Summa vereint qualitätsbewusste Winzer
aus aller Welt, welche zeitgleich mit der
Vinitaly in Verona ihre Weine in Margreid
vorstellen. Die zweitägige Veranstaltung
findet im historischen Rahmen des Casòn
Hirschprunn statt, einem Renaissancepalast aus dem 17. Jahrhundert. In dieses
besondere Ambiente sind Fachleute
aus dem In- und Ausland geladen, um
erlesene Weine zu verkosten und mit den
Winzern persönlich in Kontakt zu treten.
Summa è un appuntamento annuale per
vignaioli d’eccellenza provenienti da tutto
il mondo che, in contemporanea al Vinitaly
di Verona, si ritrovano a Magrè per presentare i propri vini. L’evento di due giorni
si tiene nella storica cornice di Casòn
Hirschprunn, un palazzo rinascimentale del
Seicento. Un ambiente unico che accoglie
esperti italiani e stranieri offrendo loro la
possibilità di degustare vini pregiati ed
entrare in contatto diretto con i produttori.
Summa hat sich innerhalb von sechszehn
Jahren zu einer geschätzten und gut
besuchten Veranstaltung etabliert. An den
zwei Tagen im April 2013, begrüßten wir
rund 2.000 Gäste, zu denen Fachleute und
Journalisten aus über 35 Ländern zählten.
Nel corso degli ultimi sedici anni Summa
è diventato un appuntamento sempre più
apprezzato e di crescente affluenza. Nei
due giorni dello scorso aprile abbiamo dato
il benvenuto a ben 2.000 spettatori tra cui
giornalisti ed esperti di settore provenienti
da oltre 35 paesi.
Summa brings together quality-conscious
wineries from all around the globe. They
congregate in Magrè to present their wines
parallel to the Vinitaly in Verona. The twoday tasting event is held at the exclusive
historical venue of Casòn Hirschprunn, a
Renaissance palace dating back to the 17th
Century. In these unique surroundings,
specialists and experts from home and
abroad meet for a rare opportunity to sample selected wines and converse with the
winemakers in an atmosphere of elegance
and tranquility.
During the last fifteen years Summa has
established itself as a very successful,
overall appreciated and well attended
event. On the two days in April 2013, we
welcomed over 2,000 guests, all wine

anche nel 2014. Grazie al prezioso sostegno
di ospiti e organizzatori di Summa13 sono
stati raccolti oltre 36.000 Euro e devoluti a
diversi progetti umanitari in Burma.
Anche quest’anno si pone particolare
importanza al tema dell'ecologia:
Summa14, infatti, è realizzata secondo le
logiche di gestione di un Green Event. Vale
a dire che la pianificazione, organizzazione
e realizzazione dell’evento avvengono nel
rispetto della tutela ambientale.

Rudolf Steiners Impuls von 1924 zum
Gedeihen der Landwirtschaft fiel auf fruchtbaren Boden. Seitdem arbeitet eine starke
Demeter-Gemeinschaft daran, dass eine
gesunde Erde das trägt, wovon der Mensch
leben kann. Heute und in Zukunft. Mit allen
Kräften.
1924 hielt Rudolf Steiner in Koberwitz vor
interessierten Landwirten jene Vorträge, die
als „Landwirtschaftlicher Kurs“ Grundlage
der heutigen Arbeit von Demeter-Bäuerinnen
und -Bauern sind. Nun, 90 Jahre später,
wirtschaften in rund 50 Ländern etwa 8.000
Landwirte mit fast 160.000 Hektar Fläche
biologisch biodynamisch nach DemeterRichtlinien. Als internationale Bio-Marke ist
Demeter auf allen Kontinenten vertreten.
Den Pionieren in Sachen Bio ist es gelungen, biodynamisch mit der Marke Demeter
als moderne und zukunftsfähige Anbauweise zu etablieren. In vielen Bereichen setzt

Quando Rudolf Steiner, nel 1924, tenne

ottomila agricoltori distribuiti in cinquanta
paesi diversi coltivano circa 160.000 ettari in

Unter dem Summa14-Motto „90 Jahre

Jahre Demeter“ zeigen wir: biodynamisch
ist zukunftsweisend und hat Antworten
auf die Fragen, vor denen Ökolandbau und
Gesellschaft aktuell stehen.
Wir hoffen, dass wir mit unserer Initiative
einen kleinen Beitrag leisten für die Arbeit
der Demeter-Gemeinschaft und für die
Ausweitung in fruchtbare Allianzen mit allen Menschen und Organisationen, die für
eine Agrikultur der Zukunft einstehen.

biodinamica – 86 anni del marchio Demeter“. Vogliamo dimostrare che la coltivazione
biodinamica ha un futuro e fornisce risposte
concrete a molti dei quesiti irrisolti dell’odierna
agricoltura ecologica e della società di oggi.
Ci auguriamo che la nostra iniziativa sia un
contributo a promuovere la comunità Demeter
e a diffondere sinergie proficue fra tutte le persone e le organizzazioni che si adoperano per
una cultura agricola sostenibile e lungimirante.

