Whether we eat to live or live to eat, our search for sustenance is as constant as the ebb and flow of the ocean’s tide. We may even say that for some people, eating has become more of a hobby than a necessity! As a society, we have gone from simply preparing meals in our homes, to watching ten-minute cooking segments on daily morning shows like Today and Good Morning America, and have even created a compelling demand so great that an entire television channel, The Food Network, was established to quench our thirst for all things food. The more we know about food, where it comes from, and how deliciously it can be prepared in any number of ways, the more we expect of the restaurants in which we dine. Enter: unbeatable international cuisine for all tastes and desires. Lucky for us, Los Cabos’ restaurants have responded to this order with such fervor that they often welcome “non-foodies,” feed them, and send them back into the world as certified food snobs. And with restaurants sometimes listing page upon page of delicious, enticing, and even nutritious organic choices, food here in Los Cabos offers something for us all, and sometimes even under the same roof. 46 LOS CABOS MAGAZINE | FALL 2008 Despite the increasing number of international restaurateurs and chefs in Los Cabos, we have to remember that we are in México, after all. Los Cabos boasts some of the most scrumptious Mexican food around, and we’re not just talking tortillas. From national dishes to regional cuisine specific to Baja California Sur, it is sure to be found here. But, even with this rich and authentic Mexican cuisine, there are other international options for the palate. The beautiful setting, nearly perfect weather, and plethora of outdoor activities, draw international tourists to our area, and now an impressive number of skilled chefs and experienced restaurant owners are calling it home. Japanese, Chinese, French, Italian, and Spanish citizens are among the ever-growing list of Los Cabos locals, who were born and raised elsewhere, and who have brought their countries’ flavors with them. If you’re looking to eat with a fork, or chopsticks, or even your fingers, Los Cabos has just the place for you. At Mexican restaurants or from a Mexican wait staff, “Buen Provecho “ is what you most commonly hear when your meal is being presented. However, you may use Spanish paella, pub fare from Ireland and England, and even exotic eats such as those offered in Israel, Iran, and Russia, can all be found in this eclectic dining destination. Olé Olé Tapas Restaurant & Bar prepares paella, as will some other restaurants, but this special and complex dish is often served only on certain days of the week, or it may require an advance order. Brennan’s Restaurant & Grill and Pub de La Chapu carry innumerable Irish and British libations, and serve the proper eats to go along with them. 12 Tribes Restaurant, whose name is inspired by the Bible’s 12 tribes, offers sensational food from Israel, Iran, Russia and other Middle East regions. Ethnic heritage peacefully co-exists right at your table. Several South American and Latin American countries, such as Brazil, Argentina, and Cuba, prepare their scrumptious cuisines and showcase their interesting cultures, at restaurants found in San José del Cabo and Cabo San Lucas. Their beats and treats will get you all fired up for your Cabo night! Hoping to find a place where chopsticks are offered? You’re in luck, because some of the best of authentic Asian eateries can be found here in Los Cabos. In addition to sushi bars and hibachi tables, from sweet and sour pork to chicken satay to banana blossom salad, you’ll find it all here. Thai, Indonesian, Chinese, Japanese, and other virtuoso dishes are prepared under one roof at Bohai Asian Bistro in Cabo San Lucas. Wonderful sushi restaurants have become quite the rage here as well, and at Arts & Sushi, the talented chefs conjure up some of the most original and finest dishes available. With our fortunate location on the sea, it’s quite possibly the freshest seafood available. Bring your tuna catch back to shore and have a trained and skilled chef at many of the restaurants and resorts prepare some of the best sashimi you will ever have! Pitahayas, at