Our Mexican Buffet menu has authentic Cuisine served buffet style.

For tasting please go to any Cuca’s location - Cuca’s sit-down restaurant is located at
1752 East Lugonia Avenue, Redlands, CA (909) 389-1235. Although the food will not be
complimentary at time of meal, the Mitten Building will reimburse you for a meal for two,
just bring us your receipt!

All alcoholic beverages must be provided by The Mitten Building. No outside alcohol is allowed on premise.
Bar opens after ceremony or at start time of event.

All guests must show proof of age.
Mitten Building outside caterer’s agreement
The Mitten Building provides:
Three compartment sink, five 30 gallon trash cans with liners.
Prep space may be very limited. Be prepared to work outdoors. Check with the Mitten Building 2
weeks prior to event to confirm available prep space.
The Mitten Building does not provide a stove, ice machine, oven or warmer.
All Caterers must do all of the following or all or part of your client’s damage
deposit will be lost:
• Provide sufficient professional service staff given the guest count. 1 staff person per 40 guests for BUFFET
SERVICE is the industry standard. 1 staff person per 20 guests for TABLE SERVICE is the industry standard.
Sufficient catering staff must stay entire duration of event or client will be charged.
• Provide proof of insurance listing Jami K. Spencer & The Mitten Building as additionally insured. Must be received
no later than14 days prior to your event, email to mittenbuilding@gmail.com or fax to: (909) 793-2262. Or mail to

• Provide proof of business license.
• Provide all china, silverware, glassware, serving equipment.
• Provide professional staffing for the entire evening to set all tables - silverware, glassware, china or plastic ware,
etc.
• Set up and serve all food and beverages.
• Caterer may not provide any alcoholic beverages of any sort. All alcoholic beverages must be purchased
through The Mitten Building.
• Bus & Keep tables clean of trash and dirty dishes. Glassware from the Mitten Building bar must be bussed
back to the bar area.
• If your client has a Bar your client must add a Mitten Building bar back for the whole event to bus bar
glasses. Barback costs $15 per hour.
• During entire event caterers must: Bus all tables and scrape plates and into trash cans. Dump all liquids into
sinks and scrape and place dishes into rental containers. Place glasses in rental containers after use.
• Cut and Serve cake or other dessert.
• Cork sparkling cider, champagne/wine or other beverages and serve to guests.
• Dump all trash cans throughout your event in correct dumpster. If unsure, ask security guard where
to dump trash.
• Leave the catering and event area and sinks clean.