Helfen ohne Grenzen
Bereits seit dem Jahr 2008 besteht die
Zusammenarbeit zwischen dem Weingut
Alois Lageder und der Hilfsorganisation
Helfen ohne Grenzen, die es sich zum Ziel
gesetzt hat, den burmesischen Bürgerkriegsflüchtlingen zu helfen.
Im Jahr 2011 übernahm das Weingut
Alois Lageder die Patenschaft über die
Flüchtlingsschule New Day an der Grenze
zwischen Thailand und Burma (Myanmar).
Knapp 400 burmesische Flüchtlingskinder
werden in den einfachen, aber zweckmäßigen Schulgebäuden unterrichtet und mit
gesundem Essen versorgt.
Ein beträchtlicher Teil der Mittel für die New
Day-Schule wird auch von den Besuchern
unserer jährlich stattfindenden Veranstaltung Summa gespendet.

Aiutare senza Confini
La collaborazione tra la Tenuta Alois
Lageder e l’organizzazione umanitaria
Aiutare senza Confini, che si pone l’obiettivo di aiutare i profughi della guerra civile
birmana, nasce nel 2008.
Nel 2011 la Tenuta Alois Lageder ha
adottato la scuola per profughi New
Day, che si trova al confine tra Thailandia
e Birmania (Myanmar). Qui circa 400
bambini profughi birmani hanno accesso
all'istruzione in una scuola semplice
ma ben strutturata, oltre ad avere diritto
a un pasto sano.
Una considerevole parte dei fondi per la
scuola New Day proviene dalle donazioni degli ospiti che ogni anno visitano la
nostra manifestazione Summa.
Help without Frontiers
The winery Alois Lageder and the
humanitarian organisation Help without
Frontiers, a non-profit organisation
supporting Burmese refugees, have been
collaborating since 2008.
In 2011 the Alois Lageder winery
adopted the New Day school for refugee
children on the border between Thailand
and Burma (Myanmar). Currently,
approximately 400 girls and boys are
being schooled there. The children are
taught in these simple but functional
school buildings and can enjoy every
day healthy food.
The generous donations at Summa
make it possible to cover big part of the
ongoing costs of the New Day school.

Green Events sind Veranstaltungen, die
nach umweltgerechten Kriterien geplant,
organisiert und umgesetzt werden. Dabei
sind Faktoren wie regionale Wertschöpfung,
umweltfreundliche Mobilität, Abfallmanagement, sowie soziale Verantwortung von
wesentlicher Bedeutung. Das nachhaltige
Konzept des Green Events hilft Ressourcen
zu sparen und somit längerfristig die Kosten
zu reduzieren.
I Green Events sono manifestazioni
programmate, organizzate e realizzate
secondo criteri di sostenibilità. I principali
fattori considerati sono il valore aggiunto a
livello territoriale, la mobilità sostenibile, la
gestione dei rifiuti nonché la responsabilità

realised according to criteria of environmental and social sustainability. Energy
efficiency, the management of waste, the
creation of added regional value as well

Neu ist dieses Jahr die „Going Green
Event“-Zertifizierung, die wir von der Landesumweltagentur erhalten haben!
Als besonders wichtige Bereiche möchten

Das Ökoinstitut Südtirol/Alto Adige mit
Sitz in der Talfergasse 2 in Bozen wurde
1989 vom Pionier der Ökologiebewegung,
Hans Glauber, gegründet und bietet heute
maßgeschneiderte Lösungen für Unternehmen und öffentliche Körperschaften in den
Bereichen Energie/Klimaschutz, nachhaltige
Mobilität, Umweltbildung sowie Nachhaltigkeit und Ressourcenschonung an. Alois
Lageder ist seit dem Ableben von Hans
Glauber im Jahr 2008 der Präsident des
Ökoinstituts.