the Sheraton Hacienda del Mar resort, has created its menu combining amazing continental cuisine with its signature infusion of Pacific Rim flavors. Although Mom may well make the best spaghetti and meatballs that you’ve always loved, we’re sure it’s got nothing on the authentic dishes found at Italian restaurants and trattorias right here, operated by proud and generous Italians. Representing many of the different cooking techniques and ingredients that create this popular and reliable cuisine, Italian restaurants in Los Cabos prepare pizzas and pastas, Francisco Estrada “Itadakimasu” when you begin your Japanese meal together, or be bid “Buon Apetitto” in Italian restaurants, or, believe it or not, “Dobar Tek,” in Polish! Each of which loosely translates to “Enjoy your meal.” A response of “Gracias” will do for any of these blessings. But upon seeing your fantastic meal presented and being eager to dive into it, “Thank you! Thank you” may be all that you can muster! Pitahayas’ Ying-Yang combination of filet mignon, honey-glazed shrimp, and lobster. plus seafood dishes and unique appetizers, probably not found in the Olive Gardens of the world. Italian wine lovers will be happy to learn that imports from the homeland are readily available, too. For those preferring to stick to what they know while on vacation, there are many fine eateries offering good ol’ American cuisine. Elegant steakhouses, such as La Bodega Steak and Wine House in San Jose del Cabo and Casa Raphael in Cabo San Lucas, serve the finest cuts of U.S. and Sonoran beef, catering to those with hearty meat-eater appetites. Burger joints, like Johnny Rocket’s, provide the classic standby of a cheeseburger, fries, and malts. All comfort food for many. There are also a few really great places for custom-made deli sandwiches, fresh meats and cheeses, fabulous fresh salads, and treats from home, if a simple but delicious lunch is what you want. Lenny’s Deli, Señor Greenburg’s, and Applebee’s come to mind. And last but certainly not least, if you seek really great Mexican food, and your presence here tells us that you do, step out of your hotel lobby and head in any direction to find some of the best in the country. From the simplicity of the beef tacos sold in the taquerías and the fresh fish ceviche on many Mexican menus, to more elaborate dishes like chiles en nogada and tampiqueña, the traditional and authentic Mexican food available in this area will surely make it hard to try anything else. So pick a place on the map, let your mouth water for what you crave, and head out to a restaurant that will fit the bill for your culinary pleasure. Kirstin Frieze, Lauren Glenn, David Mandich, and Patricia Krajeski share some thoughts about them. This Atún Tataki in a special ginger sauce is one of the fantastic sushi and sashimi plates at Arts & Sushi in Cabo San Lucas. 7 Seas Restaurant & Bar The Cabo Surf boutique hotel on Playa Acapulquito in San José del Cabo is a magical place to stay, and its fabulous 7 Seas Restaurant is one of the best dining experiences in Cabo. Perched over the sand and sea, 7 Seas integrates itself into the landscape. You can start your day with delicious breakfast items such as fresh juices, assorted coffees, and a menu where no fewer than five items are designated as healthy food, and the others in the yummy pancake/waffle/Eggs Benedict category. ($5.75 US to $12.50 US). At lunch, the menu focuses on salads and seafood, like the Topolobampo (Don’t you love saying that word?) Crab Tostadas, and the almond crusted shrimp with mango salsa. ($7 to $19 US). And if all that’s not enough to chew on, then there’s the dinner menu. Wow. Sashimi anyone? What about sautéed scallops or surf and turf? Entrées include mostly fish and seafood, every dish prepared in an extraordinary way. For non-fish eaters, there are some fantastic meat, chicken, or pasta selections. ($16.50 to $27.50 US). But, how’s this for a great idea: Full Moon Dinners. 