It is with great pleasure that we invite you to the Australian Industry
Group (Ai Group) Australasian confectionery and food industry
technical conference – ConTech2015.
To be held on 13 May at the ‘G’, as it is colloquially known – the
Melbourne Cricket Ground in East Melbourne will open its doors to
ConTech in 2015. The ‘G’ will take you to a different challenge, one
that won’t involve Test Cricket, AFL or other sporting challenges– this
one day conference is for the Australasian confectionery industry to
meet the challenge.
We are amidst challenging times – every day challenges surround us.
So themed MEETING THE CHALLENGE – ConTech2015 will feature
challenges confronting the confectionery industry – in the global and
local marketplace, across the supply chain to challenges around
innovation, product development and the need to keep the customer
excited.
This jam-packed program features local and international speakers
presenting the latest information on consumer and market insights,
retail trends, new product development, confectionery ingredient and
packaging innovations, processing techniques and more in a blend of
both technical and general presentations. This day is for food science
technologists, new product developers, sales and marketing
professionals, regulatory and corporate affairs personnel, business
owners and students.

dinner and in the days immediately following ConTech2015 the two
day practical CREATING THE PERFECT CHOCOLATE workshop.

PROFESSOR DAVID HUGHES
Emeritus Professor of Food Marketing, Imperial College
London (UNITED KINGDOM)
David Hughes is Emeritus Professor of Food Marketing at the Imperial
College London and a much sought-after speaker at food and drink
business events around the globe. Based in the UK, David spends most of
his year working with businesses and talking at conferences in Europe,
North and South America, Asia and Australasia. He has unparalleled
knowledge of global food industry trends and is insightful, engaging and
energetic in his presentations. David has held a variety of Non-Executive
Director positions in food firms around the world.
David’s presentation at ConTech2015 will share insights on global and local
retailing, the rise of discounters and convenience and boutique stores and
will discuss implications for the Australasian confectionery industry.
ANDERS PEDERSEN
Customer Innovation Manager, AAK (DENMARK)
Anders Pedersen has worked as a food technologist for ingredient
suppliers developing tailor made ingredients, including emulsifiers,
stabilisers and speciality fats, supporting the confectionery producers for
more than 20 years.
He is currently Customer Innovation Manager at the global speciality fat
producer AAK. During his 14 years at AAK Anders has worked in most
geographic regions in the world and is currently responsible for key
customers coordinating technical development for the use of speciality
fats. Anders has broad experience in problem solving and trouble
shooting and is involved in production trials in a wide variety of
applications.
Anders keynote presentation will help you address that age old challenge
of bloom development … why does it occur? Anders’ technical expertise
will offer insights to overcome blooming challenges specifically in filled
chocolate and the importance of control every step of the way, with a
focus on cooling conditions.

KLARK QUINN
General Manager, Darrell Lea
Prior to taking over the operations at Darrell Lea, Klark worked in the VIP
Petfood Group, where his focus was special projects, engineering and
process improvement. Klark was a key part of the management team that
oversaw the acquisition of Bush’s Pet Foods after it was placed in
receivership. He based himself at Bush’s Dubbo factory to lead the
successful turnaround of this facility. Since the Darrell Lea acquisition in
2012, Klark has been responsible for its turnaround.
Under Klark’s guidance, the company has returned to profitability,
through various decisions. The heavy hands-on approach Klark has
implemented has been a key skill with the turnaround’s gaining the
support from his peers and staff around him. Adding to his list of
achievements and touching on his competitive streak Klark is the two
times Australian GT champion.
In his keynote presentation at ConTech2015, Klark will share his
experiences saving the Australian confectionery icon – Darrell Lea.
When challenge meets opportunity there is a silver lining and Klark has
taken up the opportunity – he has applied his practical and hands on
approach to the transformation process. Come along to hear and learn

Michael Phillips is the Innovation
Manager for Cream Cheese and Whey
Products at Murray Goulburn. He has
been in research and development with
Murray Goulburn since 1992. His key
areas of responsibility are for whey
products and speciality dairy ingredients,
predominantly for the Japanese market.
More recently he has been
working with nutritional powders.

Michael has a keen interest in confectionery, particularly in milk
chocolate and caramel. He is also interested in sodium reduction in
snack foods and other processed foodstuffs.
Creatovate has helped clients from a diverse set of categories from
yoghurt to beans to malt to innovate and grow. Dermott comes from
a strong international business and innovation background having
worked in New Zealand, Asia, United Kingdom and Australia for
global companies like Fonterra, Foster’s and Lion. Dermott also
teaches post graduate Global Business Strategy at Swinburne
University.

Dr Rajendram has a background in
chemistry and toxicology. He is a
Chartered Chemist with the Royal

Business at Orora Australasia, Stewart
Gunn is responsible for leading
business
engagement,
sales
development and co-ordination across
Australia and New Zealand.
Stewart has extensive experience
across the FMCG and industrial
manufacturing sectors, including in
sales, marketing and operations roles
within and across most packaging formats in Australia, New Zealand
and greater Asia.
Stewart’s 30 years’ experience in the packaging industry includes
strong connections with the confectionery industry.
Vijaya, after completing his PhD and Post-Doctoral work in Australia,
worked in senior research positions with global multinational
organisations like Nestlé and Pfizer.
In the course of pursuing his passion for research and development
in food and nutrition he formed his own venture, Neptune BioInnovations in 2008.

Jessica Lamisére joined Mintel in 2012
as the Trend and Innovation Consultant
for Australia and New Zealand. She is
responsible for creating categoryspecific reports for the ANZ markets,
trends and changes in different parts of
the industry. Jessica came to the role
from
journalism
and
editing
background.
Prior to joining Mintel, she was the editor of Food Magazine, a
national publication focused on the Australasian food industry. In
her role as editor and primary journalist, Jessica covered everything
from farming to marketing of food and drink and also developed,
hosted and reported on the inaugural industry roundtable which
addressed issues in the industry with prominent industry
representatives.

He is also a consultant and mentor to a
number of companies in Asia specialising
in health care nutrition.

firm, Shrapnel Nutrition Consulting which
was formed in 1995. He has a Master of
Health Planning, Graduate Diploma in

Applied Science.
Bill is a former nutrition manager of the
National Heart Foundation and public
health services dietitian
His major interests include the role of diet in the prevention and
management of cardiovascular disease, diabetes and obesity;
dietary fat and health; and the nutrition quality of carbohydraterich foods.