Die Verarbeitung von Obst hat in unserer Familie eine lange Tradition. 1917 als
Rheinische Apfelkrautfabrik gegründet, haben wir im Jahre 1930 mit der Herstellung von
Obstsäften begonnen. Wir halten in 3. und 4. Generation an bewährter, handwerklicher
Mostertradition fest, indem wir alle heimischen Früchte selbst keltern. Denn nur so lässt
sich eine Produktion von der reifen Frucht bis zum feinsten Saft garantieren. Seit 1995
engagieren wir uns gemeinsam mit dem Naturschutzbund in einem regionalen Aufpreis
Projekt zur Erhaltung von traditionellen Streuobstwiesen. Aus diesem Fundus ist die Idee
erwachsen, aus traditionellen Obstsorten sortenreine Obstsäfte zu keltern, die teils aus

belonged to us. Love at first sight for two friends Jean Natoli and Peter Riegel. Jean, an
internationally recognized oenologist, assisting more than 300 wineries in the south of
France and Peter, for nearly 25 years importing and distributing organic wines from all
over the world, together, with different perspectives, each with 25 years of experience
in wine, they decided to start their own wine story. Now, in making wine themselves,
they have the excitement of defining their unique style from the interaction of the
site’s terroir and the unpredictability of nature. Every day brings a new lesson, a new

During centuries the picturesque Douro Valley was devoted nearly exclusively to the
production of portwine grapes. In the late 80s and 90s of the 20th century though, some
personalities started making unfortified wines, so called “table wines”, from their vines
of regional grapes. The five leading wineries in terms of quality are Quinta do Vale Meão,
Quinta do Vale D. Maria, Quinta do Crasto, Niepoort and Quinta do Vallado. In order to
promote the speciality and the quality of the Douro wines together, those five producers
joint together to group which is generaly known as the “Douro Boys”.

The creation and resurrection of Inglenook is one of the Napa Valley’s great stories.
In 1879, a pioneering visionary, Gustave Niebaum, declared his intention to produce
wines to equal the best of Europe. He created the estate of Inglenook in the heart of
Rutherford, in the Napa Valley. During the period of 1933-1964, his successor, John
Daniel, Jr., achieved just that, producing wines that are considered among the best
Cabernet Sauvignons ever made.
In 1975, the Coppola family purchased their first portion of this historic Rutherford estate
and embarked on their endeavor to restore the property to its original configuration and
glory. In 2011, they finally secured the rights to once again use the Inglenook name.
Under the Coppola family’s ownership and Philippe Bascaules’ careful winemaking and
management, the Inglenook legacy is set to continue in the future.

Die Bründlmayers sind das Musterbeispiel für den andauernden Erfolg des österreichischen Weinbaus: Erdverbunden und doch weltgewandt, charmant, kompetent und doch

documented history back to 1171. The history of the winery is connected to Cistercian

Das Weingut Bernhard Ott mit 30 ha Rebfläche liegt in den besten Feuersbrunner
Rieden in der Weinregion Wagram. Seit über vier Generationen bearbeitet und kennt
Familie Ott dieses Terroir und weiß, was die Weinberge zu ihrer prächtigsten Entfaltung
brauchen. 95% der Rebfläche sind mit der Sorte Grüner Veltliner bestockt. Im Jänner
2006 entschied sich Bernhard Ott zu einem markanten Paradigmenwechsel. Die
Grenzen der Technik erlaubten im konventionellen Weinbau keine Qualitätssteigerung
mehr, also stellte er den Betrieb um. Seither führt Bernhard Ott seine Weine nicht nur
geschmacklich, sondern auch ökologisch zum höchst möglichen Gipfel. „Wir achten auf
geschlossene Kreisläufe, begünstigen das Leben von Nützlingen und gewährleisten
die Sortenvielfalt im Weingarten. Wir begrünen unsere Weingärten, setzen leichtere
Maschinen ein, und unterstützen die Fruchtbarkeit der Böden. Wir komponieren aus BioRindermist, Trester, Stroh und Rebholz Humus, der das Bodenleben sichtbar beflügelt.“
Für seine herausragenden Leistungen wurde Bernhard Ott vom Falstaff Magazin zum
Winzer des Jahres 2008 ernannt.

The traditional wine estate of the Jurtschitsch family cultivates the finest vineyards that
surround the winegrowing town of Langenlois. A respectful way of working in harmony
with nature, maintaining the character of the different vineyards and preserving the
agricultural landscape of Kamptal are of central importance. Grüne Veltliner und Riesling
wines have featured in tasting notes and have been making history for many years
and are now in the organic hands of the young winemaking couple Stefanie & Alwin
Jurtschitsch.

The estate was founded by Sepp Moser in 1987. It covers vineyards in the areas
Kremstal/Lower Austria and Neusiedlersee/Burgenland. In the Danube-valley 90 percent
of vines lie in terraces on steep south-facing slopes. The soils are composed of loess
and rocky conglomerate. Predominant varietals are Grüner Veltliner and Riesling. The
soils in the Neusiedlersee-area – one of the sunniest spots of Austria – consist of deep
black earth, partly laced with gravel. The focus here lies on the production of high-class
red – and dessert-wines. Sepp’s son Nikolaus and his wife Andrea cultivate the vineyards
according to biodynamic aspects with Demeter-certification.
Vinification is done with a minimum of interference, to show as much as possible regional character and personality in every wine.