7 Seas Restaurant & Bar has created a special dinner menu for the special full moon nights. Dine on the sand or the terrace, from appetizer to dessert. The chef prepares an inclusive menu for each month’s full moon. (prix fixe menu $50 US) Check the Lunar Calendar for dates. Baja Cantina Beach Grill The one-year new Baja Cantina Beach Grill restaurant, located on Médano Beach offers elegant ambi50 LOS CABOS MAGAZINE | FALL 2008 ence, a sophisticated menu and, fine dining in harmony with Baja’s beautiful sea, beach, sun and moon. In the daylight, Médano Beach is filled with 20-somethings enjoying Spring Break - year around. At night, however, Baja Cantina Beach transforms into a sea of tranquility, with the restaurant and bar on the sand offering plush lounge chairs, and the terrace dining area aglow with soft lighting and beautifully set tables. The extensive menu includes a sushi bar, pastas, prime filets of beef and seafood – spiced, sauced and sizzled in a wide variety of mouth-watering styles. The crab cakes with mango salsa, and lobster stuffed enchiladas are truly what make Cabo memo- Joseph A. Tyson caught off Cabo just hours before. You’ll dine in a veritable gallery of fine paintings and sculptures by Mexican and international artists. You’ll want to come often because the exhibitions change frequently as the art works sell out. Arts & Sushi Master Chefs Israel and José have been at their craft for over 10 years. In addition to their expertly prepared sushi and sashimi items, you can enjoy traditional Japanese dinner-house dishes including tempura (deep fried shrimp and veggies), yakitori (skewered seafood or chicken in tangy sauces) and teppanyaki entrées including rib eye, tenderloin, lobster, and more. Exotic original creations abound from a cucumber and crab salad to “Camarones Gagaluka” - shrimp filled with spicy crab and sea bass.” Nigiri sushi, special hand rolls, rice bowls with crab or shrimp, lobster curry, and more, all waiting to make your taste buds happy. Traditional Japanese beers, sake, and green tea are offered to those homesick for Tokyo, or you can have the bartender mix your favorite libation from the full bar. The bar’s “mixologist” makes your favorite libations, with fresh fruit margaritas a specialty, while the wine cellar features quality Mexican and international wines. Dinner entrée’s are priced from $17 US for pastas to $38 US for surf and turf. Baja Cantina Beach Grill features live music nightly, including a Mexican Fiesta show on Wednesdays, and live jazz on Thursday. Call ahead for schedules. For something beyond traditional Mexican dining, Brennan’s Bar & Grill restaurant will have you rubbing your eyes and wondering what this wee-bit-o-Ireland is doing in Cabo? Adjacent to the Blarney Castle Inn boutique hotel, Brennan’s is sophisticated and low-key with dining al fresco on large pergola covered stone patios designed to take advantage of the cool evening breezes. The menu is expansive, ranging from traditional Mexican fare to world fare, including steaks with secret spices and sauces, fresh local seafood, and pastas. Favorites include coconut shrimp served in a coconut shell filled with mango sauce, and a delicious tender stuffed Arrachera steak, rolled and sliced sushi-like, covered with Chipotle sauce. Brennan’s rises to its nations call by providing the thirsty visitor with a well stocked wine cellar and full bar. As when visiting Ireland’s mystical isles, you never know what you to expect at Brennan’s. You’ll hear Irish ballads or Christmas music in July, or witness a performance by a troupe of Irish River Dancers. But whatever happens when you do come to dine, you can count on enjoying spectacular views of Cabo’s city lights and the Sea of Cortés, and food the finest this side of Dublin. Brennan’s is open Sunday through Monday, and Wednesday through Saturday, from 8 A place providing a truly unique dining experience in Los Cabos, Bohai Asian Bistro takes ambience, service, and cuisine to a level far beyond excellence, acquainting diners with dishes from Vietnam, Thailand, China, Japan, Cambodia, and Indonesia. Upon entering this Asiainspired eatery, the impression can only be described as otherworldly. From the giant bamboo shoots used as a division between the separate bar and the dimly-lit dining room, to the beautiful brick wall and tranquil waterfalls that plunge into the large pond below, guests here will remain in awe from beginning to end. Choose from the air-conditioned interior, including a Japanese Teppanyaki