Volume XV, Number 50 December 16, 2010 Cold Storage, Warm Heart Patron Donates Freezer to Ronald McDonald House By: Dr. Raylene Phillips Community Writer Recognizing the need for breast milk storage at the Ronald McDonald House, Karen Hooper, Director of Operations at the Loma Linda Ronald McDonald House, has made space for a freezer donated by Ruth Shepperd, mother of Dianne Wooldridge, who is a Lactation Consultant in the Neonatal Intensive Care Unit at Loma Linda University Children’s Hospital. Human milk is like medicine for premature and sick infants admitted to the LLUCH. Because babies are often too premature or too ill to breastfeed, it is important for mothers to regularly pump their breast milk and store it for use when their babies are ready for feeding. Until now, there has been nowhere to store breast milk at Loma Linda Ronald McDonald House where many mothers stay while their infants are hospitalized. Three pediatric residents from LLUCH, Dr. Matt Fong, Dr. Matt Bock, and Dr. Oliver Oatman joined Dr. Raylene Phillips, Neonatologist, in moving the freezer from Ruth Shepperd’s home in San Bernardino to the Ronald McDonald House in Loma Linda. Human milk has been shown to be superior to artificial infant milk in reducing the risk of life-threatening conditions such as necrotizing enterocolitis and sepsis, as well as reducing rates of severe retinopathy of prematurity, the leading cause of blindness in the United States. Hospitalized infants fed human milk have less feeding intolerance, and shorter lengths of hospital stay. There are also long-term benefits of breast milk feeding, including decreased risk of childhood cancers, Type 1 Diabetes, Crohn’s Disease, and allergies. Children who received breast milk as infants have been found to have higher IQs. Because human milk is so important for premature and sick infants, physician and staff at the Children’s Hospital are doing all they can to support mothers as they provide milk for their babies. (See Freezer on Page 10) A Soldier is Home for the Holidays Former LL Resident Named Secretary of the United Nations By: Helena Mitchell Staff Writer Dedicating his life to protecting others’ families, Conrad Salinas III will be able to celebrate this Christmas surrounded by the love of his own family. The Salinas family has lived in Grand Terrace for over 25 years and has been involved in the military lifestyle for more than 16 years. Veronica and Conrad Salinas II settled in the Blue Mountain City to raise their family of four children after living in Reche Canyon for five years. Conrad Salinas III, the eldest of the sons, just celebrated his third year on active duty in the United States Army on November 17. His drive to join the military came after the terrorist attacks of 9/11. Conrad Salinas the II and III, father and son proudly smile in their uniforms. “I wanted to make a difference,” Salinas III said. Joining at the age of 27, Salinas III is now 30 years of age and recently completed a year of deployment in Afghanistan, where he served as a Battle Captain in Camp Leatherneck on a Marine Corps base. One of his responsibilities was to coordinate and monitor convoys with the main mission of providing logistical support to the United States Marines. Two of his many achievements acquired during his service to the United States have earned him the Bronze Star for heroism and a Combat Action Badge. Graduating from Loma Linda Academy in 1999 with a strong vision of where he wanted to go with his life; he decided to attend college at University of Redlands, where he majored in Sociology and Anthropology. With his college degree, Salinas III became an archeologist at the San Bernardino County Museum – where he had volunteered his services from the time he was 11 until he was 18. During his time employed as an archeologist, he also worked as an emergency medical technician. His father also is actively serving in the Army National Guard as a reserve Colonel. Dr. Standish has been recently named as Secretary of the United Nations NGO Committee on Freedom of Religion or Belief. He is also a member of the White House Task Force on Interfaith Dialogue and Cooperation. Two years ago he was a member of the United States delegation to the Organization for Security and Cooperation in Europe. Yellowjackets Football Success Extends to Community Following Friday’s historic victory of the Colton High School Yellowjackets in the CIF-SS Central Division title game, I would like to congratulate the players and coaches on their victory and on the tremendous amount of hard work and dedication required to make such an achievement. The teamwork, focus and dedication required to distinguish you as the very best from among an entire division of strong, formidable opponents is something they will long be remembered for, not only at Colton High School, but throughout the community. And