The family winery Tement is situated in Berghausen, Southern Styria, on a small and
impressing mountain plateau above the single vineyard Zieregg. Winery Tement aims
to make two different styles of wine at the estate. Under the appellation „Steirische
Klassik“ one finds estate wines that are fresh and fruity, with lots of varietal character.
They display the typical style of their grape variety and are fairly light in alcohol and
matured in stainless steel tanks. The second style is represented by the wines from
selected vineyards and is called "Terroir and single vineyard wines". These high-quality
terroir wines are obtained from fully matured grapes from most important single
vineyards. They are fermented slowly and mature in large or small neutral oak barrels
until they are ready for bottling. Terroir wines exhibit independence as well as area-typical
character and show great ageing potential.

Das Weingut Velich ist in Apetlon mitten im Nationalpark Neusiedler-Seewinkel im
Burgenland beheimatet. Es werden ausschließlich Weißweine produziert, die Sorte,
Boden und Region gerecht werden. Die Trauben werden in möglichst hoher und
harmonischer Reife geerntet und so vinifiziert, dass sie, ohne durch übertriebene
Kellertechnologie strapaziert worden zu sein, ihre natürlichen Möglichkeiten entwickeln
können. Die einzige Konzession ist die Verwendung von französischen Eichenfässern, die
den Weinen eine Note verleiht, die den Regionstyp unterstreicht und um eine Dimension
erweitert. Die so ausgebauten Weine wurden zum Markenzeichen des Betriebes.
Das Weingut Moric beschäftigt sich ausschließlich mit der Rebsorte Blaufränkisch.
In Neckenmarkt und Lutzmannsburg zwei Hochburgen dieser Rebsorte, fanden wir
uraltes Rebmaterial und grandiose Lagen, bestens geeignet um unser Ziel zu erreichen.
Rotwein zu erzeugen die unverwechselbar ihren Ursprung zeigen: Burgenland und
Blaufränkisch.

With a history that spans more than 650 Years, Reichsgraf von Kesselstatt is one of the
most traditional estates in the Mosel region. Four former monastries and their vineyard
holdings along the Mosel, Saar and Ruwer were purchased after secularization and remain
the basis of the estate to this day. Reichsgraf von Kesselstatt is, apart from the church
itself, the only estate which 90 acres of top vineyard sites along the three Tributaries.
Those “Grand Cru” sites in the Mosel, Saar and Ruwer are the greatest asset – a wonderful gift and a tremendous challenge at once. Today Reichsgraf von Kesselstatt is owned
by the Günther Reh family and present owner and winemaker, Annegret Reh-Gartner has
directed it more than 30 years. Quality has been her focal point from the start. She highly
esteems the mineral-rich, filigree style so typical of the wines of all three river valleys.

Weingut Odinstal is located in a unique niche in the Pfalz-region of Germany. The estate
is comprised of vineyards and meadows situated in a forest clearing at 350 meters, high
above the rest of the region. The historic property is built next to a dormant volcano which
greatly influences the terroir of the vineyards. This unique situation, microclimate, and
mélange of soils are what set Odinstal apart. Only here can one find pure volcanic Basaltsoil mere meters away from heavy chalk and clay-soils such as Muschelkalk and Keuper, as
well as the regional classic, Buntsandstein.
The production is quite small and exclusive. Less than 25,000 bottles per year are
produced from the five hectares of monopole vineyards. The varieties include Riesling,
Weißburgunder (Pinot Blanc), Gewürztraminer, Silvaner, and an estate specialty, Auxerrois.
ODINSTAL belongs to a small group of consequential protagonists of the biodynamic
viticulture movement in Germany. The vineyards have been certified organic since 1992, and
in 2006 changes to biodynamic viticulture began, culminating with Demeter certification in
2013.

Dr. Bürklin Wolf erzeugt trockene Spitzenrieslinge aus den wertvollsten Lagen

Since 1663 the Wittmanns have been wine farmers in Westhofen, in the southern part of
Rheinhessen. Over centuries this tradition was kept and led to the estate in its current
form. Philipp Wittmann and Eva Clüsserath- Wittmann and Philipp’s parents Günter and

Antonio Franco founded the “Cantine Franco” winery in Valdobbiadene in 1919.
Valdobbiadene is located at the foot of the Prealps, in the Venetian region, and is famous
for the Prosecco vine and wine production.
This winery is proud to be one of the oldest in Valdobbiadene, located in the town
centre, not far away from the countryside and the vineyards.
Thanks to a careful and wise management, the estate has been growing and evolving
throughout three generations of producers. Antonio founded it, Nino expanded it and
Primo improved the company performance throughout the years.1982, when Primo took
over its management, was the turning point.
Primo began to travel and to successfully export the wines in Europe as well as in the
Americas and the Far East. At the same time he invested in the production process in
order to make higher quality wines, eliminating all those wines that were atypical for the
area. He also started to monitor closely the grape cultivation with the aim of achieving
high quality from the raw material level to the final product.
Primo Franco was one of the first pioneers to export the Prosecco and to introduce
a different sparkling wine than Champagne into the international market. He has
been successful, thanks to his open mind personality, his spontaneity, reliability and
competence as well as his charm and ability to communicate his love for his job,
and last but not least thanks to his high quality and delicious wines.