station, or the spacious outdoor patio for dining. The offerings from Asia begin with the imported beer selection, listing Tiger and Sapporo among many others. Bohai Asian Bistro boasts an incredibly diverse menu, including an overwhelming sushi selection, ranging from rolls to beautifully prepared tuna sashimi and diverse dipping sauces. Cabo Mar “Salsa, Salsa & Sunset” Dinner Cruise If you are looking for the perfect evening during your fabulous stay here in Los Cabos, and want to experience the wonderful sites and sounds of México, look no further than the Cabo Mar “Salsa, Salsa & Sunset” Dinner Cruise. As you board this immaculate twostory catamaran, you can’t help but smile when greeted by a well-trained and friendly staff. Beginning your journey along the incomparable coastline, you’ll want your cameras ready as you pass Lovers’ Beach, the famous Arch, and Land’s End. The Cabo Mar offers ample indoor and outdoor lounging areas where guests can relax, while enjoying the colorful sunset, and dine. In addition to frosty margaritas and minty mojitos, there’s a full bar featuring wine, beer, and cocktails. As the Cabo Mar glides towards the harbor, a delicious “all you can eat” taco bar, tender beef and chicken fajitas with beans and grilled vegetables, and a wide array of unique salsas, all grilled and prepared fresh aboard the catamaran, add great flavor to the evening. Things get ultra spicy when the staff puts on a special dance performance, and afterwards invites you to join in and experience the Latin rhythms of meringue, cumbia, and salsa. This unbelievable dinner cruise is available Mondays, Wednesdays, and Fridays from 6 pm to 9:30 pm. (Sunset cruise times vary according to daylight savings and sunset time.) This fabulous restaurant resides on the second floor of the Puerto Parasio Mall overlooking the beautiful Cabo San Lucas marina waters and glamorous yachts. Enjoy the stunning views while dining on one of two open-air terraces, or come into the air-conditioned dining room, for a truly unique dining experience. The entire restaurant’s interior is festooned with aquatic creatures. Nine large museum quality sharks dangle from the ceiling alongside a flock of friendly pelicans and seagulls. Incredible paintings and murals cover every wall. Plasma TVs are placed throughout the restaurant featuring sea life videos. Even the staff sports a festive striped sailor uniform. It is obvious how much time and effort restaurant owner Luis Cuesta Perusquia put into making this a truly authentic marine experience. Capitan Fish offers a blend of Mexican and international dishes. The irresistible appetizers include smoked salmon tacos, California chiles stuffed with tuna, and fish carpaccio on a crisp tortilla ($8$19.50 US). The fresh fish and seafood bar is an absolute must. Try an oyster shooter, or fresh scallops seasoned with lemon juice. The delicious seafood platter includes a lobster, shrimp, octopus, squid and scallops brandy flambé for $24.50. Paired with a cabernet sauvignon, it’s amazing. Don Emiliano Restaurant Experience Mexican high cuisine at Don Emiliano’s. Elegant dining in the palmed courtyard under the stars makes for a romantic evening here. For starters try the Fiesta of Tomales representing the four regions of México, while the XIX convent recipe for Sopa de Natas will make you want to bless to the cook. The Fideo Seco Luz Catalina is a dry soup of Mexican vermicelli, Tolucan chorizo and grated aged cheese. Grilled scallops on organic greens salad is perfect for a balmy eve. The catch of the day is prepared with chile pasilla and a sauce of regional cheeses. Ahi Tuna arrives seared and bathed with a tenchile sauce emitting an aroma rich and deep like a fine perfume. Carne dishes include rib eye steaks grilled Chihuahua style, and a succulent barbequed lamb. This singular Cabo restaurant, preparing and serving foods recognized in the method of the International Slow Food Association, is perhaps the closest thing to a Cordon Bleu this side of the Sea of Cortés. Specializing in this distinctive method of food preparation, Don Emiliano’s offers ”slow food” cooking workshops several times a year, with themes ranging from Mexican seafood to the seven legendary moles of Oaxaca. Seasonal