Guests of all ages will enjoy our newly renovated pool which features a waterfall, built by local contractor John Cupps. The pool is scheduled to be open year round. Overnight lodging guests of the lodge, have unlimited use of the pool and hot tub. Our local friends can purchase a pool punch pass. Chris Cameron is an International Wine Maker with a dynamic career in the wine industry that spans some 30 vintages and has a committed and passionate approach to all aspects of wine making. His vineyard is 2,500 acres of the central coast’s finest grape growing lands in Paso Robles, CA. Shimmin Canyon also boasts the oldest modern day vineyard in Paso Robles and Chris was awarded the 2008 grape grower of the year. With Chris’s knowledge of wine making, Stafford’s is working to produce four varietals, one for each of our premier dining locations. The first wine Chris will make is for the Pier Restaurant in Harbor Springs and will be a Cabernet Sauvignon- full bodied, with flavors of blackberry, cocoa and spices, firm tannins, subtle oak notes and a velvety finish. He will then produce a Pinot Noir for the Weathervane Restaurant in Charlevoix. This Pinot Noir will be medium in body with dark cherry, blue and black fruits, and earthy and robust, with hints of oak. At the Perry Hotel, Chris will be highlighting a lightly buttery, crisp acidity, creamy on the palate Chardonnay, which will have ripe apple melon and mineral and spice tones. And finally, the Bay View Inn in Bay View will have a fresh, crispy Sauvignon Blanc bursting with gooseberry and tropical fruit, perfect for hot summer days. You will recognize these particular wines at our restaurants by the custom label. We look forward to having these wine available to you by early summer. Cheers! Pulse until smooth. Add sour cream, buttermilk and mayonnaise. Blend. Add salt. Blend a bit. Keep cold until ready to serve. Jerk Wing Seasoning 4 oz. unsalted butter 3 1/2 Tablespoons Jamaican jerk seasoning 3/4 teaspoon Tabasco sauce 2 oz. tomato juice Melt butter, whisk in spices. Add Tabasco sauce and tomato juice. Blend well. Reserve for service. Wings Deep fry or bake wings until golden brown and cooked thoroughly. In a sauté pan, heat 1 1/2 Tablespoons Jerk Wing Seasoning. Toss wings into seasoning base.