I Cavalleri possedevano terreni in Erbusco già nel 1450, è quindi una delle più antiche
aziende del territorio, me è anche un’azienda dotata di grande vivacità imprenditoriale
e soprattutto di una sconfinata passione per la vite e per il vino. Giulia e Maria, dopo la
scomparsa del padre Giovanni, sono oggi le proprietarie di questa cantina che è riuscita ad
imporre all’interno della Franciacorta un proprio stile ben definito e riconoscibile.
Da sempre sostenitori delle grandi potenzialità dello chardonnay i Cavalleri producono i loro
Blanc de Blancs con solo il mosto fiore dell’uva proveniente esclusivamente da vigneti di
proprietà sulle colline di Erbusco (oggi considerato “gran cru 100% della Franciacorta”)
ostinandosi ad anteporre alla “corsa ai volumi” la ricerca della qualità dei propri vini.
L’azienda è dotata di tutti gli strumenti più moderni uniti a quelli, tutt’ora insostituibili,

The name of Aquila del Torre is closely bound up with the territory of Savorgnano del Torre,
Friuli Colli Orientali. As you gaze towards Savorgnano from Udine, you can easily pick out
the Aquila del Torre vineyards sprawling over the hillsides like an eagle's outstretched
wings. Aquila del Torre is a single estate with 20 hectares under vine, exclusively
organically growed, and the remaining 60 left as woodland. Much of the territory above
the vineyards is covered in oak, hornbeam and holly. Terrain is at an elevation of 175 to
350 metres above sea level, affording a panoramic view of the flatlands. The hillslope
vineyards are planted to a single-row terrace pattern to trap the sunshine and ensure
consistent ripening of the grapes. The Ciani family is unfailingly committed to making wine
while respecting the environment in which the family lives and works. The Aquila del Torre
core team comprises two young brothers whose aim is to promote the wine territory of
Savorgnano del Torre by producing wines that embody its key sensory characteristics of
freshness and minerality. The primary focus is on quality that begins in the vineyards. Near
attention is lavished on all manual procedures among the rows in order to coax the grapes
to full, uniform, ripeness and health. The path to quality continues in the cellar. Grapes are
processed in full respect of work in the vineyard to highlight the sensory features of the
site climates and imbue each wine with its own personality.

Montevertine lies within the heart of the Chianti hills, in the community of Radda at an
altitude of 425m above sea level. The Winery was founded in 1971 by Mr. Sergio Manetti
and is now run by his son Martino. The total surface of our company’s vineyards covers
currently approximately 18 hectares. About 90% of all vines planted are Sangiovese
grapes. The remaining 10% includes Colorino and Canaiolo. All our vineyards are
cultivated following organic methods. The density amounts to 5,000 vines per hectare in
the vineyards planted since 1997, and to 3,200 vines per hectare for older vineyards.
Our wine-making procedure is extremely traditional and it has never been varied since
the very first vintage. The grapes are harvested by hand and then fermented in glazed
cement vats, without temperature control, and the must is topped up twice daily in order
to keep the top marc moist and to obtain a slow extraction of the tannins from the skins.
After the racking off, the malolactic fermentation is also carried out using cement vats.
At the end of the malolactic fermentation, our wines are stored in wooden barrels over
a period of approximately two years. The wines will never be filtered and the topping-up
method, without any pumps, is used for the bottling. For the ageing of our wines we use
oak barrels from Slavonia with a 5.5 to 18 hectolitre capacity and 225 litre Allier casks.