besides playing great football, our players also conducted themselves with good sportsmanship, which is something of which I am equally proud. I also want to thank the many supporters whose spirit and dedication matches that of the players, including the cheerleaders and band. And of course, without the support of our parents, nothing could happen. I would also like to thank the legions of individuals and organizations from the community who supported our team Friday. However, thanks to Elizabeth Edelman, co-founder and resident culinary expert at www.DiabetesDaily.com, there is a way to warm the soul and fend off the winter weight with healthier soup and chili. Below are a few of Elizabeth’s winter favorites. Chicken Chili With Peppers What You Need: 2 yellow onions, chopped 1/8 cup olive oil, plus extra for chicken 2 cloves minced garlic 2 red bell peppers, cored, seeded and diced in large chunks 2 yellow bell peppers, cored, seeded and diced in large chunks 1 can red kidney beans, rinsed and drained 1 can white kidney beans (cannellini beans), rinsed and drained 2 teaspoons good chili powder 2 teaspoons ground cumin Dried red pepper flakes, to taste 1/4 teaspoon cayenne pepper, or to taste 2 teaspoons salt 2 (28 oz) cans fire roasted pureed tomatoes (or crushed) 4 split chicken breasts, bone in, skin on Freshly ground black pepper How to Make It: Cook the onions in the olive oil over medium-low heat until translucent, about 10 minutes. Add the garlic and cook for one more minute. Add the bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for another minute. Add the tomatoes and both cans of the kidney beans. Bring to a boil and then reduce heat and simmer uncovered for 30 minutes, stirring occasionally. Preheat the oven to 350 degrees F. Rub the chicken breasts with olive oil and place them on a baking sheet. Sprinkle with salt and pepper. Roast the chicken for 35-40 minutes, until just cooked. Let cook slightly. Separate the NOW AT meat from the bones and skin and cut into 3/4” chunks. Add to the chili and simmer uncovered for another 20 minutes. Servings: 8 Nutrition Facts per Serving: Calories: 341 Carbohydrates: 45g Dietary Fiber: 11g Sugars: 12g Fat: 11g Saturated: 2g Trans: 0g Sodium: 815mg Protein: 20g Chicken Posole What You Need: 1 Tablespoon olive oil 1 onion, thinly sliced 2 carrots, chopped 1 stalk celery, chopped 4 cups chicken stock (homemade if you’ve got it) 1 28-oz. can diced tomatoes 1 dried ancho chile, thinly sliced 2 cups chicken meat, shredded (I just bought a rotisserie chicken, but use what you have on hand) 1 15-oz. can hominy, rinsed Kosher salt and freshly ground black pepper, to taste 1 lime, cut into wedges 1/4 cup fresh cilantro, minced How You Make It: Heat the oil in a large saucepan over medium heat. Add the onion, carrots, celery and salt and pepper and cook until soft, about 12 minutes. Add the stock, tomatoes and chile pepper and bring to a boil. Stir in the chicken and hominy and cook until heated through, about 5 minutes. Taste for seasonings and add additional salt and pepper, if needed. Divide the soup among 4 bowls and top each with a sprinkle of fresh cilantro and lime wedges. Cut them in half and arrange them, chopped side down, on a baking sheet lined with aluminum foil. Cut the Anaheim pepper in half and remove the seeds. Place it on the same sheet pan and place under the broiler until the skins on the pepper and tomatillos are slightly blackened, about 5-10 minutes. Check to make sure they don’t burn, there is a fine line between the two. Remove from the oven and set aside to cool. Take the peppers off of the pan and put them into a paper bag to steam. Check back in a couple minutes and you’ll be able to remove the skins easily. Set the flesh aside. In a small saucepan over medium-high heat, heat the olive oil. Place 5 garlic cloves in the oil and cook until brown on all sides. Remove the pan from the heat and remove the garlic from the oil. Set the oil and garlic aside. Place the garlic and Anaheim pepper flesh in a blender, along with the tomatillos. Keep the skins attached to the tomatillosyou want that flavor. Add the jalapeno peppers and the cilantro to the blender and pulse until pureed. Set aside. In a large, deep skillet or Dutch oven, heat the olive oil that the garlic cooked in over medium high heat. Add half of the pork and season liberally with salt and pepper. Cook the pork until it is brown on all sides. Remove the cooked pork to a plate and add the second half of the pork, cooking until brown. Remove the rest of the pork and set aside. In the same pan, add the onion and sauté until just starting to turn translucent. Add the 3 garlic cloves and cook for another minute. Turn the heat up to high and add about 2 Tablespoons of the chicken stock. Cook over high heat, scraping the bottom of the pan to remove all of the brown bits from the pork. Turn