Jensen Certified Cancer Support & Nutritional Educator Healing Arts Practitioner Linda Jensen brings a deepseated, passionate motivation to her profession as a fully certified Cancer Support & Nutritional Educator Health Coach, and Healing Arts Practitioner. The diagnosis of her 33-year old husband to a very rare form of cancer, propelled her down a path of learning about pH-balance nutrition and holistic treatment, which she used to compliment the traditional medical therapy he received. Following his passing, years of self-study in nutrition and the holistic approach led her to becoming a Certified Wellness Consultant and Health Coach in 2000. Then, in 2004, caught up in the stresses of life, having left her own wellness on the back burner, she found herself facing a Stage-3 diagnosis of breast cancer. This aggressive malignancy would require surgery, chemo- and radiation therapy, and a strong will to survive. She knew it was time to learn more about integrative health, nourishing the body, spirit and mind, to heal and treat herself - simply to survive. Linda specializes in the alkaline/acidic effects on the body (pH balance nutrition and trophology - food combining), truly defining 'healthy' eating, all the more crucial for those having been diagnosed with cancer. Her practice incorporates Integrative Lifestyle Counseling, and the Healing Arts techniques of Jin Shin Jyutsu, Healing Touch, and Raindrop, all driven by the notion that optimal health is achieved by bringing balance and harmony to mind, body and spirit. She is presently studying the effects of sound therapy at a cellular level with the use of tuning forks. Her practice includes offering nutritional seminars for healthcare professionals; involvement in initiatives to bring healthy eating to local communities; an association with Frost Valley in Claryville, NY where she participates in the Survivors Program in conjunction with the YMCA and Livestrong Foundation; she consults before, during and after treatment, by appointment, in Red Bank, and is available for on-site sessions to ensure the proper protocol in the home. At Mary’s Place by the Sea, Linda is a frequent volunteer and sought-after expert in both of her fields. Attributing her own state of good health to having managed to “survolve” (survive and evolve) every day, she coaches each guest on an individual basis, sharing her vast knowledge depending on the specific diagnosis. Her passionate commitment rings loud and clear: “Often referred to as the ‘Cliff Notes of Nutrition’, my role is to guide and support our guests to be self-sufficient once they leave. Critical to this point, I provide a valuable network of professional resources in the alternative, holistic and medical communities, and make every attempt to reduce ‘information overload.’ In addition to touch treatments, I am able to offer ‘self-help’ instruction specific to everyday need, with the goal of preventing recurrence: just as I am, and will determinedly remain, cancer-free, thanks to these practices and choices, for our guests, I help them to set the 'stepping stones' to a healthy, positive lifestyle change.” Born and raised in New York, NY, Ms. Jensen raised her daughter and two sons in Monmouth County, NJ, where she has lived for over twenty years; she currently resides in Rumson. Ms. Jensen is the author of “Survolve” A guide to Nutritional Alkalinity and holds the following certifications: Health Coach/Trivita, Scottsdale AZ, 2000 Study of Macrobiotics/Kushi Institute, NY/2005 Healing Touch and Raindrop Technique/ Institute of Spiritual Healing & Aromatherapy, Aveda, CO 2008 Jin Shin Jyutsu/Morristown Memorial Hospital and ongoing studies Scottsdale AZ/2009 Center for Advancement of Cancer Education, Philadelphia, PA by Dr. Susan Silberstein/2012 jensenhealth@comcast.net 732. 687. 2121 ONCOLOGICAL NUTRITION BREAKFAST…From A to Z, well, at least up to Q… AVOCADO AND EGG Serves 2 1 Avocado, organic….do not peel, slice lengthwise, remove pit 1 tsp lemon juice, optional 2 organic eggs Fill pan with ½ in. water. On low heat, place sliced avocado in pan, drizzle with lemon juice, if desired. Crack and add egg. Cover to ”steam” unitl soft boiled. Remove from pan. Top with extra virgin olive oil Avocado, cubed, raw 1 cup, 240 cal. Glycemic Index….very low The ability of avocado to help prevent unwanted inflammation is absolutely unquestionable in the world of health research. Cancer risk factors almost always include excessive inflammation (related to lack of anti-inflammatory nutrients) and oxidative stress (related to lack of antioxidants). In cancer cells, avocado works to increase oxidative stress and shift the cancer cells over into a programmed cell death cycle (apoptosis), lessening the cancer cell numbers. The avocado appears to selectively push cancer cells "over the brink" by increasing oxidative stress, which in turn, increases the cancer cells likelihood of dying. At the same time, it is actively supporting the health of non-cancerous cells by increasing their supply of antioxidant and anti-inflammatory nutrients. Lest not to forget the egg, soft boil or poach will maintain the benefits of soy lecithin, a nutrient found in the yolk as well as protein needed to get your daily metabolism in gear. Only when oxidized does it become a cholesterol. Avocados and Latex Allergy and why its ok to steam the avocado….Like bananas and chestnuts, avocados contain enzymes called chitinases that are associated with latex-fruit allergy syndrome. There is strong evidence of the cross-reaction between latex and foods that naturally contain high amounts of chitinase enzymes. If you have a latex allergy, you may very likely be allergic to these foods as well. Processing the fruit with ethylene gas increases these enzymes; organic produce not treated with gas will have fewer allergycausing compounds. In addition, cooking the food may deactivate the enzymes. Reference: Ding H, Chin YW, Kinghorn AD et al. Chemopreventive characteristics of avocado fruit. When she came to each starfish, she would pick it up, and throw it back into the ocean. People watched her with amusement. She had been doing this for some time when a man approached her and said, “Little girl, why are you doing this? Look at this beach! You can’t save all these starfish. You can’t begin to make a difference!” The girl seemed crushed, suddenly deflated. But after a few moments, she bent down, picked up another starfish, and hurled it as far as she could into the ocean. Then she looked up at the man and replied, “Well, I made a difference to that one!” The old man looked at the girl inquisitively and thought about what she had done and said. Inspired, he joined the little girl in throwing starfish back into the sea. Soon others joined, and all the starfish were saved. — Adapted from The Star Thrower by Loren C.