La quattrocentesca villa del Colle al Matrichese è residenza dei Conti Costanti dalla metà
del 1500. E’ uno degli abitati più antichi del territorio di Montalcino e vi si segnalano
”vigneti ben coltivati” fin dall’ottavo secolo. L’azienda si estende su circa 25 ettari ed i
vigneti, 12 ettari prevalentemente di Sangiovese,sono stati impiantati su terreni “galestro” nelle esposizioni migliori, ad un’altitudine che varia da 350 a 440 metri. Costanti
è uno dei marchi storici di Montalcino e a Tito Costanti, nella seconda metà dell’800, si
deve una delle più antiche testimonianze di vino denominato “Brunello”. La filosofia dell’
Azienda e le caratteristiche dei vigneti portano ad una delle espressioni più classiche del

Boschi, campi, vigneti e oliveti si estendono sui 140 ettari del Podere Forte, fra le sinuose
colline della Val D’Orcia che abbracciano il Monte Amiata a sud di Siena, fra il Fiume Orcia
e Montalcino. Qui, Pasquale Forte ha ricreato il clima genuino ed autentico di una vecchia
fattoria, nella quale si producono vini, olio, farina, miele, spezie e salumi in modo naturale.
Al Podere Forte, come il sig. Forte è orgoglioso di dire: lavoriamo i campi come 2000 anni
fa e in cantina siamo 2000 anni avanti. Coltiviamo il Sangiovese con una densità d’impianto
come solo i Romani sapevano fare, produciamo internamente i nostri fertilizzanti e il nostro
compost utilizzando la ramaglia di potatura e i legni provenienti dai nostri boschi. Le nostre
Cinte mangiano ghiande e castagne nei boschi ove sono libere di scorrazzare, mentre le
api impollinano i fiori e le erbe aromatiche del giardino botanico presso il quale abbiamo
sistemato le loro arnie. Cuociamo in un vecchio forno a legna, il pane fatto con le farine provenienti dai grani rari e antichi che coltiviamo su 10 ettari di seminativi. Ma in cantina usiamo gli strumenti più sofisticasti e la tecnologia più avanzata: all’unico scopo d’interpretare

Podere Il Carnasciale is situated in the southern Chianti mountains in the Valdarno region of
Tuscany, thirty kilometers north of Siena and Arezzo, and sixty kilometers south of Florence,
and is run by Bettina Rogosky and her son Moritz, together with the enologist Peter Schilling
and his assistant Marco Maffei. The Caberlot grape was first identified in the late 1960 s in
an abandoned vineyard near Padua. While the grape has the organoleptic characteristics of
Cabernet Franc, its ampelographic profile is closer to Merlot, leading us to assume that the
loose-cluster Caberlot is a natural crossing of the two varieties, a hybrid. The first vineyard
was planted in 1986 and four additional plots have been planted since, of which 3,1ha are in
production today, and the variety is cultivated exclusively at Podere Il Carnasciale. Work in the
vineyards is carried out with total respect for the soil and the plants, with minimal intervention.
Pruning, budding and leaf-management are all done by hand. We do not employ chemical
fertilizers or pesticides, and any eventual sanitary treatments are natural. Yields do not exceed
30hl per hectare. In the cantina, we believe in minimally invasive, hands-off enology, allowing
the fruit, the vintage and the distinctive characteristics of each vineyard to play the leading
roles. The use of sulfites is kept to a strict minimum. The wines are aged in precisely selected
french barriques, of which 70% are new, over a period of 22 months. Il Caberlot is bottled
manually and unfiltered in magnums (solo magnum!) which mature a further 16 months in
our cellar, prior to their release. Carnasciale, having seen the same vinification and care as
Il Caberlot, is released 6 months after bottling. We produce about 3000 magnums of Il
Caberlot, hand-numbered by Bettina, and 5000 bottles of Carnasciale.

Biserno is set in western Tuscany, in the coastal area of the Upper Maremma. The estate
lies among the hills of Bibbona. Lodovico Antinori learned about this parcel of land, surveyed it and was struck by this terroir, recognizing here were elements in the soil that immediately inspired him to plant Cabernet Franc. The 35 ha of the Biserno estate are composed
of a complex soil consisting of silt, alluvial sand, and in certain parts a high percentage of
clay, combined with Bolgheri conglomerate (the geological name for the soil indigenous to
the Bolgheri-Bibbona area). It is rich in minerals, recognizable upon tasting the wines.

Le Macchiole si trova lungo la Via Bolgherese, a circa 5 Km dal mare, nel cuore della
DOC Bolgheri. L’azienda si estende per 22 ha, con alte densità d’impianto e rese molto
basse. Dal 2002 Cinzia Merli gestisce l’azienda voluta dal marito Eugenio, portando
avanti il progetto iniziato 20 anni prima e con lui condiviso: produrre vini di qualità che
siano espressione del territorio.
La filosofia produttiva dell’azienda si è sempre basata sulla convinzione che il vino debba
essere la massima espressione del territorio di provenienza e ha fin dall’inizio privilegiato
il lavoro in vigna, nel rispetto del ciclo vegetativo di ogni vitigno. Per questo motivo tutte
le lavorazioni sono eseguite manualmente, dalla potatura al diradamento alla vendemmia,
con un’attenta selezione delle uve sia in vigna che in cantina.
Oggi l’azienda produce 5 vini: Messorio, Scrio, Paleo, Bolgheri Rosso e Paleo Bianco,
con una produzione totale annua di circa 140.000 bottiglie.