the heat down to medium and add the pork back to the pan, along with the oregano, tomatillo puree, cloves, and salt and pepper to taste. Don’t add too much salt, though, because the mixture will cook down. Bring to a boil and then reduce the heat to low. Keep the Chile Verde at a simmer for about 2-3 hours, until the pork is tender. Check for seasonings and serve. But if you have a family, it’s never too soon to create your estate plan. Of course, estate planning can seem like a daunting task. But you’ll find it easier to handle if you break it down into three key areas: distributing your assets, protecting your family and reducing estate taxes. Let’s look at these topics: • Distributing your assets — Obviously, it’s essential that you let your family know just how you’d like to see your assets distributed, and to whom. At the very least, you’ll need to draw up a will. If you were to die without one, the state could end up distributing your resources, and it might do so in a way you wouldn’t have wanted. But even a will may not be sufficient. Many people design a living trust, which provides them with more flexibility in distributing assets — for example, you could direct your living trust to disperse assets to children or grandchildren at specific ages — and allows assets to be distributed without going through the timeconsuming, and public, probate process. • Protecting your family — Estate planning isn’t just about dollars and cents — it also involves taking the necessary steps to preserve the welfare of your family if you are not around or become incapacitated. Consequently, you’ll need to name a guardian for your minor children — someone who can step in and raise them should anything happen to you and your spouse. And when your children are adults, you’ll want to help them with decisions that could prove agonizing. For example, by creating a living will, you can state whether you want your life prolonged if you ever face a terminal illness or catastrophic brain injury and are no longer able to make decisions for yourself. And by drawing up a health care power of attorney, you can name someone to make health care choices for you if you are unable to do so. • Reducing estate taxes — Depending on the size of your estate, your heirs may never have to worry about estate taxes. But that’s hard to predict, especially given the fact that federal estate laws have gone through several changes in recent years, and may do so again. Your best bet is to stay informed about the exemption level — the amount you can pass on to your heirs, free of estate taxes — and look for ways to reduce the size of your taxable estate. You could, for instance, make charitable gifts, thus moving these assets from your estate. You may also want to consider arrangements such as an ir- revocable life insurance trust — under which you can transfer a life insurance policy out of your estate and have the trust distribute the proceeds to the beneficiaries you’ve chosen — or a credit shelter trust, which allows both you and your spouse to take full advantage of both your estate tax exemptions. A trust can be a complex instrument, so before establishing one, you’ll need to consult with your tax and legal advisors. In fact, you’ll want to consult with them on all aspects of estate planning. It will take time and effort, but it’s worth it to leave the type of legacy you desire. This state-of-the-art electronic recording delivery system was designed and implemented by the California Electronic Recording Transaction Network Authority (CeRTNA) of which San Bernardino County is a founding member. CeRTNA was the first such system approved by the California Attorney General’s office under the requirements of the Electronic Recording Delivery Act (ERDA) of 2004, as authorized by the enactment of Assembly Bill 578. The San Bernardino County Recorder’s office received formal approval from the state Attorney General’s office to launch their system as part of the formal approval process required for each participating county. Prior to implementing the new delivery system, San Bernardino County, as one of two counties authorized to electronically record documents on a pilot basis, implemented a proprietary system which allowed San Bernardino County and associated submitters to manage the increased volume experienced during the real estate boom of the early 2000s without significantly increasing workforce. This new system will allow authorized submitters within the Title, Banking, Mortgage Lending, and other associated industries a unified means to electronically submit land record documents to county recorders throughout the state of California, thereby minimizing the time and expense of developing a separate system in each county. The Los Angeles of Anaheim are putting Tom Gamboa back in the manager’s seat, assigning the former Major League first and third base