food events include Dia de los Muertos in October, Navidad and Rosca de Reyes during the Christmas holidays. Entrées are $17 US to $29 US. Groups to 220. La Bodega Steak & Wine House There are lots of reasons to go to La Bodega Steak & Wine House, and there are lots of reasons to go back again and again. The first reason, and perhaps why you go in the first place, is for the Certified Angus Beef (CAB). If a thick, juicy, sizzling, grilled steak is 56 LOS CABOS MAGAZINE | FALL 2008 what you crave, La Bodega is where you want to get it. Four cuts - flank, rib eye, New York, and filet mignon - are offered. La Bodega’s cooking terms are advised on the menu, and whichever cut you choose, it will be grilled to perfection. All cuts come with roasted vegetables and your choice of a second side. Another reason to go is for the scrumptious and modern menu of tempting appetizers, Some of the creative starters include shrimp taquitos, wrapped in lettuce with onion puree, pistachio vinaigrette, mustard, and lime; and a duck brochette with peanut, coconut and Brie tamarind mole and Cous-cous salad. Have you ever? Each month, owner Sergio de la Sierra selects his “Wine of the Month” from the collection of more than 70 labels. These wines, mostly red to accompany the rich meat flavors, are one of his passions and pleasures. La Bodega Steak & Wine House is centrally located in San José del Cabo’s historic Art District, making it yet another reason to go! Appetizers from $7 to $9 US; all steak cuts $30 US. La Panga Antigua A special night out is called La Panga Antigua in Cabo San Lucas. As soon as you enter the most charming open-roofed courtyard dining area, you are surrounded by warmth and comfort among the trickling water sculpture, the antique Mexican artifacts and furniture pieces, and the palapa awning over the upper veranda. If you decide on a glass of wine, instead of a bottle from the champion wine list that features ratings by FALL 2008 | LOS CABOS MAGAZINE 57 Irela García Tartare de Atún con Aguacate, from the talent at La Panga Antigua. Wine Spectator’s Robert Parker, you will be offered a tasting sip before your glass is poured, something I have never encountered in any other restaurant, an example of the impeccable service. The appetizer, soup, salad, and entrée menu, while not extensive, is certainly capable of making a selection difficult. Two young chefs, Paul Zamudio (age 25) and Claudia Castro (age 23), skillfully create, execute and present dishes of distinction and impress even the most discriminating palate. Srita. Castro’s organic lettuce mixture with caramelized nuts, bacon bits, goat cheese and an amazing sun dried tomato vinaigrette ($13.50 US) is truly an inspired crowd pleaser; Sr. Zamudio prepared my lacquered ahi tuna with Baja desert honey and soy sauce to perfection, ordered medium and arriving medium ($29.50 US.) Upon the chefs’ suggestion, I ordered the Chocolate Tamal for dessert. I bid you, follow their suggestion on this one. Total seating for about 400, including patio and upstairs veranda. Los Deseos Along the aptly named Golden Zone, where you can watch the Cabo sun set over the hills of Pedregal, sits Los Deseos, one of Los Cabos’ most authentic Mexican restaurants. Overlooking the marina and feeling the soft breezes are just two more bonuses of dining at Los Deseos (The Dreams.) You’ll find some of the most interesting dishes at Los Deseos, beginning with such appetizers as Corn Sopecitos, a small circle of lime-soaked masa, fried and topped with beans, cheese, lettuce, veggies, and hot red sauce. 58 LOS CABOS MAGAZINE | FALL 2008 LOSdining CABOS Entreés include chicken, meat and fish dishes. The Pibil Chicken is slow-roasted chicken in achiote spice and orange juice, wrapped in banana leaves and red onion. An incredible taste and texture. J ust because you are not home for the holidays doesn’t mean that you can’t bring the holidays to you. Traditionally at Thanksgiving, friends and family gather around the table sharing their gratitude, while indulging in a hearty feast. Numerous restaurants in San José del Cabo and Cabo San Lucas offer a full Thanksgiving feast, so that people from all over can come together and celebrate the harvest cornucopia. The Original