Fattoria Mancini is a family owned winery established in 1861. The vineyards of around
30 hectares are located in the Natural Park of Mount San Bartolo, at the very north of the
Marche Region, above the spectacular cliffs of Focara on the Adriatic coast, at a latitude
of 43°6'. The cool microclimate of this stretch of north orientated coast and the calcareous sandstone soil allow the production of well structured long-lived wines, with depth,

La storia dell’Azienda Agricola Forteto della Luja è documentata dal 1826. La grotta –
cantina in pietra e una parte dei fabbricati risale al 1700. Giunta all’attuale proprietario
Giancarlo Scaglione dalla famiglia materna, l’azienda è oggi condotta dai figli Giovanni
e Silvia. Nel 1992 viene riconosciuta al Forteto della Luja la denominazione di origine
Controllata “Loazzolo”. La più piccola d.o.c. italiana, con uve di Moscato bianco appassite
e botritizzate.
Loazzolo è un piccolo comune posto nella Langa astigiana.
L’Azienda Agricola Forteto della Luja è stata scelta, dall’associazione mondiale per la
difesa della natura, (World Wild Foundation) per diventare un’oasi affiliata al W.W.F.

L'Azienda Agricola Valentini è presente sul territorio di Loreto Aprutino (PE), Abruzzo, dal
1650. Da allora è sempre stata gestita dalla medesima famiglia. Ad oggi l'azienda ha un
totale di circa 250 ettari, suddivisi nel seguente modo: 24 ettari di vigna di varietà Trebbiano d'Abruzzo, 40 ettari di vigna di varietà Montepulciano d'Abruzzo, 60 ettari di oliveto
intensivo con cultivar lauretana, infine circa 100 ettari di seminativi. I restanti ettari sono
boschi.
Il sistema di allevamento dei vigneti di Trebbiano e Montepulciano è quello classico a
pergola abruzzese. La densità di viti per ettaro varia da 1200 a 1400. Vengono vinificate
solo le uve di propria produzione. Il quantitativo di vino prodotto annualmente è costante,
ma vengono imbottigliate soltanto le annate ottimali ed il numero di bottiglie prodotte
varia a seconda della selezione che è stata possibile operare sia in vigna che in cantina.
La vinificazione è ottenuta tramite procedimenti esclusivamente artigianali: non viene
effettuato alcun controllo di temperatura durante la fermentazione, non vengono usati
lieviti estranei né alcuna filtrazione di sorta.
L'Azienda produce vini bianchi, rosati e rossi. E' particolarmente conosciuta in Italia ed
all'estero per il lungo invecchiamento dei vini bianchi, ma produce anche olio e pasta
(quest'ultima in collaborazione con l'Antico Pastificio Verrigni). I prodotti dell'Azienda
sono presenti sia sul mercato nazionale che estero.

The Tenute Cisa Asinari dei Marchesi di Grésy, owned by the di Grésy family since 1797,
began producing their own wines in 1973 thanks to the enthusiasm of Alberto di Grésy. The vineyards are situated in the Langhe and Monferrato areas, which are recognized
as the home of Piedmont’s greatest wines. The estates are four: Martinenga in Barbaresco (there is evidence that the natural amphitheatre where this famous 12ha of Nebbiolo
vineyard stands today was already known in ancient Roman times as Villa Martis, a place
where the Liguri Stazielli used to worship God Mars and where Roman Emperor Publio
Elvio Pertinace was born in 193); Monte Aribaldo in the nearby commune of Treiso, dominated by Villa Giulia, an elegant Liberty style hunting lodge built at the beginning of the
20th century by grandfather Carlo di Grésy; La Serra and Monte Colombo, both located
in the commune of Cassine (AL).
Grapes from all the estate vineyards are brought to the central winery at Martinenga
to be made into high quality wines with the greatest respect for the area, tradition and
nature. The aim of Alberto di Grésy is to faithfully transfer as much as possible of the
identity of the terroir and the varietal elements into the bottle, obtaining wines with
great finesse and quality to accompany the entire meal.

Grapes varieties Carignan, Grenache, Macabeu are really locals, only Syrah was recently
introduced (some 40 years ago).
It is quiet naturally that we embraced the Biodynamie way of culture and thinking in
2007. With out this we are now wondering how would it be possible to make good wine
today, with character, honesty, and temper.
Respectful of our surrounding, land, plants, animals, including the tiny micro organism
and obviously the human race (may be the most unpredictable of all…).
Our wines combine all aspects to meet friends and share with them the pleasure to be
together… Discrete seduction on its first contact, charm and warmness comes later,
specially when its as to play with good cooking, natural and flavoured simple food, will
be it’s best companion.
Long length conversation comes later and will start to mean friendship…. From now we
should start to be careful, our wine will not talk to the assembly… but makes you talk?