coach to be the new skipper of Inland Empire 66ers baseball. Gamboa was named Manager December 7 by Angels Director of Player Development Abe Flores. The Inland Empire 66ers new manager spent last season as the manager of the Palm Springs Power in the Southern California Collegiate Baseball Association. Gamboa will be managing in the Angels system for the first time since 2005, when he led the Arkansas Travelers at the Class-AA level and for the first time in the California League since he led the Stockton Ports to the California League finals in 1985 (lost to Fresno Giants 3 games to 2). Dan Ricabal will return to the Angels California League affiliate as pitching coach in 2011. It should be a happy return to San Bernardino for Ricabal, who was a reliever for the 1995 California League Championship-winning San Bernardino Spirit. He was 4-1 with a 3.88 ERA in 43 appearances for the ’95 Spirit, during which he struck out 62 batters. His slightly better, the constant drizzle and frigid temperatures pushed each team to the limit as SBVC and the Chargers went into the shoot out period tied 1-1, but SBVC prevailed 8-7 on shootout differential. Greeting card scams oc- cur when an email pretending to be from a friend or family member is received. Once opened the recipient is lead to a booby trapped web page that downloads Trojans and other malicious software onto the unsuspecting victims’ computer. The shopper-needed scam sends the “new hire” a check for a few hundred dollars, instructing them to cash the check and take their portion, then forward on the remaining funds to the new “employer.” The check is bogus and will bounce. The victim will be liable for the funds spent and forwarded from the check, plus any service fees that result. The reshipping and payment processing fraud places the unsuspecting victim in the middle of illegal activity and leaves them on the hook for any amount transferred and fees that result. He will come here for the 36th Annual Christmas Candlelight Festival of Music and Lights that will be held Friday and Saturday, December 17 and 18. The feature attraction of the Christmas presentation will be the appearance of the popular Southern Californiabased chorale group, ”The Gary Bonner Singers,” under the direction of Dr. Gary Bonner, Accompanying the group will be a full orchestra, according to Dr. Bonner. The Southern California choral group performed twice (2006 and 2008) at the White House in past years, according to Dr. Bonner. They were chosen from among more than 10,000 different groups who applied for the enviable invitation. Beuck Entertainment Writer For most of the year Disneyland Resort is known as the “Happiest Place on Earth.” But from November 2 through January 2 it becomes the “Merriest Place on Earth.” Holiday ornaments are hung over both parks and changes are made on some rides to celebrate the season. For example, for the Haunted Mansion Holiday, a madcap celebration is taking place as the traditions of Halloween and Christmas collide. The ghoulish but well-meaning Jack Skellington from the film “Tim Burton’s The Nightmare Before Christmas” has come to Haunted Mansion and transformed it with his skewed vision of the holidays. “It’s a Small World” Holiday transforms “It’s a Small World” into a worldwide celebration of the season, boasting more than three hundred thousand glittering lights on its facade. The usual theme song for the ride is interspersed with Jingle Bells. The Christmas Fantasy Parade shows all the characters baking or otherwise getting ready for Christmas and ends with a visit from the Jolly Old Joke of the Week Write it Down An elderly couple with memory problems are advised by their doctor to write notes to help them remember things. Speaking of the Jolly Old Elf, Santa Claus and his reindeer have returned to greet Disneyland guests at Santa’s Reindeer Round-up at Big Thunder Ranch in Frontierland. On the day we were there, we saw the reindeer but only saw Santa in the parade. Sleeping Beauty’s Castle sports snow during the day but at night it displays a magnificent array of holiday lights that stretches all the way to town square. Also, at night is the marvelous “Believe in Holiday Magic” fireworks show. The fireworks display is immediately followed by snow on Main Street, New Orleans Square and “It’s a Small World” plaza. In town square is a sixty foot Christmas tree that is impressive enough during the day but really dazzles at night. At Disney’s California Adventure, the iconic “CALIFORNIA” letters have been transformed to appear as swirling red and white peppermint sticks. “A Bug’s Land” has been transformed as Flik and his bug buddies spread giant Christmas lights and oversized ornaments throughout their realm. The holiday scene along the Paradise Bay boardwalk includes a beautifully decorated Christmas tree and lampposts decorated with seasonal wreaths.