Park Restaurant and Bar is home to one of the best Thanksgiving meals in town. The restaurant’s owners, perhaps missing home themselves, created a holiday special with all of their homemade favorites including soups, salads, yams, mashed potatoes, cranberry sauce, stuffing, turkey, and pumpkin pie. Plates come in extra large portions for only $25 US. Half-size orders and children’s menus are also available. For those who prefer to prepare their own meals, we have some helpful hints on how to enhance your traditional turkey day feast with Mexican flare. The turkey has become the food of choice for celebratory occasions in México, especially for Christmas and New Year’s. For the Mexican twists, start by replacing dinner rolls with bolillos, green bean casserole with chilied corn, yams with camote (a sweet potato dish), cranberry relish with mango salsa, and apple pie with capirotada (a bread-pudding with apples, raisins, and pecans). A smoky chile cornbread or jalapeño cheese cornbread pudding may also be interesting additions. Once the side dishes are decided, then it’s time to talk turkey. A flavorful mole sauce will really transform this main dish. You can find mole recipes online, and ingredients can be found in most local grocery stores. But if you can beg, borrow, or steal a secret family recipe, that would make it really special. Right around the corner from Thanksgiving is Christmas. Like in the U.S. and Canada, Christmas is an extremely popular holiday in México. However, in México, the joyous festivities and traditions are perhaps more focused on religious commemorations. Here, Christmas festivities begin the 12th of December, the birthday of La Guadalupana (Virgin of Guadalupe), México’s patron saint. Many things come to a halt the last few weeks of December so time can be spent with family and friends. The Christmas holidays end on the 6th of January with the arrival of the Three Wise Men, The Magi. Throughout the season, downtown San José del Cabo and Cabo San Lucas are decorated with bright twinkling lights and colorful festive décor. The plazas and the churches become cheerful meeting places, day and night. 64 LOS CABOS MAGAZINE | FALL 2008 LOSdining CABOS Beginning December 16th, Las Posadas are one of the most cherished events. Many neighborhoods participate in the re-enactment of Mary and Joseph wandering through the streets in search of shelter for the night. As the wanderers are invited into a home, everyone gathers around the Nativity scene and says a prayer on The 24th. Noche Buena, Christmas Eve, is especially exciting with the fireworks, church bells and whistles proclaiming the birth of the baby Jesus. This is the night when, following tradition, Catholic families return home after Mass and enjoy their main Christmas meal. Then, it’s time to open gifts, play piñata games, and light sparklers. The following day is all about relaxing with family, while enjoying leftovers from the prior evening. This holiday is not celebrated like an American style Christmas would be with Santa Claus and Christmas trees. Instead, the children leave a note with their gift requests in their shoes, placed by their beds, in hopes that the Three Kings will deliver their gifts on the 6th of January, such as the Magi did for baby Jesus. While you may not be Catholic, Christian, or even religious, you can still celebrate year-end holidays with a traditional Mexican feast. Serve up some authentic Mexican dishes like Ensalada de Navidad (Christmas salad with a nice blend of fruits and vegetables), menudo (This soup is said to be an extremely effective cure for a holiday hangover.), pozole (similar to menudo, but made with pork instead of tripe), Mexican rice, bacalao (a salty cod), and roasted ham or turkey. Delicious handmade tamales, often accompanied by atole, are an exceptionally popular holiday dish here in México. Sweeten up your meal with Buñuelos de Navidad (Christmas sweet fritters). If you don’t feel like cooking yourself, surely you will be able to find traditional Mexican Christmas specials and wonderful American-style Christmas meals at restaurants and resorts around Los Cabos. Here are a few traditional Mexican drinks you’ll find around the Christmas holidays, and one new one