In family wine estate Wimmer-Czerny there are growing on deep loess soils in Fels am
Wagram 2/3 Grüner Veltliner, Riesling as well as the traditional speciality Roter Veltliner,
besides Weißburgunder, Traminer as well as Zweigelt and Pinot Noir. Not only the 15 ha
of wineyards are biodynamically certified, but the entire Demeter farm. Some key words
to management: Various greenmass as well as own compost, biodynamic preparations
and plant teas as well as attention natural rhythms, no irrigation, hand picking, fermenting only with own yeasts, no additives and natural sedimentation instead of filters.
Balanced, classical wine personalities are the goal, last top rankings: GV reserve under
the TopTen in the Vinaria final of the 2007er. Second-best Roter Veltliner 08 of Austria.
2004 Fallstaffwinner with the GV Fumberg and several times Alacartewinner and Salon
Austrian Wine. Half of the harvest is exported, in several European countries, USA and
Japan.

Our wine estate was founded around the start of the 18th century and remains a family
business to this day. Run in the 11th generation by us, Peter Jakob and Angela Kühn
– our three children already work alongside us, continuing the family tradition. Only by
maintaining our philosophy and through the knowledge that quality and sustainability are
inseparable, has our winery survived through the centuries. On this basis we decided in
2004, to achieve a certification as ecological, biodynamic winery. The expectation we set
in our own quality also manifests itself in our memberships in the VDP (Prädikat Wine
Estates), Demeter, the association for organic agriculture based on anthroposophical
principles, and the association of international biodynamical wineries: “La Renaissance
des Appellations“.

Frank John- Das Hirschhorner Weinkontor was founded in 2003. Three members of
the family (Sebastian, Gerlinde and Frank) work together, caring for the vineyards and
the winemaking. Only Riesling and Pinot Noir are grown. The farm is located in the
rhinevally, in the south west of Germany. Biodynamic farmed limestone and chalky soils
give the traditional made wines character and style. Natural yeast from the vineyards
fermented the juice of the Riesling gently in traditional old wooden Oak barrels
(1200 + 2400 Liter). The storage of 12 months is done as well in these barrels.
Only one filtration is done. No fining is done.
The Pinot Noir grapes are fermented also with natural yeast from the vineyards
macerated for up to 4 weeks on the skins. After one racking the wine is stored for
24 months in 500l Barrels. The wines are bottled without filtration. No fining is done.
Sulfur is used only just in front of bottling and strictly kept in reason of respect of
health and digestibility very low.
Livefull and long-lasting wines with an extremely high authenticity are the result of
this serious work.

Unser Weingut schaut auf eine lange Weinbautradition bis 1649 zurück. Vor kurzem
ist nun mit Anne-Christin Trautwein die nächste Generation miteingestiegen. HansPeter und Elfriede Trautwein waren 1980 unter den ersten Winzern, die auf die
biologische Wirtschaftsweise umstellten und seit dem Jahr 2000 werden die 9 Hektar
des Familienweinguts biodynamisch bewirtschaftet. Qualität entsteht im Weinberg,
in der Hinwendung zur Natur. Den natürlichen Lauf der Natur möchten wir erhalten,
dennoch ist Landwirtschaft zuerst einmal ein Eingriff in diesen Lauf. Im entstehenden
Spannungsfeld zwischen Mensch und Umwelt haben wir die Entscheidung getroffen,
unsere Lebens- und Weinkultur nach der Verträglichkeit mit der Natur auszurichten.
Ein sensibles Bewusstsein für deren komplexe Mechanismen und Prozesse ist die
Grundlage, aus der heraus wir nachhaltige und verträgliche Bewirtschaftungsverfahren
für unseren Wein entwickelt haben. Als Ergebnis erhalten wir dafür aber auch Weine, die
das Anbaugebiet voll erlebbar machen. Die biodynamische Weinkultur ermöglicht es uns
dabei, die konzentrierten Kräfte der Rebe als Wein weiterzureichen und ist für uns die
Umsetzung von uraltem, von Generationen überliefertem, weinbaulichen Wissen.

The Weingut Zähringer, established 1844 in Heitersheim / Baden, is in these days led in
the sixth generation by the Zähringer family. Zähringer is one of the pioneers in organic
viticulture in Germany, producing since 1987 according to the Ecovin standards and
since 2004 as well according to Demeter. We are cultivating in our vineyards with a
surface of almost 50 ha mainly Pinot Grapes and for the most southern part of Baden,
the Markgräflerland, typical variety Gutedel (Chasselas).
