone can send to me the name of the champion in 1970, and the names of those who won from 1975 through 1982, I can add them to the list. Wouldn’t it be nice to have a special designated place to list all of the club champions at DCC?