that may become your favorite. Rompope [rum-pó-pay] Mexican holiday drinks are uniquely Mexican. In the 17th Century, nuns in Puebla's Convento de Santa Clara reinvented the European version of eggnog, using Mexican cane sugar, rum, eggs, almonds and cinnamon to create Rompope, thick and creamy with a just a hint of rum. Like eggnog, Rompope can be served warm or cold. For a seasonal night on the town, or in this case on the beach, enjoy a Rompope drink while watching the Holiday Fiesta Folklorico dinner dance show held every Wednesday at Baja Cantina Beach Grill located on Médano Beach. Ingredients for Rompope: • 6 cups milk •1 1/2 cups sugar •8 egg yolks •1/3 cup blanched almonds •1/2 cinnamon stick •1/2 cup to 1 cup premium rum Rompope Preparation: Carefully simmer (don’t burn) the milk and sugar until hot. Make an almond paste in a food processor and whisk the paste into the milk/sugar mixture and let cool. Beat the egg yolks and add to mixture a little at a time while slowly stirring. Mix in the rum. Serve chilled. Add other ingredients such as strawberry for a tropical touch. Atole [a-tóe-lay] Atole and champurrado are often confused. Champurrado is the chocolate flavored and most popular version of atole type drinks. All atoles and champurrado are based on a thickener, such as masa harina (the most common), cornstarch, oatmeal, or rice flour. Classic atole incorporates a variety of fruit purees as toppings to the thickened drink. A steaming hot atole drink is the perfect body and soul warmer while strolling in a posada fiesta on Christmas Eve. You can find atoles and champurrado being sold by street vendors, along with tamales featuring a variety of fillings ranging from meats, moles sauces and sweet fruits. San José’s cathedral plaza is a good bet to find atole on a winter’s eve. Ingredients for Atole •1/3 cup masa (oatmeal, rice, flour etc.) •1 cup of warm water •3 cups of water •5 tablespoons of brown sugar (or Mexican piloncillo) •1 pinch of salt •2 teaspoons of vanilla or 1 vanilla bean •A cup of pureed fruit for topping Atole Preparation: Puree fruit topping and set aside. Puree masa and warm water in a blender. Cook masa mixture and all other ingredients over a medium-low heat. Stir frequently and simmer for 25 minutes or until thickened. Remove vanilla bean or cinnamon stick and pour into mugs. Drizzle warm fruit puree on top and enjoy. LOSdining CABOS Champurrado [sham-purr-ráh-do] Champurrado, the most popular chocolate version of atole, is equally effective in warding off cool weather and raising the spirit. It’s often prepared at home and is a huge favorite at winter holiday celebrations. This delightful drink is also thickened with masa harina but includes a touch of anise with Mexican piloncillo added for sweetness. Ingredients for Champurrado: •2 cups of masa harina •2 cups of warm water •2 cups milk •1 pinch of ground anise seed •1 disk of Mexican chocolate (chopped) •3 small one-ounce piloncillo (sugar cane) cones (chopped) Champurrado Preparation: Using a sturdy wire whisk, or Mexican carved wooden molinillo made especially for this, whisk masa in the warmed water until well blended. Mix in chocolate, piloncillo, anise and milk. Simmer and whisk until chocolate melts. Fruit Ponché [pon-cháy] This holiday fruit tea drink is served with and without alcohol (usually cognac or rum.) Rich and full of fruit, juices and spices, Ponché reflects the myriad colors, flavors and textures of México. It’s a veritable fiesta in a cup that will put you in the right mood to wander the town caroling from casa to casa. Ingredients for Christmas Fruit Ponche (enough for a fiesta) •15 guavas •1 cup of raisins •25 tejocotes (similar in size to a small peach) •1 cup of dried prunes •1 cup of dried apples • 4 apples or apricots •6 2-inch pieces of cinnamon sticks •sugar, rum or cognac to taste •approx. 15 cups of water Christmas Fruit Ponché Preparation: Chop all fruit into bite size pieces. Bring water almost to a boil, and then add the sugar. When dissolved add the cinnamon and fruit, simmering (not boiling) until the mixture becomes thick and syrupy. Cook longer if too thin, or add water if too thick or strong. Add cognac or rum to taste just before serving: It’ll make you sing better.
